{friday 5}

IMG_2644.jpg

I hope your week has been a good one.  It’s been a chaotic, but productive one over here.  I’m beginning to think Friday’s are my new favorite day of the week.  Sorry Saturday!  I think it’s the excitement of wrapping up the week.  And obvi starting the weekend.  If only I didn’t have to work on Friday’s.  In other news, I’ve been wearing the exact same pair of shoes for 2 weeks straight.  I can’t take them off…true love!

Ok, and now on to 5 things on my mind…..

ONE – To-Do’s // You guys, I have nothing on my to-do list for the weekend.  I mean, I’m sure there are a million things I could do, but I don’t have anything I HAVE to do.  WTF am I going to do?  Ha!  The struggle is real.  I work to not have anything to do on the weekends, then when I have nothing to do, it kinda stresses me out.  I’m such a mess!  I take that back, I really, really want to see American Made.  Not a huge fan of Tom Cruise, but I keep hearing this movie is GOOD!  Has anyone seen it?  I’m sure I’ll add about 23 things to do by the end of the day.  That’s just how I roll.

Here’s the trailer…..

TWO – Veggie of the week // Butternut Squash!  Probably my favorite so far.  I’ve had it many times.  I’ve cooked with it many times.  I decided to try 2 new ways of preparing it, rather than my normal roasting.  Butternut Squash Pizza…Oh My God!  Delish!  Then I went and made a pasta sauce using only pureed butternut squash + shallots + garlic + a little reserved pasta water.  Equally delish.  And this one deserves it’s very own post.  I’m hoping to get it on the blog next week!

Here’s what you’ll need:

  • Butternut squash
  • 4 slices bacon, cooked + crumbled
  • Marinara Sauce
  • Pesto
  • Mozzarella Cheese, thinly sliced
  • Olive oil
  • Fresh thyme leaves
  • Salt + Pepper

Here’s what you do:

Preheat oven to 400 degrees + line a baking sheet with foil.

Peel + slice butternut squash in 1/2 inch slices.

Note: I used 1 butternut squash for 2 recipes, so I only used about 1/2 of the skinny-er side of the butternut squash.  About 8 slices.  Once you get to the bottom of the squash, you’ll find seeds and wont be able to get perfect slices.

Brush slices of butternut squash with olive oil and season with salt + pepper.

Roast for 20 minuets.

Remove from oven.  Spoon marinara or pesto over the top.  Top with sliced mozzarella.  Then add bacon crumbles + thyme.

Back in the oven for about 5 minutes or until cheese is melted.

Enjoy!

Bay tried them and said they were not her favorite, but if she were really hungry, then she’d eat them all.  Ha.  I guess I kinda won that one?  Maybe?

I on the other hand LOVED them.  Had the leftovers for lunch and told everyone in my office about them.  I’m thinking caramelized red onions would be a great addition next time around.

THREE –  Microwave // We’ve been without a microwave since we moved.  About 7 weeks.  I haven’t really missed it.  Maybe a handful of times.  Bay says every once in a while she wishes we had one.  Not that I can’t just go and get one.  I was curious if we really NEEDED one.  Honestly, I think they are ugly.  I don’t like extra shit on my counters.  At our last house it was above the stove and didn’t bother me at all.  This morning I was out of K-cups so I hit the Starbucks drive-thru.  Got ready for work.  Realized my coffee was cold AF.  I did the unthinkable.  I had to!  Re-heated my coffee in a pot over the stove.  As if Starbucks coffee doesn’t taste burnt enough as it is.  Bay witnessed and said, “I think it’s time, Mom!”  And guess what?  I’m still not 100% convinced.  Ha!  Maybe we’ll do an Instagram Story Poll….wondering how many peeps have microwaves?

Can you live without one?

A little of this + a little of that…….

I went to the dump yesterday morning.  That about sums up how my week is going…lol.  Dumpy!  Have I told you that moving sucks yet???

