Hello Monday!  After the weekend we had, I woke up refreshed and ready to take on the new week.  Last week almost, kinda, sorta killed me.  So, a relaxed couple of days in my most favorite place was exactly what the doctor ordered.

Intentions for the Week:

  • load up on H2O
  • use all the produce I’ve been gifted
  • face mask + mani night with Bay ♥
  • write out recipe for grilled steak with corn salad
  • 18k steps per day
  • finish up {things I’m loving} post
  • share what I’ve given up for 30 days
  • make grilled hasselback potatoes
  • pack + prep for camping trip
  • donate/sale 5 items from my closet
  • miracle grow all my plants
  • go through Bay’s jeans…she wont stop growing
  • continue being punctual AF

Highlights from the weekend…..

We began the weekend the best way, celebrating.   A little impromptu dinner.

I used to throw the most elaborate Birthday parties.  With ponies + Disney Princesses + giant bounce houses + Taylor Swift cover band + butterfly releases.  You name it!  For about 8 years.  Spent hundreds.  Invited anyone and everyone.  Now I tape homemade Happy Birthday banners that were made minutes before, to the wall.  But guess what?  Bay thought it was the coolest shit ever.  And it didn’t cost me a dime.  Crazy how things change and evolve over the years of being a parent.

We did, however, get the Timothy’s Bakery funfetti birthday cake.  This is one of our many birthday traditions that will never change.

They say you only get 18 summers with your kids. I call bullshit. I’m 36 and my mom still can’t shake me! Hard to see but we’re 9,100 feet in the air on the HeavenlyMountain gondola with the most beautiful view of Lake Tahoe behind us!

We decided to try something new to us.  We’ve always talked about going to the top of Heavenly, but just never do it.

Lot’s of time spent suspended in the sky with views like this.  It even stops sometimes.  Scary AF!

Good morning!  How was everyone’s weekend?  Were you ready for the Monday alarm clock?  I wanted to stay in my cozy bed, but I had an early morming walking date that I was looking forward to.  So up and at ’em it was!  This weekend I worked around the house.  Got lots of odds + ends organized.  Back to school season always gets in the organizing mood.  Anyone else?  Dinner with friends.  Biked the CCT, but don’t worry we’re going to talk all about that in a sec.  And celebrated a sweet 3 year olds Birthday last night.

Hope you all kick off Monday on the right foot!  Have a good one!!

 

Intentions for the Week:

  • Fair Hair.  Yep, you read it right haha. (Thanks Allison!!!)
  • Decide what I’ll give up for 30-days next?  Hmmm. (scared as hell to write it down)
  • 7th Grade Orientation.  Can Mom’s go? (Bay is ready for Wednesday)
  • Plan outfits for the week (we’re both set for Wednesday – Friday)
  • Dinner with girlfriends (good times, as always)
  • Soak up all the time with my girl before school starts (one last hurrah this weekend)
  • Order the cute top I’ve had my eye on 🙂 (done)
  • 15k steps a day (killed it, again)
  • Make salsa chicken (sharing this week)
  • YOLO COUNTY FAIR!!! (obvi!)

I’ve had the CCT on my to-do’s since last summer.  CCT: California Coastal Trail.

Upon completion, the 1,200 miles of coastal trails will span from the Oregon border all they way through California to Mexico.  How cool is that?

We chose to hit the 7 1/2 mile Half Moon Bay stretch from Pillar Point Harbor to The Ritz Carlton.

This trial is ideal for hiking + biking + walking + horse riding + dog + wheelchair + family friendly.  It’s all paved and very well maintained.

Beginning: Pillar Point Harbor.  The trail begins right in front of the parking lot.  You can rent bikes here too!  Bike Works + Half Moon Bay Kayak Co.

It’s Monday peeps!  Time to get back into the weekday groove.  We’ve spent the last 4 weekends on the go out-of-town.  Which we have throughly enjoyed the hell out of, but it sure makes Monday a little tougher.  Raise your hand if you’re ready to do this!!!

