{friday 5}

Hi and Happy Friday!  Raise your hand if you’re as happy as I am for FRIDAY!  I have been so inspired lately, it’s the best feeling.  Only problem – not enough time in the day to make it all happen.  I went to TJ’s and grabbed all the goodies to work on a fun Thanksgiving DIY to share next week.  Although, my heart + mind are 100% on Christmas.  Since I’m hosting turkey day, I have to slow my roll….for a minute.  Would it be weird to eat turkey with a Christmas tree in the living room?  Ha!  Just kidding.  I’ll wait till the day after!  Weekend plans: sleep-in (if only till past 5am) watch my nephew play in his championship football game #gobenny!  Take our Christmas card picture (they’re normally already ordered by now…who am I) Check out the Pixie Traders Vintage Market…more on that below!  And dinner with friends.

Have a good one friends!

5 things on my mind……

img_3182

FRIDAY sweatshirt

ONE – FRIDAY // When you find your second favorite F-word on a sweatshirt.  You buy that fucker.  I went to J.Crew Factory earlier this week and it fell in my shopping bag.  So, I had to take it home.  It’s $30 today with code: 2DAYSONLY!  Grab one and let’s be Friday twins Ha!  I also found a shit-ton of other really cute tops + sweaters + vests too.  I’ll be sharing once I get them all linked up for you!

img_3183

TWO – Egg White Frittata // It’s easy.  It’s clean.  It’s delicious.  This was my go-to breakfast this week on my sugar cleanse.  It re-heats so well too.  Top with some hot sauce + avocado.  BOMB!  Serve over roast sweet potatoes…even bomb-er.  Try it over the weekend, okay?!?!

Egg White Frittata

  • Servings: 2
  • Difficulty: easy
  • Print

img_3184

Here’s what you’ll need:

  • 3 mushrooms, sliced
  • handful fresh spinach
  • 1 cup egg beaters (or egg whites)
  • everything but the bagel seasoning
  • parmesan cheese
  • hot sauce

Here’s what you do:

Preheat oven to boil.

Spray your frying pan with non-stick spray.  Avocado oil is my jam right now, but any will do the trick.

Add mushrooms and cook for about 3 minutes, flip half way through.

Add spinach and cook till wilted.

Whisk egg beaters or whites till frothy and sprinkle with everything but the bagel seasoning.  Pour over veggies.  Sprinkle with parmesan cheese.

Don’t touch the eggs.  Even though you want to.  Once they start to look set, gently run a spatula around the rim.

Transfer frying pan to oven and boil for 2-3 minutes.

Once eggs are puffed, they are DONE!

Remove and add more parmesan….you can NEVER have too much cheese 🙂

Cut frittata into 4 wedges.  Top with hot sauce.  Add some avocado if you’re feeling fancy.

Enjoy!

{friday 5}

It’s Friday (hu-frickin-ray)!  Honestly, it’s really hard to believe October is coming to an end next week.  I feel like I cannot keep up with this year?  Anyone else?  I’ve got the Holidays on my mind BIG TIME.  I’ve started shopping too.  Which is one of my Holiday goals.  And after the Serendipity Boutique + bella moda boutique Christmas Preview last night, my wheels are spinning.

Weekend plans: My to-do list is staring me down.  It’s been growing longer each day this week.  I’ve been so swamped with work, I hardly have time to check my email or order my groceries.  I’ve been on survival mode…lol.  Tonight Bay and I are having a date night.  Mani’s + pizza + watching La La Land (she hasn’t seen it yet).  I can’t wait to sleep in.  Spend some time with friends.  Possibly get wine tips with Alex.  Maybe church?  God knows I need a little church in my life.

Before I let you get your weekend started, let me quickly chat about 5 things on my mind…..

82a29c75-c93e-4eac-b7e5-f38681bee66f.jpeg

ONETurkey On The Table //  Kinda like Elf on the Damn Shelf, but for Thanksgiving.  Except, it’s not a pain in the ass at all.  And you don’t have to move it daily.  So, basically it’s nothing like Elf on The Damn Shelf…lol.  It’s more of a lesson on being grateful.  I’m all about gratitude.  I actually started practicing it daily, thanks for #last90days challenge.  Here’s how it works…for every day in November, write down something you are thankful for on the paper feather.  Each family member can take turns or everyone can write on the same one.  It’s totally up to you.  Place it somewhere that you’ll see it.  On Thanksgiving day, you’ll have a “fully dressed” turkey to display.  You can then read all the thankful feathers aloud.  It’s such a cute idea.  And the best part, for each Turkey on The Table purchased, 10 meals will be provided to someone in need through Feeding America.

