It’s Monday friends!  Did anyone else notice that there are ONLY 12 days of school left?  You guys, summer is almost here!  This weekend felt like summer.  The sun was shinning.  We spent as much time as possible outdoors.  Family time.  Spent time with friends.  Good rosé.  Delicious dinners.

Celebrating GG’s 93rd Birthday //

She told me that with 3 new grand-grand babies on the way, come December she will have 21 great-grands.  That’s pretty damn impressive.  This photo below is just a handful of them ♥

The Royal Wedding //

Anyone else get up at the butt-crack of dawn to watch the royal wedding?  I had to.  Then when right back to sleep.  Woke up with Bay and watched it all over again.

So gorgeous.  I do think her dress was a little understated and was kind of swallowing her.  But dress #2 made up for it.

{sheet pan shrimp fajitas}

Hey friends.  It’s Taco Tuesday, so this recipe seemed pretty necessary!  There are a few things I’m passionate about when it comes to Tuesday dinner.

  1. Tacos ALWAYS, tacos
  2. A cold one (bud light lime preferably) 
  3. Quick + easy

I’m a Mom with a blog (kinda like a dog with a blog…lol) + a full-time job, so anytime I can come up with a simple way to throw together a healthy dinner….I’m all about it!

Sheet pan recipes are so legit!

Let’s chat about some of my faves…..

Breakfast sheet pans?  Yassss: {sheet pan eggs}

My go-to, even made this last night, {sheet pan sausage + veggies}

I almost forgot about sheet pan sausage + veggies over roasted cauli rice {friday 5} yummm!

I make a mean sheet pan nachos too, Cory + Bay can vouch.  {weekend notes}

Last year I shared a chicken version {sheet pan fajita} Remember that one?

Sheet pans meals are so damn perfect.  One dish and your done!  Clearly, I’m a fan…lol!

I’m also currently HOOKED on Trader Joe’s Wild Argentinian Red Shrimp.  You can grab a bag in the freezer section for $9.99 and they are hands down the best frozen un-cooked shrimp around.  Trust me, okay?!?!

{weekend notes}

Perfect Spring weather.  Flowery bouquets.   Sweet words written in cards.  Bubbly mimosas.  These are a few of my favorite things about Mother’s Day.  But truth is, the main attraction is my Mother, My best friend.  The most incredible, selfless women that I know.  She taught me EVERYTHING!  I am forever grateful for her endless love + encouragement + support + friendship!  Gracias, Madre!

I hope you all you Mama’s enjoyed yesterday.  Got showered with extra love.  And had an extra big glass of rosé to celebrate ♥

Thursday night dinner + chard with Nikki.  She made us her ahi tuna tacos.  You guys, there were so damn good.  Topped with her homemade spicy aioli + pickled cabbage.

We set out to watch the sunset at the Top of the world in Vacaville.  Not sure we ever found it.  The drive was beautiful though.

The great debate //

Toilet paper roll positioning.  I honestly don’t even think twice about it.  But, I do typically place a new roll to feed from the bottom.  According to the poll, there were just a handful of others, including my sister that do it this way…lol.   I died laughing over all the DM’s and responses.  We clearly do it all wrong…lol.  I think the poll ended up something like Top – 94% // Bottom – 6%!

{friday 5}

Happy Friday!  It’s been a really good week.  A nice calm week.  Just what we needed.  Spent as much time as possible outdoors which makes all the difference in shaking my creative juices up.  So many projects I can’t wait to start.  So many fun ideas for the blog.

Take the weekend to recharge, relax and treat yo self Mama’s!  And I wish you all the happiest Mother’s day!

 

 

ONE – Hot Sauce Debate // No doubt, I’m a tap-your-uncle girl.  Tapatio, that is.  It’s my hot sauce of choice…always.  On my eggs.  On my tacos.  On anything, really.  But, recently, I’ve been told that I need to spread my wings a little.  That there are wayy better hot sauces out there?  Say whhhattt?  You know I’m always down to try out new stuff, so next week, we’re going to do a hot sauce taste testing.  Not really sure of the logistics just yet.  So, tell me….what’s your fave hot sauce?  What should I add?

TWO – Madwell Top // I love a good striped tee!  Stripes pretty much go with anything + everything.  You’d die if you saw stripe tee collection in my closet.  I found another good one to add to my selection.  Originally I had a whole post planned for this newby, but when I saw that it was marked down to $29, I decided to scratch that and share it NOW!  This will sell out, and you probably need another one.  You’re welcome!

THREE – Easy Pickled Red Onions // I got lots of DM’s after posting this on insta-stories yesterday.  So, here ya go!  This is a quick-pickled onion recipe.  Cory claims it’s not authentic enough.  lol.  I had all the ingredients on hand.  And they are killer.  I’ve been topping turkey burgers, sandwiches + salads with these bad boys all week.

My homegirl Nikki, she made pickled cabbage for her ahi tuna tacos last night….fucking outstanding.  That will be on my to-make list for next week!

Here’s what you’ll need:

  • 1 red onion, thinly sliced
  • 1/2 cup water
  • 1/4 cup distilled white vinegar
  • 1/4 cup apple cider vinegar
  • 1 1/2 tablespoons honey
  • 1 1/2 teaspoons sea salt
  • 1/4 teaspoon red pepper flakes

 

Cram all the sliced red onion in a mason jar.  Stick your filled mason jar in the sink, because you will spill and this shit is stinky!

Add all the rest of the ingredients to a sauce pan and bring to a simmer.  Remove from heat.

Pour mixture over the red onions.  Allow to cool.  Then pop them in the fridge.

Enjoy!

 

FOUR – Coffee Table // Kinda like my dinning table settings, I love styling the coffee table.  I love that it’s a small space.  Also a space that gets a lot of attention.  Stealing items from other rooms to change it up is my jam.  I can’t get enough of baby daisies.  I grab a bunch ($3.99) every time I make a TJ’s trip lately.  I believe they’re called chamomiles.  But, I think baby daisies sounds cuter 🙂  So, here’s what my coffee table currently looks like and I’ve linked all the sources below if you need one of these items for your coffee table look!

This could quite possibly, not only be the most gorgeous salad I’ve ever made, but it’s fucking delicious too!

I’ve even added steps to simplify and make it a little more semi-homemade.  This will blow your Mama’s socks off.  You will definitely become her “favorite!”

{crunchy iceberg salad bowls}

Basically it’s STILL not Friday.  This week is kicking my ass.  Kid shit.  Appointments.  Work.  Errands.  Life.  Kaia!  Ha!  Sorry if I’ve been a complainer.  Next week will be SO.MUCH.BETTER!  Been trying to stay off the chard, but today, today I may just make a little exception.  I’m with Pooh.  “let’s go smash a few bottles”

After this mornings Kaia BRIK Challenge, I’m starving.  So, let’s chat about food!  Sound good?  Okay, good!

I dig a big green salad with dinner.  Bailey, on the other-hand, does NOT.  Unless I use iceberg.  For some reason, I’ve been anti iceberg.  Typically I grab mix greens, arugula or romaine (staying away from that shit).  Never iceberg.  So, I saw this recipe floating over the internet and though, hummm.  That looks killer.

Thank you Barefoot Contessa for continually making easy + fresh recipes that the whole house loves.  Without fail, every single Ina Garten recipe I’ve ever attempted has been fantastic!
