We’re BIG on tacos!  I can honestly say, I’ve never met a taco I didn’t like!  But, you already knew that.  Kinda like pizza, tacos are our thang!  Pretty much weekly.  If I’m not whipping them up in the kitchen, then you will most likely find us bellied up to a booth at Maria’s Cantina for Taco Tuesday.

You also know my love of “jazzing” things up a bit.  I can’t have the same ol taco every single week.

I came across these Chicken Street Tacos on Daily Dose of Pepper.

When she say’s they make a mess, she’s not joking.  Not messy, like they make a mess when you make them….pot and pans everywhere.  Or make a big ass mess and fall apart when you’re eating them.  What she’s saying is, they make a mess of tacos.  A whole bunch of them.  20 to be exact.  So for all you chicks with #hellakids, this one’s for you!!!

They are crunchy, but not fried.  HUGE plus.  You’re house wont stink for the next week:)

And what if I told you that you can sub a few ingredients making these a whopping 90 calories a piece?  2 Smart Points (weight watchers).  Pretty good, huh?

Hello Friday, I’ve been waiting for you!  ALL week!

What’s the plan for the weekend?  My to-do list is growing by the minute.  But, it’s OK.  I’m going to sleep in + drink coffee in my pj’s before I conquer the world (and my to-do list) both mornings.  That’s something to definitely look forward to.  I’m going to drink some wine + indulge in yummy food too.  That’s what the weekends were made for!

Whatever you do, have a good one!!

Now, I’ve got 5 things on my mind…..

ONE – Veggie of the week // One of my {Fall To-Do’s} is try a new veggie each week.  Last week we tried Jicama (aka dirty apple).  It was a flop!  This week – Delicata Squash.  I prepared it following a recipe from the one and only, Skinny Taste.  You guys, it was sooo good.  Even Bay enjoyed it.  I have proof on Instagram 🙂  “better than brussel sprouts!”  I won that one!!

Here’s what you’ll need:

  • cooking spray
  • 1 delicata squash, washed (99 cents/each at TJ’s)
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • black pepper, to taste
  • 1/4 cup grated parmesan
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1/2 teaspoon lemon zest

Here’s what you do:

Preheat oven to 425 degrees.  Line baking sheet with foil, spray with cooking spray.

Slice squash in half lengthwise and scoop out the seeds with a spoon.  Slice seeded halves into 1/4 inch thick slices and place in a bowl.

Drizzle olive oil + salt + pepper over squash slices and toss well to coat.

In a small bowl combine parmesan + parsley + thyme + lemon zest.

Lay squash slices flat on prepared baking sheet.  Sprinkle parmesan mixture over the top.

Bake for 225 minutes until golden brown.

So good.  I can’t wait to make it again.

TWO – Instagram Story Polls //  I’m fucking obsessed.  Who’s dinner looks tastier?  Who likes a full tank of gas + a clean car?  Should I buy the dress?

Instagram even keeps track of that shit.  I hope it stays FOR-EV-ERRRR!  That way you guys can all help this indecisive bitch make life decisions.

I cannot believe you think Bay’s dinner looks better.  I even had mayo!!!  But to each his own.

I didn’t buy the dress:(  They only had it in a size large.  That’s why I’m holding it in the back.  It was huge.  Doesn’t mean that I wont find a nearby store that has a medium instock and drive there TONIGHT.  I’ve been known to do it!

{spinach pesto tacos}

You know we’re BIG on tacos!!  Taco Tuesday has pretty much become a tradition at our house.  Anyone else?

Not to mention, I’ve never met a taco I didn’t like.

But, these tacos are not just any ol taco.  We’re kicking it up a notch.

Well, kinda.

When’s the last time you bought the package of crunchy taco shells from the grocery store?  It’s been years over here.  And it wasn’t until my 30’s that I realized you’re actually supposed to baked these taco shells before filling and eating them.  I’m glad I finally took the time to read the package, because baking will take your taco game to the next level!

Here’s where the kicking it up a notch comes in.  Once you’re ground meat of choice is all browned up, you’re gonna add pesto + spinach + salsa.

