
I hope your week has been a good one. It’s been a chaotic, but productive one over here. I’m beginning to think Friday’s are my new favorite day of the week. Sorry Saturday! I think it’s the excitement of wrapping up the week. And obvi starting the weekend. If only I didn’t have to work on Friday’s. In other news, I’ve been wearing the exact same pair of shoes for 2 weeks straight. I can’t take them off…true love!
Ok, and now on to 5 things on my mind…..
ONE – To-Do’s // You guys, I have nothing on my to-do list for the weekend. I mean, I’m sure there are a million things I could do, but I don’t have anything I HAVE to do. WTF am I going to do? Ha! The struggle is real. I work to not have anything to do on the weekends, then when I have nothing to do, it kinda stresses me out. I’m such a mess! I take that back, I really, really want to see American Made. Not a huge fan of Tom Cruise, but I keep hearing this movie is GOOD! Has anyone seen it? I’m sure I’ll add about 23 things to do by the end of the day. That’s just how I roll.

TWO – Veggie of the week // Butternut Squash! Probably my favorite so far. I’ve had it many times. I’ve cooked with it many times. I decided to try 2 new ways of preparing it, rather than my normal roasting. Butternut Squash Pizza…Oh My God! Delish! Then I went and made a pasta sauce using only pureed butternut squash + shallots + garlic + a little reserved pasta water. Equally delish. And this one deserves it’s very own post. I’m hoping to get it on the blog next week!

Butternut Squash Pizza

Here’s what you’ll need:
- Butternut squash
- 4 slices bacon, cooked + crumbled
- Marinara Sauce
- Pesto
- Mozzarella Cheese, thinly sliced
- Olive oil
- Fresh thyme leaves
- Salt + Pepper
Here’s what you do:
Preheat oven to 400 degrees + line a baking sheet with foil.
Peel + slice butternut squash in 1/2 inch slices.
Note: I used 1 butternut squash for 2 recipes, so I only used about 1/2 of the skinny-er side of the butternut squash. About 8 slices. Once you get to the bottom of the squash, you’ll find seeds and wont be able to get perfect slices.
Brush slices of butternut squash with olive oil and season with salt + pepper.
Roast for 20 minuets.
Remove from oven. Spoon marinara or pesto over the top. Top with sliced mozzarella. Then add bacon crumbles + thyme.
Back in the oven for about 5 minutes or until cheese is melted.
Enjoy!
Bay tried them and said they were not her favorite, but if she were really hungry, then she’d eat them all. Ha. I guess I kinda won that one? Maybe?
I on the other hand LOVED them. Had the leftovers for lunch and told everyone in my office about them. I’m thinking caramelized red onions would be a great addition next time around.
THREE – Microwave // We’ve been without a microwave since we moved. About 7 weeks. I haven’t really missed it. Maybe a handful of times. Bay says every once in a while she wishes we had one. Not that I can’t just go and get one. I was curious if we really NEEDED one. Honestly, I think they are ugly. I don’t like extra shit on my counters. At our last house it was above the stove and didn’t bother me at all. This morning I was out of K-cups so I hit the Starbucks drive-thru. Got ready for work. Realized my coffee was cold AF. I did the unthinkable. I had to! Re-heated my coffee in a pot over the stove. As if Starbucks coffee doesn’t taste burnt enough as it is. Bay witnessed and said, “I think it’s time, Mom!” And guess what? I’m still not 100% convinced. Ha! Maybe we’ll do an Instagram Story Poll….wondering how many peeps have microwaves?
