{chicken bacon ranch skewers}

With the start of the new season comes new recipes. Anyone else ready to fire up the barbie? With a cocktail in hand!

ONLY 28 more days till I will have a glass of chardonnay permanently in my right hand.

I have so many recipe ideas and not enough time. lol. Next week I’m trying a new burger recipe. Fingers crossed it turns out as good as I picture it in my head. Oh, and I’m going to give a new cookie recipe a shot. It has a secret ingredient. Any guesses?

But today, let’s talk about these chicken skewers.

Bacon. Ranch. Chicken…..these are a few of my favorite things.

I mean, if you don’t love those three ingredients, then we basically can’t be friends. lol!

I posted my lunch yesterday, which was these leftovers and I got lots of messages wanted me to tell you all about it.

So, here ya go…..

{chicken bacon ranch skewers}

Here’s what you’ll need:

  • 2 lbs chicken breasts (about 4 breasts), cut into 1 inch pieces
  • 1/4 cup olive oil
  • 1 packet dry ranch dressing seasoning
  • 1/4 teaspoon pepper
  • red onion, quartered
  • red bell pepper, cut into 1 inch pieces
  • 10 slices of bacon
  • skewers

Here’s what you’ll do:

In a large ziploc bag, add olive oil + pepper + ranch packet. Zip up the bag and mix well. Then add cubed chicken. Place in the fridge for 2 hours…overnight is best.

Preheat oven to 400 degrees

Stick wooden skewers in water. Submerge for about 15 minutes. This helps them not catch on fire while grilling. I obviously skipped this step, as you can see.

Place bacon on a foil lined cookie sheet (for easy clean-up) and bake for 15 minutes. Till almost done. NOT crispy.

Once cooled, cut into 2 inch pieces.

Thread red onion + chicken + bacon + bell pepper. Repeat.

You should get 8-10 skewers.

Grill for 5 minutes on each side. Turning often so the bacon doesn’t burn.

Everyone loved it. Something different. Something with all the ingredients we love. I mean, you got me at ranch! Ha!

I served my chicken bacon ranch skewers over mashed carrots for myself. Mashed potatoes for Cory + Bay!

Mashed carrots were another recipe that I’ve been thinking about. I had no recipe, just winged it. And it was seriously so simple. Peeled + chopped one pound (1 bag) of carrots. Boiled for about 20 minutes. Drained + mashed with a potato masher. Added about 1 tablespoon honey and 1 tablespoon butter. Lots of salt + pepper.
