
Company casserole. Hot dish (as Stover would call it). Pasta bake. Mom’s spaghetti pie. You name it – every family has their version of this recipe. Using the same basic ingredients in each. Except we jazz it up a bit. You know know I roll.
This recipe was adapted from on on Pioneer Woman’s classics. With my own little spin on it.
Whenever there is a meal train, someone has a baby, or you just feel like taking a homie something delish. This is the recipe! Promise. It’s a crowd pleaser. It’s one of those just good for the soul meals. Ya know what I mean?
If you’re in a dinner rut, add this to your rotation. It’s quick + easy to prepare. You can even pop it in the freezer and bake it another time. Great for leftovers. Or for serving a crowd.
Just a good ol fashion dinner, like Mom used to make at home.

Here’s what you’ll need:
- 1 lb. ground beef
- 1/2 cup red onion, chopped
- 15 oz can tomato sauce
- 1/4 cup red wine
- 1 tablespoon Italian seasoning
- 1/2 teaspoon salt
- black pepper
- 12 oz package – egg noodles
- 1/2 cup sour cream
- 1 1/2 cups cottage cheese
- 1 1/4 cups green onions, chopped
- 2 cups cheddar cheese, grated
- 2.25 oz can sliced black olives, drained
Here’s what you’ll do:
Preheat oven to 350 degrees and coat 9×13 baking dish with non-stick spray.
Brown ground beef + onion in a large pan. Once browned, drain off the fat.
Add tomato sauce + wine + Italian seasoning + salt + black pepper. Stir and allow simmer while you prepare the other ingredients.
Cook egg noodles according to package directions. Drain and set aside.
In a bowl, combine sour cream + cottage cheese + 1 cup green onions (save the remaining 1/4 cup for topping) . Stir in cooked noodles. Add salt + pepper to taste.
To assemble: Add half of the noodle mixture to a baking dish. Top with half the meat mixture. Sprinkle on half of the cheese. Repeat with noodles + meat + final layer of cheese.
Top casserole with remaining 1/4 cup chopped green onions + sliced olives.
Bake for 20 minutes until cheese is melted.
Serve with crusty French bread + a green salad!
