Hi and Happy Friday! Raise your hand if you’re as happy as I am for FRIDAY! I have been so inspired lately, it’s the best feeling. Only problem – not enough time in the day to make it all happen. I went to TJ’s and grabbed all the goodies to work on a fun Thanksgiving DIY to share next week. Although, my heart + mind are 100% on Christmas. Since I’m hosting turkey day, I have to slow my roll….for a minute. Would it be weird to eat turkey with a Christmas tree in the living room? Ha! Just kidding. I’ll wait till the day after! Weekend plans: sleep-in (if only till past 5am) watch my nephew play in his championship football game #gobenny! 5 things on my mind……

ONE – FRIDAY // When you find your second favorite F-word on a sweatshirt. You buy that fucker. I went to J.Crew Factory earlier this week and it fell in my shopping bag. So, I had to take it home. It’s $30 today with code: 2DAYSONLY! Grab one and let’s be Friday twins Ha! I also found a shit-ton of other really cute tops + sweaters + vests too. I’ll be sharing once I get them all linked up for you!

TWO – Egg White Frittata // It’s easy. It’s clean. It’s delicious. This was my go-to breakfast this week on my sugar cleanse. It re-heats so well too. Top with some hot sauce + avocado. BOMB! Serve over roast sweet potatoes…even bomb-er. Try it over the weekend, okay?!?!
Egg White Frittata

Here’s what you’ll need:
- 3 mushrooms, sliced
- handful fresh spinach
- 1 cup egg beaters (or egg whites)
- everything but the bagel seasoning
- parmesan cheese
- hot sauce
Here’s what you do:
Preheat oven to boil.
Spray your frying pan with non-stick spray. Avocado oil is my jam right now, but any will do the trick.
Add mushrooms and cook for about 3 minutes, flip half way through.
Add spinach and cook till wilted.
Whisk egg beaters or whites till frothy and sprinkle with everything but the bagel seasoning. Pour over veggies. Sprinkle with parmesan cheese.
Don’t touch the eggs. Even though you want to. Once they start to look set, gently run a spatula around the rim.
Transfer frying pan to oven and boil for 2-3 minutes.
Once eggs are puffed, they are DONE!
Remove and add more parmesan….you can NEVER have too much cheese 🙂
Cut frittata into 4 wedges. Top with hot sauce. Add some avocado if you’re feeling fancy.
