This weather has been giving me all the Fall feels. I’ve been wearing all my new sweaters + long sleeve tops. Decorating the house for the season. Buying anything + everything pumpkiny from Trader Joe’s. And pulling out some of my most fave recipes from the archives.

Some of them are so good and I almost forgot about them. I tend to try something New to make each week for the blog. I need to start busting out some of these oldies and throwing them into the rotation more often. Incase you’re new here. I’ve complied a few really, really good ones below for you!

I made this Mississippi Pot Roast last week. I posted a poll in my Instagram stories and it was about 50/50 that have made this before. The 50% that hadn’t requested I share this one STAT! So, here ya go!

A simple hearty dinner. And the best part – your slow cooker does all the work for you!

Set it. Forget it. Go about your day. Then you get home and think….dayummmm. Smells like someones been slaving away in the kitchen all day! This is a crowd pleaser. When I made something that Bay + Cory both agree they dig, it’s a frickin victory!

And a recipe I know is worthy of sharing here on the blog 🙂

With minimal ingredient. Super easy to make. Family friendly. I promise you’ll make this one more than once!

{mississippi pot roast}

  • Servings: 6
  • Difficulty: easy

{mississippi pot roast}

Here’s what you’ll need:

  • 3-5 lb. chuck roast
  • 1 packet au jus gravy mix
  • 1 packet dry ranch dressing mix
  • 10 whole pepperoncini peppers
  • 1/2 stick butter, cut into slices

Here’s what you’ll do:

Place the roast in the slow cooker.

Sprinkle roast with au jus + ranch packets. Top with peppers + butter.

Set slow cooker to low for 8 hours.

When ready to serve, remove the roast + peppers. Shred with two forks.

Whisk all the remaining juices in the slow cooker and pour over the shredded roast.

Serve over mashed potatoes and your families fave veggie!

Hands down the easiest and most delicious dinner. We had tons of leftovers too. I used them throughout the week over salads. In crunch wraps, obvi. Made quesadillas for Bay. So much yummm!