Nordstrom (free shipping): Turkey On The Table // Amazon: Turkey On The Table

img_1532

TWO – Currently Reading // I had to ditch my last audio book.  So many great reviews, but the voice-over was absolutely terrible.  If you’re an audio book listener, then you get it.  Picked up Reese Witherspoons new Whiskey in a Teacup : What Growing Up in the South Taught Me About Life, Love, and Baking BiscuitsBest part, she’s actually the reader of her own book.  Which I don’t think I’ve ever seen before?  Anyway, it’s so cute and lighthearted…I’m really diggin it.  I also grabbed Chrissy Teigen’s newest cookbook Cravings: Hungry for More And she nailed it.  Everything looks so good.  I can’t wait to dive into it more this weekend and dog ear some pages to add to my “must make list!”  What are you reading?  Anything good I should add to my list next?

{weekend notes}

Hi friends. Can you believe yesterday was my 3 year blog-versary? Time flies when you’re having fun!! I went back and looked at some of my first posts and wow. Things have changed. We’ll have to take a trip down memory lane sometime this week.

Hope you all had a fantastic weekend. Ours was equal parts relaxing and productive. Just how I like it. And I stayed in my pjs till around 9am both mornings. When’s the last time you scheduled a “chill” weekend? Honestly, I can’t remember. It was needed and enjoyed!

Intentions for the Week:

  • practice daily gratitude(writing this down creates a huge shift in your mood..try it)
  • date night with my 2019 planner  – (switching is so much work)
  • watch my girl play volleyball(still undefeated #gowildcats)
  • finish my Portland post – (almost done, so much to pack into one post)
  • dinner + drinks with the girls(perfect way to end a crazy week)
  • 15,000 steps per day(didn’t even make it to the gym Thursday and still did it.  Shocked my damn self)
  • clean up the back patio(now if the wind will just go away)
  • find something cute to hang behind my stove – (still searching)
  • drink 1/2 my body weight in oz of water every day #hellabathroombreaks(fact: you eat less when you’re so focused on water intake)
  • write a post on my favorite + easiest salsa(coming soon…stay tuned)
  • one random act of kindness each day (“cute top” “let me hold the door for you” smiling at randoms…in the most uncreepy way possible)
  • make chili(so bomb and packed with veggies)
  • wait patiently for my parents to get home from Cabo lol – (failed)

Highlights from the weekend…….

Friday night at the movies // I saw A Star Is Born.  Such a great movie.  I’ve had so many people ask me if it “that good” YES, it really it.  Bradley Cooper is beyond handsome, even when they try to make him look like he’s not.  Gaga was amazing.  I bawled my eyes out.  And when the movie was over, nobody even stood up.  Everyone just sat there.  That’s a sign of a good movie, my friends.

img_8867

Tochos // aka tater tot nachos.  I accidentally made these. Ha.  They were so killer.  Bay and I sat the pan straight from the oven to the coffee table and started digging in.  It’s pretty self-explanatory, but I’ll share exactly what I did on {friday 5} this week!

img_8856

45 Minutes a Day // It’s part of the #Last90Days Challenge.  Move your body every damn day.  I made it to the gym Saturday + Sunday.  Which is a really fucking BIG deal.  I’ve never, in my history, ever went to the gym twice in one weekend.   #shitsgettingreal

Coffee Table Vibes // In my {fall to-do’s} I listed that I want to do a coffee table series.  I LOVE changing up my coffee table.  Sometimes I do it multiple times a week.  It’s such a small space that makes such a big impact.  And I’m burning my fallen leaf Chloe & Co. candle.  You can now pick them up at Serendipity Boutique.  Go get one!

img_9111

Pretty Packaging // Love a pretty package.  Well done Free People.  I ordered the We The Free Molly Tee.  Hoping I can find a way to style it and keep it.  Stay tuned.

img_9063

Football // We watched my nephew Benny play football.  They are on a winning streak!

img_8877

I watched the game with Daniel in my lap, when Bay didn’t have him on her hip.

img_8886

This is how Bay watches football games…lol.

Target Basket // Julie from Salinas sent me a photo of her front door hanging basket from Target.  Straight up front door #goals  And the eucalyptus.  I’ve already warned her I’m going to steal clippings the next time I’m in town.