I realize I’ve been super negative lately.  A major funk has taken over my life.  I’m not going to apologize, because guess what?  It’s life!!  Hoping that after “the move” (how many times have I said that..lol) this weekend…it will disappear.  Fingers crossed, K?

Am I the ONLY person on this planet that does NOT watch Game of Thrones?

Did you know there are 23 days till Fall?  After the awful high temps the last week (and as far as I can see in the forecast) I’m so ready for sweater weather + pumpkin everything + homemade soup + fall to-do’s.  Then December will roll around I’ll start bitching about how cold it is and wish for Summer again!! 🙂

My Mom + Bay + I cracked up watching this video the other night.

Which reminded me, this tortoise bangle has been on repeat since it arrived.  Best part, it’s on sale for $9!

Link (our beloved rabbit) recently started thumping his hind foot.  Only around me.  I thought, oh how cute he loves me.  Bay googled it last night……

Foot-stamping in rabbits indicates that something in their environment is bothering them or causing fear.

TWO – Happy Birthday Toni Toni Tone // A little early.  We celebrated one of the homies last night at Thai Pepper.  Drinks, Dinner, more drinks.  As always, such a great time.

Let’s talk about Thai Pepper for a minute.  Don’t be fooled by the ambiance.  Or the fact that the place is always empty.  Because the food is legit!  I’d call it a little hidden gem right in our little town.  I tried (actually 3 of us ordered the same thing)

#8 Mango Curry under House Specialty.

Shrimp, fresh mango, broccoli, carrots and bell pepper in a sweet creamy peanut red curry sauce and coconut milk.

You guys, I wish you could have been there so see it.  Smell it.  Taste it.  So fucking bomb.  Everything about it.  Everyone loved their good.    Go try this place out.  Let’s spread the word!

THREE – When your homegirl leaves you this on your front porch.  Attached with the sweetest message.  Thank you Melika 🙂  Total day maker!!!

{good shit}

How about National Be Kind Day?  Let’s start it.  Who’s in?  Today, the 26th day of July.  Let’s all do something kind.  Even if its just ONE kind deed.  Kindness doesn’t cost a cent and is worth it’s weight in gold.  Sprinkle that shit everywhere you go.  Open a door for someone.  Smile at a stranger (just not a creepy one).  Text a homie.  Call your grandma and say Hi!  It takes a couple of second out of your day.  Do good shit!  And guess what, not only will good shit come back to you, you will feel pretty damn good too!

Remember a {weekend notes} where I talked about all the “Good Shit” that happened that weekend?  More “Good Shit” happened last weekend.  Right as our spontaneous road trip started, a black cat ran across the road, right in front of us.  I’m not going to lie….I’m  superstitious.  Please tell me I’m not the only one?  It totally freaked me out.  How can you start a trip like that?  You know what it means when a black cat runs across the street in front of you?  It means you should turn around and go back.  Otherwise, bad luck.

Instead of turning around, I decided…let’s just do “Good Shit” and we’ll be fine.  So, that’s what we did.  I sprinkled “Good Shit” every place I went.  And guess what?  Not a single thing went wrong, bad…nothing.  No bad luck.  What I’m saying here friends, just do “Good Shit!”

Bay and I chatted about this on our way to summer camp this morning.  About all the super easy things you can do.  She decided that she’d pay lots of complements to other kids + counselors and smile at others.  Smiles are contagious.  Yet so simple!  And if my 10-year-old can do it..so can you!!!

Random Acts of Kindness aka “Good Shit”

Currently debating on not going pee today, due to my legs feeling like they may fall off my body after Sarah P’s workout this morning.

Speaking of Sarah P…did you know that the two of us had a little business together…. Coaster Queens?  We made coasters 🙂  We still have a FB page for it and I just got a notification and it made me laugh.

A Pizza Hut recently opened in town.  Like walking distance from my house.  That’s it!
