
Happy Spring Break! We’re off to the beach for some vitamin Sea. Much needed sand between our toes + sunshine on our shoulders. The thought of not setting a 4:30 am alarm all damn week has be straight up giddy! Ha!
I did get some time last week to pre-blog some content. And this one was highly requested, so here ya go!
I have something to admit….
I didn’t make a real dinner in over 2 weeks. We’ve been so busy, that I just haven’t made the time. Nugget’s salad bar chicken has become a staple in my diet…lol. Bay’s been living on taquitos + corn dogs. And let me tell you, she hasn’t complained once. But, I feel so much better when I make a healthy dinner. And we sit around the table. Say our daily peeks + pits.
I missed it. So last week, I finally made time to cook. We had our first al fresco dinner.
The best part?
I made a zero weight watchers point meal. And we both LOVED it. Added rice to Bay’s because clearly she can use all the carbs.
It’s uber healthy. Uber easy. I’m talking like 10 minutes max. One pan.
Wham bam thank you ma’am!

Egg Roll Bowls. I’m sure you’ve seen them on Pinterest before. I know I have. I dissected the recipe and tried to see what I could do to make it a zero weight watchers point meal. Yet, not lack all the yummy traditional flavor. It was a home run. So, I’m sharing it will you all today!
If Weight Watchers isn’t yo thang, that’s fine. You’ll still dig it.

Here’s what you’ll need:
- 1 lb ground turkey
- 1 tablespoon sesame oil
- 1/2 cup red onion, diced
- 1 clove garlic, minced
- 6 cups coleslaw mix
- 1 cup edamame
- 4 tablespoons soy sauce (low sodium)
- 1 tablespoon white vinegar
- 1 teaspoon hot sauce
- 1/2 teaspoon pepper
Here’s what you do:
In a large pan, add sesame oil + onion + garlic. Cook for 3 minutes.
Add turkey and cook till no longer pink.
In a small bowl mix together soy sauce + vinegar + pepper + hot sauce.
To the cooked turkey add, coleslaw mix + edamame + soy sauce mixture.
Cook for about 5 minutes, until coleslaw is tender.
Serve over rice, or alone….topped with sliced green onions.
Enjoy!

I served my egg roll bowl with a side of veggies. Broccoli + red onion + mushrooms….roasted in the oven. Yummm-o. It’s been my go-to side dish and it never gets old.
For Bay, I made good ol San Francisco Treat rice pilaf. Pilled the egg roll bowl right over the top.
This would be bomb over cauliflower rice too!
