{friday 5}

Frrriiiidaaayyyy!  Did you happen to check the weather forecast for mañana?  (I had to google how to do the ñ = Alt + 0241 try it!!)  Sunshine + 70 degrees.  I’ll take it considering it’s going to get cold and possibly rainy next week.  It’s been a very productive week.  Bay got her official 4-H officer shirt.  So cute.  Celebrated Fat Tuesday with a homemade King Cake.  Bay got the baby, so she’s in change of planning the next party/dinner.  Lent is in full swing.  We celebrated Valentine’s day ♥ Bay + I ugly cried for about 1 hr 53 min last night watching Wonder.  SUCH a great movie!  I completed week #1 of Kaia CORE this morning #sore

Speaking of this morning……

Do you ever have a day where you feel like a human garbage disposal?  I’m not sure what the hell happened to me this morning, but I could not stop eating.  Just to hold myself accountable, and so you can probably laugh your ass off.  Here’s what I consumed from 6:15 ish till 11am:

ONE – Lent //  You guys are NEVER going to guess what I gave up for lent?!?!

Cursing!

No f bombs for 40 days.  FOURTY days!

Every.single.person I’ve told, laughed.  Nobody has any faith in me.  Let’s clarify….does this mean I cannot say bad words.  But, I can still type + text them, right?  Ha.  I’m giving up both.  The f bomb is probably one of my most typed words in my text messages.  My iPhone no longer auto corrects to “ducking”

As recommended, I’m wearing a rubber-band around my wrist and I snap myself when I say/write a bad word.

Bay says my wrists are going to be black + blue by day 40 🙂

I think I got this!  Oh and yesterday’s post didn’t count, since it was written pre-lent 🙂

Bay gave up YouTube.  Which is HUGE for her.  She’s a YouTube junkie.

Hi guys!  How was your weekend?  Can you tell how Bay feels about the weekend?  ♥  I loved every second of it.  Everyday just flowed so well and it was super relaxing and perfect.  I need to plan or hope for more weekends like the last.  Bay did lots of baking.  I did lots of meal prep.  Shopping.  Pizza.  Date night at the movies.  And made some time to catch up with some gal pals.

 

Intentions for the week:

  • plan a cute valentine’s day bento box lunch for Bay
  • balance my check book (it’s been 2 weeks..fml)
  • find a floor lamp for the living room #dungeon (Picked this up from Target) 
  • celebrate Mardi Gras by making a king cake #oldaf  – (Bay got the baby)
  • wheel + deal with Dish for a lower monthly payment (it works!)
  • enjoy our low-key (no plans) week(such a nice change) 
  • workout mon-fri(Did it WHOOP WHOOP)
  • cleanup my email in boxes
  • create a sweet potato burrito bowl with leftover chicken(delish)

  • Decorate a cauliflower crust pizza – (on this weeks to-do’s I’m thinking brussels sprouts + balsamic reduction)
  • Spoil Benny on his birthday
  • Meditate every morning for 10 minutes.  So not me, but I think I want to try. – (Who’s got time for that?)
  • Watch all the movies at the theater I’ve been wanting to see
  • Spruce up the front patio – It turned out so good ♥  Thanks to my Mom’s help!
  • Make a $12 grocery store flower arrangement for the blog
  • Lunch date with my Mom + Sis
  • Rice all the cauliflower in the fridge + freeze for meal prep – I’ve got cauli-rice for dayyysss

Friday //

Nails + Vince’s with my girl.  She needed to get her Hawaii nails.  She picked white fingers + pink toes.  So cute ♥

Have you ever had their pork burrito?  It’s the ONLY thing I order anymore.  The best!  Ala cart, since I kill about two baskets of chips + salsa before 🙂

I found the adorable luggage tag at Walmart last week.  For $3.  I seriously looked everywhere for about 2 weeks then stumbled on this one and it matches her new luggage perfectly.

Retail therapy //

A Nordstrom trip always solves the problem.  And their order pick-up is the best thing since sliced bread.  When you know what you want, but don’t feel like tracking it down or trying shit on.  Order online, wait about 30 minutes.  You’ll get a text when your order is ready.  Swing by the shoe department.  Show the cashier your ID, done!

{friday 5}

I hope your week has been a good one.  It’s been a chaotic, but productive one over here.  I’m beginning to think Friday’s are my new favorite day of the week.  Sorry Saturday!  I think it’s the excitement of wrapping up the week.  And obvi starting the weekend.  If only I didn’t have to work on Friday’s.  In other news, I’ve been wearing the exact same pair of shoes for 2 weeks straight.  I can’t take them off…true love!

 

Ok, and now on to 5 things on my mind…..

