{pf chang’s lettuce wraps}

Happy Hump Day friends! I’m trying my best to be peppy AF, but to be honest – I’m not feeling it. Politics. Coronavirus. Nashville. It’s just kinda sad, you know what I mean? And I gave up beer + wine, so I can’t even self medicate (my favorite way) at the end of the day.

Since I don’t have much to say – let’s keep it short + sweet! How about a bomb ass recipe?

Believe it or not, I’ve only been to PF Chang’s twice….in my whole life. And it’s been at least 10 years since I’ve stepped foot into the restaurant. I have NO clue why we never go? When I hear PF Chang’s – the first thing I think of is their lettuce wraps. How about you? They had some kind of avocado spring rolls or something like that too.

But, I will never forget the lettuce wraps. Never!

And something randomly made me think of these lettuce wraps last week.

So, I set out to come up with a healthy version that my peeps would love.

Made them last night – and I got 2 thumbs up from Cory + Bay. Which is a BIG deal!

{pf chang’s lettuce wraps}

Here’s what you’ll need:

  • 1 pound ground turkey
  • 1 clove garlic, minced
  • 1 onion, chopped
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon white vinegar
  • 1 tablespoon hot sauce
  • 1 (8 oz. can) whole water chestnuts, diced
  • 1/2 cup green onions, chopped
  • salt + pepper
  • 1 head little gems or butter lettuce
  • option toppings: sesame seeds + sliced avocado + green onion

Here’s what you’ll do:

Cook turkey until browned

Stir in garlic + onion + hoisin sauce + soy sauce + white vinegar + hot sauce. Simmer for 5 minutes.

Stir in chestnuts + green onions and season with salt and pepper. Cook for a couple minutes.

Spoon 2-3 tablespoons of turkey mixture into the center of a lettuce leaf. Add toppings + ENJOY!

Bailey skipped the lettuce and had her turkey right over brown rice. I served the wraps along side roasted carrots. So good. So easy!