 

Intentions for the week:

  • Dry brush consistently for results – (I’m officially hooked!)
  • Continue doing BBG 3 days a week – (Loving this do it when you want workout program!!!  Even got Sarah P lovin it too!)
  • Create a new morning routine….I’m over mine – (Think I got my shit figured out…..wanna hear more about it?)
  • Find something cute to wear for Roots to Wine Twilight Picnic – (I found a dress, this one!)
  • Make a new recipe for the blog.  What sounds good peeps? – (Made a savory galette.  Caprese stuffed avocados.  Walnut balls.  New chocolate chip cookies)
  • Pick up a trifling jacket for Bay’s 1st English show – (holy shit, English riding is expensive, but we found a winner)
  • Remake + shoot my pesto recipe – (updating today)
  • Finish my 8 things I’m afraid to tell you post – (My highest ratings since the first time I posted my weight.  You guys really like my dirty little secrets…lol) 
  • Bay requested {mozzarella stuffed meatballs} so we’re gonna go ahead and do it – (still her fave)
  • Pool time – (Nothing like laying by a pool) 
  • Stay focused AF! – (√)

Highlights from the weekend…….

We spent the last few days in Ukiah for Cory’s family reunion.

First stop was fishing, always fishing.  This time in the same spot Cory grew up fishing.

Even Bay got in on the fun.  I was in white jeans + sandals…not really fishing attire.

Cory’s family rented the Yokayo Ranch.  This was our home for the weekend.  It housed, very comfortably about 40 people.

I can’t tell you how perfect this space was.  So lush + green.

Yokayo Ranch legit had it all.  The Main House (where we stayed) with 3 bedrooms.  A two-story bunk house.  2 cabanas with kitchenette and all.  All the amenities you could possibly want + need.

The houses are surrounded by lawn + covered patios + pool + hot tub + outdoor kitchen + big screen TV + fire pit + lawn games.  You name it.  Makes hosting for a large group such a breeze.

Considering the amount of people, it never felt crowded.

I’d say Yokayo Ranch definitely exceed everyone’s expectations.

{lemon spaghetti}

I like carbs and I cannot lie!  The way I see it, God invented carbs for a reason!  #yolo

This isn’t your typical meat sauce + noodles.  It’s light and refreshing.

It’s an unexpected combo that works so so well together!  Perfect for a summer side dish.  I typically have all the ingredients on hand too!

A couple of thing before we get started.  “Good” olive oil is KEY!  It’s one of the main ingredients on this dish.  I bet you already know what I’m going to say, huh?  Seka Hills Olive Oil is the #1 in my book.  I don’t even mess with the store-bought stuff anymore.

You guys, Seka Hills invited me out for a farm tour a few weeks ago.  I’m still blown away.  Over 17,000 acres!  Different olive varieties.  Grapes #wineo  Almond trees.  Honey (bay’s fave) Asparagus, which I have a new-found respect for.  Not that I didn’t love it before, but did you know asparagus has to be harvested daily?  By hand!  It’s a labor of love, my friends!

Did you know they grow all the produce that is distributed to wine club members?  I figured they sourced it out.  Nope!  This photo below is where they grow the produce we get!  Just another plus!

And can we talk about the fact they now have Beef Club, I might need to get in on that one.

But the olive trees, they are beyond impressive.  Seka just released a new variety of Olive Oil.  It’s called the Tribal Blend.  It’s a unique blend of estate Frantoio + Picual + Arbequina.  The results are a medium to robust intensity.  It’s different.  More bold.

This week, I cracked open my second bottle of the Tribal Blend EVOO!  And It’s what I used in this Lemon Spaghetti recipe!!

Basically, I’m obsessed with it.

{10 summer closet staples}

I love the simplicity of Summer clothing.  Summer attire is so basic + minimal compared to other seasons which involve lots of layers + footwear.  With a few basic pieces, you can mix and match your closet with endless options!

So, today I thought I’d share some of my tried + true summer closet staples.

You know, ALL THE THINGS I believe every girls needs!  And things that can be worn over and over throughout the Summer!

But, before we get started – Let’s chat about the Nordstrom Anniversary Sale.  If you follow fashion bloggers on Instagram, then you’ve already been overloaded with so much info.  So, I’ll spare you the overwhelming shit and keep it simple with 3 quick tips to help you navigate the sale, if you’re into it!