ONE – To-Do’s // You guys, I have nothing on my to-do list for the weekend.  I mean, I’m sure there are a million things I could do, but I don’t have anything I HAVE to do.  WTF am I going to do?  Ha!  The struggle is real.  I work to not have anything to do on the weekends, then when I have nothing to do, it kinda stresses me out.  I’m such a mess!  I take that back, I really, really want to see American Made.  Not a huge fan of Tom Cruise, but I keep hearing this movie is GOOD!  Has anyone seen it?  I’m sure I’ll add about 23 things to do by the end of the day.  That’s just how I roll.

TWO – Veggie of the week // Butternut Squash!  Probably my favorite so far.  I’ve had it many times.  I’ve cooked with it many times.  I decided to try 2 new ways of preparing it, rather than my normal roasting.  Butternut Squash Pizza…Oh My God!  Delish!  Then I went and made a pasta sauce using only pureed butternut squash + shallots + garlic + a little reserved pasta water.  Equally delish.  And this one deserves it’s very own post.  I’m hoping to get it on the blog next week!

Butternut Squash Pizza

Here’s what you’ll need:

  • Butternut squash
  • 4 slices bacon, cooked + crumbled
  • Marinara Sauce
  • Pesto
  • Mozzarella Cheese, thinly sliced
  • Olive oil
  • Fresh thyme leaves
  • Salt + Pepper

 

Here’s what you do:

Preheat oven to 400 degrees + line a baking sheet with foil.

Peel + slice butternut squash in 1/2 inch slices.

Note: I used 1 butternut squash for 2 recipes, so I only used about 1/2 of the skinny-er side of the butternut squash.  About 8 slices.  Once you get to the bottom of the squash, you’ll find seeds and wont be able to get perfect slices.  

Brush slices of butternut squash with olive oil and season with salt + pepper.

Roast for 20 minuets.

Remove from oven.  Spoon marinara or pesto over the top.  Top with sliced mozzarella.  Then add bacon crumbles + thyme.

Back in the oven for about 5 minutes or until cheese is melted.

Enjoy!

Bay tried them and said they were not her favorite, but if she were really hungry, then she’d eat them all.  Ha.  I guess I kinda won that one?  Maybe?

I on the other hand LOVED them.  Had the leftovers for lunch and told everyone in my office about them.  I’m thinking caramelized red onions would be a great addition next time around.

 

THREE –  Microwave // We’ve been without a microwave since we moved.  About 7 weeks.  I haven’t really missed it.  Maybe a handful of times.  Bay says every once in a while she wishes we had one.  Not that I can’t just go and get one.  I was curious if we really NEEDED one.  Honestly, I think they are ugly.  I don’t like extra shit on my counters.  At our last house it was above the stove and didn’t bother me at all.  This morning I was out of K-cups so I hit the Starbucks drive-thru.  Got ready for work.  Realized my coffee was cold AF.  I did the unthinkable.  I had to!  Re-heated my coffee in a pot over the stove.  As if Starbucks coffee doesn’t taste burnt enough as it is.  Bay witnessed and said, “I think it’s time, Mom!”  And guess what?  I’m still not 100% convinced.  Ha!  Maybe we’ll do an Instagram Story Poll….wondering how many peeps have microwaves?

MAKING A HOUSE A HOME //

It’s finally beginning to feel like home.

I’ve got a table for my coffee!  Topped with white tulips, which make me smile every single time I walk in the living room!

I found a dinning room table!  No more living room floor picnics!

I sold my old dinning room table at our garage sale.  Probably sold it for what I paid for it too.  Considering I bought it back in 2001ish.  Swear!  It was time for something different.

I had NO idea how happy this table would make me.  I had a little extra pep in my step once I got it all put together and decorated.

I busted out the linen napkins.  Gold flatware.  Gold rimmed glasses.  Wicker chargers.

I’ll share more details later this week.  I got lots of Instagram messages wanting to see more pics!  Hold on tight.

Good morning and welcome to Monday’s Weekend Notes!  I woke up with a healthy dose of panic this morning.  My to-do list for the week is at an all time high in preparation for the long weekend.  Today I’m taking the advice I give Bay…..take it one step at a time and start with the most difficult item first.  Monday is always a bit of a beast, but Friday will be here before we know it and it will all be worth it!  Here’s to a productive day.  Hope you’re off to a great start!  Be a rebel and have a great day!

Bailey was recruited to make the cake for Spencer’s Baptism Saturday.  She said YESSS, before she even knew what the baking task would be.

The naked carrot cake is back and more beautiful than ever.  I even invested in some new Wilton 8 inch pans.  Which made baking a breeze.

It’s Friday!  Is it just me, or did this week just fly by?  I was productive AF!  Checked so many things off my to-do list.

House is clean √  Laundry done √  Grocery shopping √  Taxes √  Birthday gifts purchased √

I like to make sure my shit is done before a fun weekend.  Work hard, play harder!!!  Now if only I could drink margaritas tonight…that would be a perfect Friday activity.

