{pumpkin muffins}

Today marks the first day of Fall.

crisp air

pumpkins

sweaters

leaves

baking

boots

These are a few of my favorite fall things.

I feel like I’m the only person in the world that hates PSL (pumpkin spice latte).  It tastes like a big cup of sweet cloves if you ask me.  But, I do love pumpkin.  Pumpkin pie…yummm.  Pumpkin cookies….yummm.  Pumpkin muffins.  Yes please.  The season changing has me wanting to bake like a mo-fo.  How about you?  I have about 27 recipes that I can’t wait to try.  First up….

These deliciously moist pumpkin muffins will make you incredibly happy.  Promise!

Here’s what you’ll need:

  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 cup pumpkin puree
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 teaspoon pumpkin pie spice
  • 1 1/4 cups sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

for the topping:

  • 1 tablespoon sugar
  • 1 teaspoon cinnamon

 

Preheat oven to 350 degrees.

Line your muffin pan tin with cupcake liners and spray each liner with nonstick spray.

In a medium bowl sift together the flour + baking powder.  Set aside.

In a large bowl whisk together the pumpkin + oil + eggs + spice + sugar + baking soda + salt.  Whisk until smooth.

Stir in flour mixture until combined.  Try not to over-mix.

Divide the batter evenly among the prepared muffin cups.  I got 10 full muffins.

(Mainly because the batter was so damn good I probably ate about a muffins worth…Oops)

Mix topping ingredients in a small bowl.  Sprinkle topping mixture over muffins.

Bake 25 minutes or until toothpick inserted into the center of a muffin comes out clean.

These pumpkin muffins are yummy and perfect for a quick breakfast.  I pop them in the microwave for 15 seconds and enjoy with a cup of coffee.

Iced with fattening, gloopy cream cheese frosting for dessert.  OMG, doesn’t that sound heavenly?  I may try this tonight 🙂

 

** Please, Please, Please do not add raisins or nuts!  You will fuck it up!  Like big time!  These pillowy, soft, fluffy ultra comforting muffin goodness does not need any add-ins!  Just trust me on this on.  K?  K!!!