Target Basket $19

img_8862

Side Hustle // Worked on my side hustle.  Which I realized I don’t believe I’ve ever shared here on xoxo stacyb.  I’ve started doing social media for a couple of downtown shops.  I get to snap pictures and come up with catchy one liners.

img_8984

Front Porch // Which inspired me to get creative and complete my front porch.  Pumpkins + purple fountain grass for the win.  It’s killing me to not clip the fountain grass and stick it on my dining room table.

img_9248

Rib Cook-Off // The only photo I took, so not like me.  Cory’s team, Whiskey River BBQ Crew didn’t take the win this time.  But, it was still a good time.  And of course I’m wearing my J.Crew scoop neck Henley, AGAIN!

img_9247

The Fight // Cory taught my nephew how to place bets…lol.  For the record, he didn’t win.  But the fight was pretty entertaining.  Not the actual fight though…I’m talking the after show.  WOW!  What happens now?

img_9065

Pizza // Cory’s homeboy Rich made the BEST homemade pizza on this bbq insert.  And I officially added one to my wish-list.  Or better yet, maybe I should get Cory one for Christmas so he can make me pizzas?  Hmmm.

img_9066

Cousins Sleepover // My nephew Joe stayed the night with us.  I was nice to have an extra kid around.  The laughter make me crazy happy.

IMG_5706

ONECapper’s Refreshers // Always down to show some support for new businesses in town.  Formerly Stacked N’ Brewed turned Capper’s Refreshers.  Took Bay into the new establishment last night for a sweet treat.  She had an excellent day and there’s no better way to top it off than ice cream!  Except this isn’t actual ice ceam….it’s “shaved snow” with all the toppings served in  a waffle come.  Sprinkled with gold dust.  Looks like ice cream.  Tastes like ice cream.  I’m straight up SOLD on the shaved snow.  Try the “Dexter’s Delight” sans blueberries (because who likes them anyway) and you too will be in heaven.  Can’t wait to stop back in and try one of their meals.  Everything looked fantastic.  Go show your love for the new restaurant and let’s keep them around!!!

IMG_5769.JPG

{weekend notes}

After a week off (kinda) it feels so good to type the words….Happy Monday!  We’re back in action over here at xoxostacyb.  What I mean by kinda is…I was busy working behind the scenes.  Updating.  Upgrading.  Adding.  Condensing.  The BIG questions is….

What do you think of the changes?  New layout.  My personal ShopStyle link has been added to the sidebar on a desktop.  Bottom if you’re using a phone.  Just like the LIKEtoKNOW.it.  You can shop everything from outfit details #ootds, products and home items.  Basically, if I rock it or love it, you’ll be able to find it here.  Click on the link on my blog or in my instagram bio, click “shop my looks” and direct links will be right at your fingertips.  If you purchase something through my ShopStyle, I make a (very) small commission.  So help a sister out…lol.  Currently still adding items, so bear with me.

Another change….recent posts, Archives and Categories have been condensed and now offer a scroll down.

And you’ll likely notice there are now advertisements.  Sorry!  I know it’s annoying, but it is what it is.

Don’t forget you can always subscribe and receive an email every time I publish a new post.  Go to Follow Blog Via Email.  Type in your email address.  Click FOLLOW.  And you’re all set!

My new goal is to keep it simple.  So although this is quite wordy, you’ll be seeing daily posts.  Weekly reviews.  Friday 5 and all the same xoxostacyb topics.  Just in smaller scale.

So, I’m dying to know.  What do you think?  Comment below.  On Instagram.  Facebook.  Let me know what you think of the changes.

And now back to our regularly scheduled program……

Intentions for the Week:

  • delete photos – (so satisfying lol)
  • plan a family dinner – (schedulded)
  • smog my car – (done√)
  • lunch date – (The Grad…cant remember the last time)
  • drink #hella water – (and pee all day long)
  • take a hike
  • find the perfect 2019 planner/calendar – (now I have to wait till Wednesday to order lol)
  • go apple picking
  • bust out all the Fall decor – (we’re half way there)
  • celebrate Mom’s big 6-0 – (love that lady)
  • mask + mani night with Bay – (our weekly thing)
  • register for 2018-2019 4-H – (It’s that time of year again)
  • phone date with Stover – (always feels good to catch up with a homie)

Highlights from the weekend…….

I have to stop and thank all these pretty ladies right here.  They all showed up and supported and gave me all the feels.  So grateful for great friends + family to share life with!  Love you bitches!!!

IMG_5463

So Friday we all met at Sarah P’s home.  Her gorgeous home.  We drank wine.  Lots of wine.  We snacked of pretty food.  Like this grazing platter below.  I whipped this bad boy up in about 5 minutes.  Candied walnuts, crackers, rosemary, dried apricots, brie wedge, olive tapenade, honey comb and prosciutto.

