{asian meatballs}

I need to come up with a new name for this recipe. It just sounds bad. Or is my mind in the gutter? Ha!

Friends – I tried a new air fryer recipe the other night. Annnddd, it was a hit! Bay and I both had it for dinner. Then lunch the next day. We loved it! I’m including oven direction with this recipe as well, since I’ve also made it back in the day before air fryers were a thing.

This recipe tastes so fresh + delicious. The best part – it’s healthy and totally Weight Watchers friendly. You guys, I’m back on the WW train. I’ve been tip toeing around the program for the last month and last week, I am BACK!

And right when I get back, the entire program changes. FML! Now you get 3 options. Say whhhattt? I’m currently using the old program, but I’m attending the Saturday meeting to get all the details. So I can decide which option works best for me. Stay tuned.

This is where I insert my Weight Watchers spiel…….

I wrote a post explaining the in’s & out’s of the program here: {weight watchers 1 week results}

I really, truly believe that Weight Watchers is an amazing program!

First off, I gotta give credit where it’s due. This recipe is adapted from my girl Gina at Skinny Taste. I mean, she’s not really “my girl” we’ve technically never met. But, I’ve been following her and making her recipes since FOR-EV-ERRR! So that makes us friends, right?

I am 100% in LOVE with my air fryer. I read all the reviews. I searched high and low for the very best one. All for my Mother’s Day Gift Guide. And Bay got if for me. To be 100% honest…..I’m not a big kitchen gadget person. So, I wasn’t sure I’d use it enough to justify owning one. I was 100% WRONG! I store my air fryer in the garage in the original box. I bust it out multiple times a week. It makes my life easy. Cook time. Clean up time. Healthy ass good. It’s a WIN WIN!

Add this to your Christmas List. Buy them for your parents. Friends. Family. They will love you forever! HA!

You guys – It’s legit $60 off right now. This is meant to be!

Here’s what you’ll need:

  • 1 pound lean ground turkey
  • 1/4 cup panko bread crumbs
  • 1/4 cup green onions, chopped (and some extra for toppings)
  • 1/4 cup cilantro, chopped
  • 1 garlic clove, minced
  • 1 tablespoon soy sauce (I use the low sodium)
  • 2 teaspoons sesame oil
  • 1 egg
  • salt + pepper

For the sauce:

  • 1/4 cup hoisin sauce
  • 1/4 cup orange juice (fresh is best)
  • 2 tablespoons soy sauce (low sodium)

Coconut Curry Sauce:

  • 1 tablespoon olive oil
  • ½ cup red bell pepper, sliced
  • ½ cup onion, sliced
  • 2 tablespoons red curry paste
  • 1 (13.5 oz) can unsweetened coconut milk
  • 1 tablespoon fish sauce
  • 2 tablespoons brown sugar
  • Cilantro, chopped

Here’s what you’ll do:

Preheat air fryer to 380 degrees. I set mine for 5 minutes. For oven: preheat the oven to 450 degrees

In a large bowl, combine all the meatball ingredients. Using your hands, gently mix until combined.

Roll into 12 – 14 meatballs.

Arrange a single layer of the meatballs in the air fryer basket. Spray with cooking spray. You will need to cook the meatballs in batches. My air fryer fit about 8 meatballs at a time. If using the oven, arrange the meatballs on a prepared baking sheet.

Cook for 10 minutes, flipping meatballs half way through. They will be nice and browned. For the oven, bakes for 18 minutes.

While the meatballs at cooking, prepare the sauce. In a small pan combine all the sauce ingredients. Bring to a boil over medium heat. Reduce heat and simmer over low until sauce has reduced and thickens up.

When ready to serve, dunk the meatballs in the sauce.

Serve over rice and top with sliced green onions. Sesame seeds would be a great addition as well.

For Coconut Curry Sauce:

Add olive oil + bell pepper + onion to a hot pan. Cook for 3 minutes.

Stir in red curry paste and allow to cook with veggies for 2 minutes.

Add coconut milk + fish sauce + brown sugar. Simmer on low.

Once meatballs are cooked, add them to the coconut curry sauce. Top with cilantro.

I love all the fresh herbs popping out of the meatballs. Fresh herbs just make me smile!

I served our asian meatballs over Trader Joe’s frozen brown rice with a side of steamed broccoli. So easy. So delish!

Remember, you can now print the recipe.  “Pin” to your Pinterest board for safe keeping.  If you decide to give it a shot, pretty please – tag me.  Text me.  I can’t wait to hear what you think!!  100% makes my day ♥
