Fri-YAY! Hallelujah! It’s been a week. Sorry for the lack of posting here. I had the best intentions, but just couldn’t make it happen. No Friday 5 today. I couldn’t think of 5 things if you paid me. So let’s switch it up…..Since I did promise these pumpkin donut holes.

And tomorrow is Saturday, which would be the perfect time to whip up a batch of these bad boys.

Crazy easy recipe. Baked, not fried. Pumpkiny….tis the season, right?

You do need a mini muffin pan. I picked one up at Walmart for $6.

WARNING: they are so dangerous, so make sure you make them when your peeps are awake. I made the mistake of making a batch last weekend. When I was alone. BAD idea.

pumpkin donut holes

Here’s what you’ll need:

  • 1 1/4 cup pumpkin puree
  • 3/4 cup brown sugar
  • 18 tablespoons butter, softened + divided
  • 2 eggs
  • 3 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 4 teaspoons cinnamon, divided
  • 1/2 teaspoon nutmeg
  • 1/3 cup milk
  • 3/4 cup sugar

Here’s what you’ll do:

Preheat oven to 350 degrees and grease a mini muffin pan.

Using a mixer, beat together 10 tablespoons butter + brown sugar for 2 minutes.

Add pumpkin puree + eggs and mix well.

In a separate bowl, combine flour + baking powder + baking soda + salt + 1 1/2 teaspoons cinnamon + nutmeg.

Slowly add dry ingredients and mix on low speed.  Then add milk.

Using a cookie scoop or spoon, place 1 tablespoon size of batter into mini muffin tin.

Bake for 12 minutes.

Allow to cool on a wire rack.

Melt butter in a bowl.  Place sugar and remaining 2 1/2 teaspoons cinnamon in a shallow bowl.

Dunk donut holes in butter then roll in cinnamon + sugar.

Now the tricky part, don’t pound 10 of them before you’ve finished coating the donut holes 🙂

And since we’re on the mug subject.  This is also a great time to pick up a gift for a girlfriend.  Neighbor.  Teacher.  Hostess.  The Holidays are right around the corner and these are perfect for gift giving.  I love to stick a paperwhite bulb in the mug when gifting.  It’s so pretty once it blooms.  Fill it with candy.  Baked goods.  You name it, you really can’t go wrong.