  1. Shop early!  Meaning, you must become a Nordstrom Card Holder!!!  This will grant you “Early Access!”  As in 8 days before the public aka non card holders.  You get a $40 credit upon approval and lots of perks year round too!  Typically, once the Anniversary Sale opens to the public on the 20th, sizes + colors + top items are sold out or wayy picked over.  So, if there is something you HAVE TO HAVE, this is the way to insure you get your pretty little hands on it!
  2. Add to Cart!  You can preview the sale here: 2018 Anniversary Sale – Preview.  This is not everything that will be on sale, this is just a sample.  I like to do a closet clean-out and toss/sale everything I know for a fact that I will not be wearing come Fall.  Reminder – the Anni sale is mainly Fall New Arrivals.  Stick everything you LOVE in your shopping cart! And patiently wait.  The worst part!
  3. Shop online!  Grab a cup of coffee and sit down with your computer Thursday morning.  Don’t even think of messing with the crowds.  If you want it – BUY IT!  You can always return, but you legit gotta act fast.  Nordy’s offers FREE shipping + FREE returns.  Their website it super user-friendly.  OR you can always buy online and do an in-store pick-up.  Technically you don’t even have to get out of your car.  They will bring it out to you!

With these tips, you should be ready to shop till you drop!  Set your alarms for Thursday morning friends!!

Welcome Monday!  With open arms.  I can’t even remember the last time those words came out of my mouth….or in this case, typed on my keyboard.  It’s amazing what a relaxing weekend PLUS a goodnight sleep does for the soul.  Woke up ready to kick this weeks ass!  Even got some early morning steps, which hasn’t happened in far too long.  Monday’s are for fresh starts and I’m all about it today!  Just hope I feel the same way tomorrow 🙂

 

Intentions for the week:

  • Keep Bay entertained – (pool dates + sleepovers + riding) 
  • Celebrate Alex’s birthday with all the homegirls ♥ – (good times as always)
  • Get 15,000 steps per day – (did it…got a workout in every weekday…this is a big deal) 
  • Homemade ice cream – (did anyone try the Circus Animal Cookie Ice Cream?)
  • Clean the back patio – (it makes me crazy happy)
  • Get blonde again – (Allison straight up KILLED it) 
  • Air dry hair 3x this week – (been rockin a fro)
  • Taco Tuesday date with Bay – (tacos + convos were so good)
  • Library for new reads – (Magnolia Table + True Roots + Gray Malin…not really reading material though) 
  • Celebrity Golf Tournament – (whoop whoop)
  • Walk the arboretum on my lunch break – (Too damn hot for that shit)

Getting in a beach on the 4th has become a little tricky.  We got it all figured out this year though.

Load up all the bikes.  Drive down early to get a parking spot.  Ride the bikes back to the Cabin.

Then we ride back and forth all day.  Luckily our cabin is fairly close and there is a nice bike trail.

A lot of woke, no doubt.  But 100% worth it!

Happy Friday friends!  Hope you all had a great 4th of July!!  And have a fun weekend planned.  I’m headed back to Tahoe to finish celebrating.  This whole Wednesday Holiday business is for the birds.

First, I’ve got 5 things on my mind…….

 

ONE – Mom’s Famous Chicken Tortilla Casserole // You guys are gonna want to “pin” print or save this one.  It’s one of my Mom’s (many) famous recipes.  My sis requests it for her Birthday dinner every year.  We have it every family pumpkin carving night.  Bay made it just a couple of weeks ago for Father’s Day.  And I realized, I’ve never shared this keeper with you guys.  It’s easy + delish!  Make it this weekend for your troops 🙂

* This recipe is best if you make it the night before or morning of.

