{shrimp + pineapple fried rice}

Hi friends! It’s been a while since I’ve shared a recipe on here. So, I wanted to change that STAT!

This coming Saturday is Chinese New Year. And you know that I’m all about celebrating ALL THE THINGS. Holidays are kinda my thing! We like to go all out. Big or small. Holiday or not. Typically we celebrate with one main thing…….

FOOD!

Bay and I wanted to put a fun + healthy spin on one of your very favorite Chinese dishes. Fried rice. If Bay could eat fried rice every day, she 100% would. Ha! Since it’s the new year and everyone, inducing myself, seem to be on the clean eating train. I am currently on week #2 of the Kaia Fit 30-day Jump-start program. Which is very clean eating.

My wheels started turning and I decided to whip up on of my favorite healthy rice dishes. Shrimp + Pineapple Fried Rice using Hinode Calrose Brown Rice. Grown in U.S.A. Non GMO. Gluten Free. Heart healthy.

You can find a variety of Hinode rice at Walmart + Nugget Market.

Bay Bakes. It’s be a while, but my favorite (not-so) little baker is back. You see, Bay’s now a teenager. So, sometimes she’s all about the blog, like right now. And other times, not so much. Ha! When she’s willing to bake, I take her up on it!

She made the cutest + yummiest Christmas Light Cookies. They are so fun and festive.

I included the sweetest Letter To Santa free printable at the end of this blog post. Although we no longer host our Letters To Santa night, Bay will 100% be forced to write a letter anyway!

{halloween snack mix}

Halloween is 23 days away. Bay just decided today that she wants to be a bumble bee. So now I frantically try to find her the perfect bumble bee costume….that she actually likes. Say a little prayer for me, K?

And you know by now that I’m a complete Holiday Whore…ha! Sounds so bad. lol. Any excuse to make something fun + festive. I’m here for it. Pumpkin shaped everything. Ghosts + spiders. I’m on it!

Some good ones from the archives:

  • Remember the {pumpkin donut holes} They are not only crazy easy, they’re crazy good!
  • The {mini pumpkin pies} I’ve been making for years. They are the perfect individual sized dessert for those of us (my hand is raised) that have absolutely NO control when it comes to pumpkin pie.
  • {pumpkin snickerdoodles} a spin on GG’s (my grandmother) classic cookie.
  • Back in 2016, I shared {pumpkin muffins} and I need to put these on my to-make list to re photograph them!

This weather has been giving me all the Fall feels. I’ve been wearing all my new sweaters + long sleeve tops. Decorating the house for the season. Buying anything + everything pumpkiny from Trader Joe’s. And pulling out some of my most fave recipes from the archives.