We talked, a lot.  The room was so full of laughter…it made my heart crazy happy!

IMG_5465

We hit First Friday to check out bella moda boutique and Serendipity Boutique.  Personally, my favorite shops on Main Street.

Once I’m off my spending freeze, I’ll be buying this Tequila Por Favor tank!!!

IMG_5240

And this succulent skull!!!

IMG_5244

We took my Mom and her bestie, Ronda to The Stag.  My Mom, born and raised in this town has never been to The Stag.  So, we changed that real quick.

IMG_5263

I can’t thank Sarah P for opening up her home and hosting all of us!  Love you homegirl!!

IMG_3547

Well friends, we’re in the home stretch of summer.  Today I’m feeling equal parts excited AF for school to start and not sure “I’m ready” to drop my little girl off at Middle School.  The Sunday scaries got me good last night.  I tossed + turned over thinking. The hustle and bustle of school beginning has me getting all kinds of organized.  Ready for the routine.  The not so settling part – we’ve got so much “new” happening this year.  The whole new school.  Our morning routine is changing drastically.  Hello zero period.  You know what I mean?  All that unknown stuff.  Luckily Bay is beyond pumped which makes my heart incredibly happy!

I really wanted to dedicate this week on the blog to all things back-to-school.  But, then I remembered that whenever I spend the entire week on one topic, I get so burnt out.  So, we’ll be chatting about ALL THE THINGS.  School.  #ootd’s  Organization.  Oh and I’ve got the best easy weeknight dinner for you too.  It’s a crockpot recipe I’ve been making for years.

Lot’s of Inentions for this week!!!

Intentions for the Week:

  • Organize ALL THE THINGS(anything + everything is organized AF)
  • Meal prep like a boss(killed it)

  • 15k steps per day(but I did get my 15k per day!!)
  • Forever 21 shopping trip(Bay found so much cute stuff)
  • EARLY bedtime(9pm yo my boo)
  • Punctuality(on time everyday…can I get a WHOOP WHOOP)
  • DIY Happy Birthday banner(we taped it to the wall….things have changed)
  • All the 1st day of school traditions (except Raley’s…so sad.  Damn zero period)
  • Final Tahoe summer hurrah(just what the doc ordered)
  • Spoil my girl on the 23rd(obvi I went a little overboard, per usual)

Highlights from the weekend……

The Yolo County Fair!!

Beer me!

If I don’t drink another not-so-cold keg beer till next Fair, I’d 100% be okay with it…lol.

IMG_3181

The tacos though, that’s another story.  Why are they only this good at the Fair?  365 days is a long time away.

Hello Monday!  You kinda ruined my day, to be honest.  Not you, Monday did!  I somehow overslept by 2 1/2 hours.  Which means I feel like I’m 2 1/2 hours behind in EVERYTHING today.  But, damn I sure did get some good sleep!  Hope your Monday is off to a better start than mine!

In other news, I got a notification that today, this very post, is my 700th blog post.  CRAZY!  Seven hundred.  If you’ve been following since the beginning, you should know me pretty really well by now…HA!

Happy. Happy. Happy. FRIDAY!!!  This week I somehow ballanced being productive AF + chill AF.  No frickin idea how it happened that way.  But, I’ll take it!  Weekend Plans: Downtown Woodland First Friday Art Walk.  Who’s going?  Bay’s horseshow.  Cannot wait to watch my girl.  Roots to Wine Twilight Picnic.  Cook at 4th + Hope!  And sit by the pool + soak up some sunshine.  What’s your weekend looking like?

5 things on my mind…….

IMG_1325

ONE – Bay + Buckwheat // Bay is beyond excited for her first English Horse Show tomorrow.  She’s been practicing for months.  At the beginning of the year, Bay decided to switch from Western riding lessons to English.  I’ve never even seen her ride English.  #workingmom  So, I think it’s safe to say, I’m just as exciting to watch my girl do what she absolutely LOVES tomorrow too ♥  You got this Bay!!

{lemon spaghetti}

IMG_9153.PNG

I like carbs and I cannot lie!  The way I see it, God invented carbs for a reason!  #yolo

This isn’t your typical meat sauce + noodles.  It’s light and refreshing.

It’s an unexpected combo that works so so well together!  Perfect for a summer side dish.  I typically have all the ingredients on hand too!