Here’s what you’ll need:

  • 4 boneless skinless chicken breasts cooked + shredded (or rotisserie)
  • 12 corn tortillas (taco size), cut into 1 inch pieces
  • 1 cup red onion, chopped
  • 1 can Cream of chicken soup
  • 1 can Cream of mushroom soup
  • 1 can Chili con carne (no beans)
  • 1 small can green salsa
  • 1/2 cup chicken broth
  • 1 cup cheddar cheese, shredded
  • 1 can sliced black olives
  • Green onion, chopped

 

Here’s what you’ll do:

Preheat oven to 350 degrees.  Spray a 9×13 baking dish with non-stick spray.

In a large bowl mix together chicken + tortillas + red onion + soups + chili + green salsa + chicken broth.

Pour mixture into prepared baking dish.

Top with shredded cheese + olives.

Bake 1 hour.

Top with green onions + serve 🙂

It’s one of those feel good meals that instantly remind me of my childhood.  I think we’ve all got one of those, right?

 

TWO – Beach Tote // I’ve had my eye on these net tote bags for a while now.  Picked one up at Urban Outfitters last week to see what all the jazz was about.  And of course, I fell it love with it.  I found some even cheaper on Amazon and I’m going to upgrade all my re-usable grocery bags with them.  They are super stretchy so they fit wayyy more than you think.  Washable…which is key!  My old bag has seen better days.  The Kate Net Tote comes in 6 other color options too.  Thinking I may need to scoop up a pink one next.

THREE – ACV drink // You all know by now that I’m a huge Bragg Apple Cider Vinegar fan.  I drink a shot of that shit every.single.morning.  I promise with time, it really does get easier.  Honestly, I don’t mind it at all.  I spotted the new “drink” on the shelves last week.  And different varieties too.  I grabbed the Ginger Spice.  They also have Honey, Apple Cinnamon, Grape, Limeade, Pomegranate and Sweet Stevia.  It’s about $3 for a glass about the size of a Gatorade.  I saved it for my afternoon snack.  Drank 1/2 the bottle each day.  Then went and bought more.  It’s good!  Click below for more info:

{4th of july tee’s + local firework shows}

4th of July is one of my all time favorite Holidays!!  All the traditions that come with it are so fun!

We’ll be celebrating Independence day in Tahoe.  Every year our family gathers at the cabin for the long weekend.  Other than lounging at the beach everyday + watching the fireworks from Pope Beach, we really don’t have any other plans.  Which is crazy exciting.  I love anything + everything red, white + blue so I foresee some festive decor + crafts + yummy treats to celebrate!   And since the 4th falls on a Wednesday……you’ll need to rock red, white + blue Wednesday, Thursday, Friday, Saturday + Sunday, right?  At least I know I will be!!

I find red white + blue ALL year-long and think to myself “this would be sooo cute for the 4th!”

So, it’s safe to say, I’ve got a collection 🙂

Good morning!  To be completely honest, I cannot believe it’s already Monday.  I spent the last couple of days in Tahoe and it’s like I blinked and boom, the weekend was GONE!  Not a fan of a Holiday landing on a Wednesday.  Do you celebrate all week?  Last weekend?  Or next weekend?  I say we just celebrate all July?  What do you say?  I get lots of questions about where to eat.  Where to hike.  The best beaches in Tahoe.  I’m thinking of doing a South Lake Tahoe blog post.  Is that something you’d be into?  Leave a comment and let me know : )

Friday night, date night //

I’ve been wanting to check out the Revival at the new Sawyer Hotel in Sac.  But, if you’re a male, you cannot wear flip-flops.  At a bar that has a pool?  Hmmmm!  Doesn’t make much sense to me.  Since Cory, (and I’m sure 90% of males on a 100 degree day) were also wearing flip-flops, we were turned away.  Question, are guys encouraged to rock dress shoes + shorts?  End of rant!

So we checked out Punch Bowl Social again.

We get together for drinks + a catch up sesh.  Stover even shopped my closet for her outfit 🙂  Missing some homies, but always a good time.  The three of us here, we’ve been friends for over 20 years.  Crazy!  We can reminisce about the good old days all night long!

We ended up making ourselves at home at the brewery, once we found out there was an active shooter in our neighborhood.  SWAT + police EVERYWHERE!  Right up the street from our cabin.  Luckily it didn’t go on all night.  They finally got the bastard and we were able to go home.  Definitely makes for an interesting night!