I’ve got 5 things on my mind today…..

ONE – Omega Nu Pledge Party // Tuesday night our new pledges threw a party for all the Omega Nu sisters.  They pulled off such a great night.  The food + booze (I didn’t partake…boo), the company were all perfect.  The activity: floral arranging.  I have to admit, I seriously suck at making pretty arrangements.  For instance, I buy them at the store, cut the cellophane off and hurry up and shove them in a vase before they get messed up.  LOL.  They had step-by-step instructions that made it so easy.  Have I mentioned my love for eucalyptus?   Everyone put together beautiful arrangements.  Best part, we get some pretty cool new sisters to join the group ♥

TWO –  Heritage Plaid Infinity Scarf //  I’m not much of a scarf girl, but I have been rocking the shit out of this one.  I got it as a Christmas gift and have probably wore it 6 times since.  Super warm.  Super soft.  Easy to wear.  Goes with everything.

I went to link it today and it’s currently sold out…boo.  Good news, it was sold out when I put it on my Christmas list too.  Chances are it will be restocked.

THREE – Divorce on HBO //  Did anyone watch the first season?  If so, LUCKY bitch!!

Sarah Jessica Parker returns to HBO in the new comedy series, Divorce. Parker stars as Frances, a woman who suddenly begins to reassess her life and her marriage, and finds that making a clean break and a fresh start is harder than she thought.

First off, I absolutely LOVE SJP.  Not so much her Golden Globes gown though.  I watched the first Divorce episode the other night.  HBO totally fucking tricked me.  You see, I don’t have HBO.  So when I clicked on it and the whole first episode was available to watch, I was pumped!!  SCORE!!  Want to know how they tricked my ass?  I got so hooked.  And I could ONLY watch the first episode.  Which was sooooo good.  After the episode was over, it gave me instructions on how to order HBO.  Well done HBO, Well done.  I’m actually considering adding the damn channel just for this show.  That’s how good it was.  Click on the link below and watch, then let me know if you want to order HBO too 🙂

Good morning.  Happy Monday.  Happy MLK Day.  I’m sure most of you are home from work today.  I am not!  Ha!

Day #8 of sugar-free.  ONLY 12 days to go.  Not that I’m counting or anything.  It’s been a little tricky, but so far so good.

We had an eventfull yet relaxing weekend.  Just how I like them!

Friday night I celebrated my final 35th birthday dinner.  It’s officially over.  Thank you Sarah P for planning and Nidia + Toni + Rachel for coming to celebrate with me.  We don’t see each other nearly enough.  Love catching up ♥

And a big shout out to our server at Jinju Sushi!  That poor girl accommodated mine + Sarah’s sugar-free requests.  It wasn’t easy.  Sushi may be at the top of my list once I’m back to hittin’ the sugar again!!!

Can we take a minute to talk about Rachel?!?!  I love that she’s always rocking a new look or style.  I never know what hair-do she’ll show up with.  Always wearing something super trendy and cute.  But look at her scarf?  She draped it around her neck and let it hang on each side of her shoulder.

I checked out Asha Urban Baths.  I wanted to go last weekend and happy I didn’t.  The girl checking us in Saturday morning said the line was out the door.  With over an hour wait.  F that!  We pretty much had the place to ourselves, other than the Jacuzzi.  My sore body loved every second of this little oasis.

A warm soak is RELAXING and NOURISHING. A cold plunge is ENERGIZING and HEALING. Sweating in a steam or sauna is CLEANSING and SOOTHING. Quality time alone or with friends is RICH and REWARDING.

My Mom + I went out for dinner and a movie ♥  I finally checked out  Tower Cafe.  Can you believe I’d never been?  I can cross that off my must-try list.  It was soooo good!   We ordered a Thai seafood stew that was served over jasmine rice.  TO DIE FOR!!!  I can totally see brunching at Tower Cafe this spring/summer.  The outside area is fun.

Watched Manchester By The Sea at the Tower Theater , which I’d also never been too.  I swear it’s a replica of the State Theater in Woodland.

Here’s a what it’s all about…..

Lee Chandler is a brooding, irritable loner who works as a handyman for a Boston apartment block. One damp winter day he gets a call summoning him to his hometown, north of the city. His brother’s heart has given out suddenly, and he’s been named guardian to his 16-year-old nephew. As if losing his only sibling and doubts about raising a teenager weren’t enough, his return to the past re-opens an unspeakable tragedy.

It was heartbreaking.  I’d be laughing then crying.  The gut wrenching  story was acted out beautifully.  I wish the ending was a little better though.  When the lights came on, everyone just sat still in their seats.  Like it couldn’t be over.  We needed more.
