
Bay Bakes! She’s back at it. I told her last week – she needs to get back on the blog. It’s been a while. In case you missed it….
Bay, my soon to be 13 year old, is the baker in the house. She’s got a major sweet tooth. So, she’s basically always digging through the cupboards for something chocolaty or sugary. You can find all her baking recipes here: {bay bakes}

Little update on the Baker…..
Bay completed her 7th grade year last week. She carried a 4.0 all year long. Proud AF!
Bay ran for Student Government Treasurer (she ran against herself). So, she won! Ha! I snuck out of work to watch her deliver her speech to her entire 7th grade class. Without a doubt, she is the most confident girl I know. She didn’t skip a beat.
Moments later, Bay was awarded a plaque for Academic Excellence.
Bay spent the last week in the Pioneer Volleyball camp. And loved every minute of it.
She’s spending the rest of the summer babysitting + taking the new STEAM Academy Summer Program (I may have forced this one a bit) Annual Tahoe trip with Gram and lots of YouTube.
Bay’s still riding horses whenever it allows.
I finally caved and let Bay get Snapchat. Which she proclaimed she was “the last kid in 7th grade to get the app” So, she’s really busy sending “streaks” I think that’s what she calls it?
And of course, she still LOVES to bake. Which I just love!
Well, today she’s got a keeper. Chocolate cupcakes with peanut butter cream frosting. What pairs better than chocolate + peanut butter? If that combo doesn’t make your mouth water, then we cannot be friends. Ha!
We like to call this “semi homemade!” Using a box of cake mix. The frosting though, the frosting is ALWAYS homemade. From scratch.
Therefore, making this a great recipe for kids. I think this would be a perfect addition to the Father’s Day menu. Bay’s making another batch, but in the from of a cake for Sunday. And I cannot wait!
And did I mention, this recipe is super easy! So, let your kiddos help you out. And of course, lick the bowl too!
{chocolate cupcakes with peanut butter cream frosting}
Here’s what you’ll need:
- 1 box Betty Crocker chocolate cake mix (including ingredients needed on the box)
- 1/2 cup butter, softened
- 4 oz cream cheese, softened
- 1 1/3 cup peanut butter
- 6 cups powdered sugar
- 2 1/2 tablespoons vanilla extract
- pinch of salt
- 2 tablespoons of milk
- 1 small Hershey bar (for grating)
Here’s what you’ll do:
Stick the Hershey bar in the freezer. This helps it grate easier.
Using an electric mixer beat together butter + cream cheese + peanut butter till creamy.
Gradually add 1 cup of powdered sugar at a time. You’ll get a nice fluffy frosting.
Beat in the vanilla + salt.
If mixture is thick, add 1 tablespoon of milk. Use the additional tablespoon of milk if needed.
Once the cupcakes are cooled, frost them. Bay used a piping bag, but a good ol knife will work great too.
Using a cheese grater or zester, shred the frozen Hershey bar over the frosted cupcakes.

If you can resit, you’ll have plenty to frost all the cupcakes. But, if you’re like us, you too will end up with about 5 unfrosted! Ha! I’m not a huge sweets person. This frosting knocked my socks off. It was fantastic.
