{valentine’s day snack board}

In case you haven’t heard – snack boards are all the rage right now. And for good reason! They are so fun for kids and grown ups, VERY easy to throw together and allow you to offer something for everyone to snack on.

I really try to focus on healthy-ish recipes, but the Holiday Whore in me just can’t help it this time of year.

{pioneer woman pasta bake}

Company casserole. Hot dish (as Stover would call it). Pasta bake. Mom’s spaghetti pie. You name it – every family has their version of this recipe. Using the same basic ingredients in each. Except we jazz it up a bit. You know know I roll.

This recipe was adapted from on on Pioneer Woman’s classics. With my own little spin on it.

Whenever there is a meal train, someone has a baby, or you just feel like taking a homie something delish. This is the recipe! Promise. It’s a crowd pleaser. It’s one of those just good for the soul meals. Ya know what I mean?

{shrimp + pineapple fried rice}

Hi friends! It’s been a while since I’ve shared a recipe on here. So, I wanted to change that STAT!

This coming Saturday is Chinese New Year. And you know that I’m all about celebrating ALL THE THINGS. Holidays are kinda my thing! We like to go all out. Big or small. Holiday or not. Typically we celebrate with one main thing…….

FOOD!

Bay and I wanted to put a fun + healthy spin on one of your very favorite Chinese dishes. Fried rice. If Bay could eat fried rice every day, she 100% would. Ha! Since it’s the new year and everyone, inducing myself, seem to be on the clean eating train. I am currently on week #2 of the Kaia Fit 30-day Jump-start program. Which is very clean eating.

My wheels started turning and I decided to whip up on of my favorite healthy rice dishes. Shrimp + Pineapple Fried Rice using Hinode Calrose Brown Rice. Grown in U.S.A. Non GMO. Gluten Free. Heart healthy.

You can find a variety of Hinode rice at Walmart + Nugget Market.

Before we get started on the recipe, I wanted to chat a little more about Chinese New Year.

Dear Santa,

The tree isn’t the only thing getting lit this year! #sorrynotsorry

HAPPY FRIDAY FRIENDS!!!

As I typed the title, I thought – what a random post! Truth is, I’ve got so much to share and so little time. So we’re tag teaming these posts with all the things. Food + outfits! Why not?

Let’s start with why I LOVE all black outfits……

Slimming AF | I think we’re all down with anything to look a little slimmer, right? Black makes any figure, shape and size – look longer and leaner. And it’s so sleek!

Easy AF | By far the easiest color to dress up or dress down. Black jeans with a t-shirt and sneakers by day. Swap out with a heel + blazer and you’re instantly dressed up! Having great basics like this in my closet are a MUST!

Accessorize AF | Black is basically a blank canvas. So anything goes. You can always keep it simple with jewelry. Or bust out all the bright + fun pieces and let the jewelry be the statement. Add a leopard belt. Or a bright scarf.

Classic AF | It’s one of the most classic colors in your closet. Black will NEVER go out of style! When you dress in classic colors + pieces you will instantly look + feel put together with little effort.

When you really want a glass of wine, but then you remember it’s only 8am. So, coffee will have to do. Question – are you an iced coffee or hot coffee in the Winter kinda gal?

I can’t commit to one entirely. I like hot in the morning and an iced in the afternoon. No matter what the weather forecast happens to be.

Weekend plans: just kick it!

Going to keep it short and sweet with a fun list of things I’m diggin this week……

{asian meatballs}

I need to come up with a new name for this recipe. It just sounds bad. Or is my mind in the gutter? Ha!

Friends – I tried a new air fryer recipe the other night. Annnddd, it was a hit! Bay and I both had it for dinner. Then lunch the next day. We loved it! I’m including oven direction with this recipe as well, since I’ve also made it back in the day before air fryers were a thing.

This recipe tastes so fresh + delicious. The best part – it’s healthy and totally Weight Watchers friendly. You guys, I’m back on the WW train. I’ve been tip toeing around the program for the last month and last week, I am BACK!

And right when I get back, the entire program changes. FML! Now you get 3 options. Say whhhattt? I’m currently using the old program, but I’m attending the Saturday meeting to get all the details. So I can decide which option works best for me. Stay tuned.

I left my heart in San Francisco 🎶
A day in the Bay with my Baes ❤️

Ocean Beach. Sutro Baths. Union Square. Chinatown and the Marina. We hit all our favorite spots in the city. It was a fun weekend.

Somehow I woke up pumped to start the week. Here’s to making a new routine.

Intentions for the Week:

  • Finalize Holiday Cards (last year I didn’t send any out)
  • Figure out the new Weight Watchers plans
  • Try a new air fryer recipe
  • Deck the halls
  • Have Bay Bake something fun + festive for the blog
  • Pick up everything for my Christmas Table (velvet ribbon is hard to find)
  • Grab a coffee and walk the arboretum on a lunch break
  • Delete old photos from my phone
  • Find a fun Christmas pillow for my bed (I’m decorating my room too…lol)

This week on the blog: I’ll be sharing some sale finds. Dedicating a whole post to Bay’s new GreeLight debit card, because it’s that good. I have an Old Navy Try-On, because I keep popping in and finding new + cute things. I have a green jacket styled 4 ways that will be coming too!

Highlights from the weekend…..
