You guys, I am having a day. You know one of those days where nothing goes right? So, you just start laughing at all the things that go wrong.

I woke up on the wrong side of the bed. Clumsy AF! I’ve dropped everything I’ve touched. Which is the first sign that I’m about to have “a day”

I was 20 minutes late for work. Mainly because it’s fucking Western Day for spirit week. Does anyone else dread spirit week? Bay needed help prying the pig shit off the bottom of her boots she wanted to wear to school. I can only imagine the aroma coming off them as she sits in class.

Not to mention I’ve got a zit. And this aint any ol zit. This thing is between my eyes. Like a 3rd eye. When I’m talking to people, I can see them staring at it. HA! Swear. And I’m a total picker/popper kinda gal. But, I’ve vowed to not touch it. I think it’s even giving me a mild headache? Is that possible? There is not enough Tarte Shape Tape in the world for this bad boy!

I opened up my lunch and realized……I forgot a fork. And most days, that probably wouldn’t be the end of the world. But, I’ve been intermittent fasting. Meaning, at noon today, I hadn’t had anything other than water + coffee since 8:00 pm yesterday. So, 16 hours later you can only imagine not having a fork. HANGRY AF! I dug out a disposable fork. From the garbage (my personal garbage in my office). That I used yesterday. Washed it with hand soap and warm water (because that’s all I got). And enjoyed the hell out of those leftovers. Laughing the whole damn time.

Then, I went to buy a skeleton hand. At Walmart. And my card got declined. Because I’ve failed to balance my checkbook. So, I had to pull out my phone, transfer money. Then get back in line to make my purchase. Oh, yeah – It was a whoppin $3.08. Still laughing.

So, what’s next? We shall see! I cannot wait till bedtime!

But to be honest – how can you have a shit day on Taco Tuesday?

What is it about a wedge salad that always sounds delicious. Could it be the cold crunch iceberg lettuce? Or maybe the homemade croutons? Ohhhh, the blue cheese crumbles. I think I just answered my own question….ha!

In other not so exciting news. I tweaked my back last night. And I’m really embarrassed to admit – I think it was due to an intense dream. Yep! Swear. I woke up at 1am and thought WTF just happened. Tried to roll over and almost cried my back hurt so damn bad. FML! I can’t even say it was from dancing on the bars in Vegas. Or something at least semi cool. Nope – just a gnarly dream. That I can’t, for the life of me even remember. So if you see me walking crazy – that’s why. In a shit-ton of pain.

{chip-less chili cheese nachos}

Say that 5 times fast! Actually, I just said it out loud 5 times and it really wasn’t that hard.

Okay, I’m going to keep it short and sweet today. Cause mama’s got shit to do.

Every. Single. Time I’m trying to watch what I’m eating. Bay comes up with something she’s dying to try. The latest:

Wienerschnitzel chili cheese fries. Yes…like the worst thing on the planet. Ha. But kinda the best thing too.

Fun fact: I got kicked out of Faith Formation (aka CCD) for ditching to go to Wienerschnitzel. And I 100% got chili cheese fires. I mean, what else do you even order from there? Anyway, we thought we were being really sly. To make a long story short, we got caught. I think I was about the same age as Bay is now. I’ve already threatened her she’d loose Snap Chat if she ever tried to ditch CCD…lol. Trust me, she won’t even chance it. She lives for snap!

Anyway, we were driving home the other night and Bay mentioned that she saw a commercial for chili cheese fries and NEVER KNEW THEY HAD THEM AT WIENERSCHNITZEL.

All caps because I almost fell outta my seat. Say what? I kinda feel like a failed her. Everyone should experience chili cheese fries.

So, I took her to Wienerschnitzel and got her an order. Did you know you can now order them like 10 different ways? Shit has changed since 25 years ago when I was frequenting the establishment. Bay got her chili cheese fries fix.

I tucked my tail and went home. Raided the fridge and came up with my own damn chili cheese chip-less nachos. And let me tell you….

They did the trick.

Weight Watchers friendly AF too!

I made a the whole package of mini peppers and took them for lunch the next day.

Happy Spring Break! We’re off to the beach for some vitamin Sea. Much needed sand between our toes + sunshine on our shoulders. The thought of not setting a 4:30 am alarm all damn week has be straight up giddy! Ha!

I did get some time last week to pre-blog some content. And this one was highly requested, so here ya go!

I have something to admit….

I didn’t make a real dinner in over 2 weeks. We’ve been so busy, that I just haven’t made the time. Nugget’s salad bar chicken has become a staple in my diet…lol. Bay’s been living on taquitos + corn dogs. And let me tell you, she hasn’t complained once. But, I feel so much better when I make a healthy dinner. And we sit around the table. Say our daily peeks + pits.

I missed it. So last week, I finally made time to cook. We had our first al fresco dinner.

The best part?

I made a zero weight watchers point meal. And we both LOVED it. Added rice to Bay’s because clearly she can use all the carbs.

It’s uber healthy. Uber easy. I’m talking like 10 minutes max. One pan.

Wham bam thank you ma’am!

Bunny Cookie Cutter | Floral Placemat | Milk Glass Dish

How adorable are these little bunny butt cookies? Bay helped me make them and I LOVE how they turned out. So simple too. We used a sugar cookie package to make these. Because, sometimes….we just don’t have time to whip out the mixer and make a hot mess. lol.

All you need is your fave sugar cookie recipe. Or a packaged mix. A bunny cookie cutter. I found this one on Amazon after searching all the stores in town (with NO luck) and Amzon delivered in 1 day. Well done Amazon, well done. And a cute dab of frosting for a cotton tail.

This is a great cookie to make with little ones. You can’t mess it up. And they take no time at all. Nothing gets you into the Holiday spirit like a cookie baking day anyway.

I have so many recipe ideas and not enough time. lol. Next week I’m trying a new burger recipe. Fingers crossed it turns out as good as I picture it in my head. Oh, and I’m going to give a new cookie recipe a shot. It has a secret ingredient. Any guesses?