Sounds strange.  I know.  I get it.  Just trust me on this one.  I’m not going to screw up you’re Taco Tuesday, promise.

The combo is legit.  And this whole baking + cheese help a little too.

{funfetti crumble}

Whether it’s your birthday or not, this Funfetti Crumble is loaded with sprinkles and perfect for any celebration.  Or any day, let’s be real.

Have we chatted about funfetti before?  I’m sure we must have?  It’s essentially white cake, but filled with fun colored sprinkles.  Kids love sprinkles.  Shit, I love sprinkles.  Who doesn’t love sprinkles?  My sister’s wedding cake was funfetti.  Swear!  We kinda like it…a lot!

{homemade magic shell}

When you try to have a convo with a 10-year-old about Magic Shell, to find out she has NO idea what you’re talking about.  Say whhhattt?  #old

It’s only the worlds greatest ice cream topping

Magic Shell is a dessert product produced by Smucker’s. It is a syrup that quickly hardens into a crispy shell when poured onto a cold surface, which is the origin of the product’s name. The syrup is primarily designed for use on ice cream.

Clearly I had to make shit happen.  I planned to just buy the regular old Smuckers squeeze bottle and let Bay experience the magic.  Then I thought, hmmm.  Google it.  Raise your hand if google is your boo?!?!  What did we ever do without it?  Life must have been so inconvenient.

Anyway…..a few different recipes popped up, some with corn syrup.  Which I DIDN’T have.  Most said it’s a perfect ratio of chocolate chips + coconut oil.  Which I DID have on hand.

We literally whipped up this chocolate magic within 1 minute.  Swear!  Bay was so impressed, that I have to share so you can pass it on to your kiddos too.

Or shit, make it for yourself and hide it from the kids.  That’s what I did with the leftovers (shhhh)!

{bacon burger bites}

Mini bacon burgers layered on a bamboo skewer, with lettuce + tomatoes + pickles.  Who can resist that combo on a stick?  Not me!!  OR Bay!

These make the perfect low-carb dinner or appetizer.

I recently grabbed a copy of Danielle Walker’s Against all Grain Celebrations cookbook.  So many beautiful + healthy recipes.  I want to make everything.  This one caught Bay’s eye.  She’s not a bun girl.  And anything on a toothpick is so cool to a 10-year-old.

{friday 5}

Happy FRIDAY!!  I’m currently away crossing some items off my summer to-do’s and chasing lower temps along the coast.  But, I didn’t want to leave you hanging on a Friday.  I know you are all dying to hear what’s on my mind today, right?  Haha.  Well just incase you are, here’s what I’ve got…..

 

ONE – Red + White + Blue // Our Bike Parade outfits have arrived.  Is it possible that we are even more excited now:)  Yes, it is!  The bike decorations are purchased.  The bud light is in abundance.  Donut tower is set and ready to be loaded up with sugary snacks.  We’ve got fishie crackers by the gallon.   And balloons by the dozen.  The only thing left was our outfits.  And I almost dropped the ball.

Low and behold, they arrived!!!  Just in the nick of time….and we are good to go!!

I’m sure you’ve all seen the adorable Ily Couture graphic tee’s all over instagram.  I just had to get one.

Bay’s Dress //

I almost purchased this online for the original price.  Which I NEVER do.  When you’re on a red + white + blue mission, sometimes you do out of character shit.  Luckily I had a couple of extra minutes to run into the Davis GAP and there it was.  Guess how much?  $12!  40% off + 10% cardholder discount.  I would have kicked myself for paying full price.  Moral of the story, NEVER pay full price at GAP!  Ever!

TWO – Breakfast Popsicles // Popsicles for breakfast, you heard me right.  Come on Mom, it’s summer!!  Especially with these hot temps…why not?  It’s basically a yogurt fruit bowl, but in the form of a fun popsicle.  You can make a batch for the week and keep them in the freezer.  You know what that means?  Breakfast is served and you don’t have to do shit!  Grab and go..Bam!  A healthy breakfast is served 🙂