A couple of thing before we get started.  “Good” olive oil is KEY!  It’s one of the main ingredients on this dish.  I bet you already know what I’m going to say, huh?  Seka Hills Olive Oil is the #1 in my book.  I don’t even mess with the store-bought stuff anymore.

IMG_9353

You guys, Seka Hills invited me out for a farm tour a few weeks ago.  I’m still blown away.  Over 17,000 acres!  Different olive varieties.  Grapes #wineo  Almond trees.  Honey (bay’s fave) Asparagus, which I have a new-found respect for.  Not that I didn’t love it before, but did you know asparagus has to be harvested daily?  By hand!  It’s a labor of love, my friends!

IMG_9349

60 acres of asparagus.  Crazy, right?

IMG_9350

The honey!

IMG_9351

Did you know they grow all the produce that is distributed to wine club members?  I figured they sourced it out.  Nope!  This photo below is where they grow the produce we get!  Just another plus!

Oh and if you’re interested in joining their wine club, here’s all the info: Seka Hills Wine Clubs

And can we talk about the fact they now have Beef Club, I might need to get in on that one.

IMG_9352

But the olive trees, they are beyond impressive.  Seka just released a new variety of Olive Oil.  It’s called the Tribal Blend.  It’s a unique blend of estate Frantoio + Picual + Arbequina.  The results are a medium to robust intensity.  It’s different.  More bold.

This week, I cracked open my second bottle of the Tribal Blend EVOO!  And It’s what I used in this Lemon Spaghetti recipe!!

Basically, I’m obsessed with it.

The funny thing, I’ll drink cheap ass wine.  Pizza from Little Caesars.  But when it comes to olive oil, I straight up do not mess around with the cheap stuff.  Ha!

{friday 5}

IMG_9144.JPG

Happy Friday friends!  Hope you all had a great 4th of July!!  And have a fun weekend planned.  I’m headed back to Tahoe to finish celebrating.  This whole Wednesday Holiday business is for the birds.

First, I’ve got 5 things on my mind…….

ONE – Mom’s Famous Chicken Tortilla Casserole // You guys are gonna want to “pin” print or save this one.  It’s one of my Mom’s (many) famous recipes.  My sis requests it for her Birthday dinner every year.  We have it every family pumpkin carving night.  Bay made it just a couple of weeks ago for Father’s Day.  And I realized, I’ve never shared this keeper with you guys.  It’s easy + delish!  Make it this weekend for your troops 🙂

* This recipe is best if you make it the night before or morning of.

Here’s what you’ll need:

  • 4 boneless skinless chicken breasts cooked + shredded (or rotisserie)
  • 12 corn tortillas (taco size), cut into 1 inch pieces
  • 1 cup red onion, chopped
  • 1 can Cream of chicken soup
  • 1 can Cream of mushroom soup
  • 1 can Chili con carne (no beans)
  • 1 small can green salsa
  • 1/2 cup chicken broth
  • 1 cup cheddar cheese, shredded
  • 1 can sliced black olives
  • Green onion, chopped

Here’s what you’ll do:

Preheat oven to 350 degrees.  Spray a 9×13 baking dish with non-stick spray.

In a large bowl mix together chicken + tortillas + red onion + soups + chili + green salsa + chicken broth.

Pour mixture into prepared baking dish.

Top with shredded cheese + olives.

Bake 1 hour.

Top with green onions + serve 🙂

It’s one of those feel good meals that instantly remind me of my childhood.  I think we’ve all got one of those, right?

TWO – Beach Tote // I’ve had my eye on these net tote bags for a while now.  Picked one up at Urban Outfitters last week to see what all the jazz was about.  And of course, I fell it love with it.  I found some even cheaper on Amazon and I’m going to upgrade all my re-usable grocery bags with them.  They are super stretchy so they fit wayyy more than you think.  Washable…which is key!  My old bag has seen better days.  The Kate Net Tote comes in 6 other color options too.  Thinking I may need to scoop up a pink one next.

THREE – ACV drink // You all know by now that I’m a huge Bragg Apple Cider Vinegar fan.  I drink a shot of that shit every.single.morning.  I promise with time, it really does get easier.  Honestly, I don’t mind it at all.  I spotted the new “drink” on the shelves last week.  And different varieties too.  I grabbed the Ginger Spice.  They also have Honey, Apple Cinnamon, Grape, Limeade, Pomegranate and Sweet Stevia.  It’s about $3 for a glass about the size of a Gatorade.  I saved it for my afternoon snack.  Drank 1/2 the bottle each day.  Then went and bought more.  It’s good!  Click below for more info:
