Hey Monday!  Anyone else think the Monday after Super Bowl should be a holiday?  Because, hot damn, I’m tired.  And I was in bed by 8pm.  Technically I didn’t really even watch the Super Bowl.  Really, I was just there for the food + booze + commercials.  I bought a shit-ton of pool squares and didn’t win a dime.  Typical.  Our weekend was everything I’d hoped it would be.  Chill AF.  But, I still accomplished all the things too.

 

Intentions for the Week:

  • sign making class with Emily Murphy Designs
  • work on photo editing the night before
  • go through Bay’s closet #growthspurt AGAIN!
  • donate + sale all everything before the weekend
  • wash my car inside + out

Highlights from the weekend……

We started the weekend off with face mask night.  Minus Kissey (she was sick) so we’ll have to do it again soon.  My Mom had never done a face mask before so we treated her.  I tried to get her to let me shave her lips too, but it was a no go.  Maybe next time.

Hey girl hey!  It’s Friday!  I died when I woke up and looked at yesterday’s blog stats.  Over 260 clicks from Facebook alone.  Lot’s of WTF messages.  Many of you guessed arms.  And no Alex, I did not shave my Brittany…this time.  Thanks for reading.  And if you do shave your lips….let me know what you think.  I guarantee you’ll be hooked.  I tried to convince my mom to let me do hers last night…and she wasn’t having it.

Weekend plans: kickin’ it hard.  We have a plan free weekend.  Waiting on that storm to hit.  Sleeping in.  Cooking.  Extra cups of French press coffee.  Working on Bay’s closet.  You guys, she keeps growing.  That means NOTHING fits, again.  I’m sure Bay will work her magic and get me to take her somewhere?  Who knows.  And Super Bowl Sunday.  Anyone else NOT watching football this weekend?  Half time show and I’m good!

{stuffed bell peppers}

Busting this one out of the vault.  I’ve probably made this recipe 50 times.  Okay, maybe not 50, but you know what I mean.  Used to whip up these stuffed bell peppers all the time.  Then stopped.  Kinda forgot about them, to be completely honest.

Then last week GG (my grandma) requested them.  I did ask her if she had a request….and she didn’t think twice.  You see, I used to make these stuffed peppers for her back in the day too.  We all pretty much forgot about them.

Anyone else love a healthy meal in individual proportions?

I don’t know why it’s so pleasing to me…lol.

Usually I grab green peppers, because I’m cheap AF!  And they’re always a fraction of the price compared to the pretty orange, yellow and red peppers.  Pedrick Produce had bags of 6 peppers (pretty ones) for $2.00 each last week.  SCORE!!!

And I have to admit, they look so much prettier.  Pretty food matters…lol.

Happy Monday friends!  Hope you all enjoyed that sunshine over the weekend.  Yesterday was absolutely gorgeous.  Made me so ready for Spring.  January is like the longgessttt month ever…and we’re in the final week.  I’m looking forward to flipping my calendar to February and a fresh start on a new month.  One with less pressure.  Less shit to do…..Kinda.  Amway, hope your Monday is off to a good start.  I’m getting my hair done today, which always puts a smile on my face!

{healthy-ish chicken salad}

Hallelujah….kids are FINALLY back in school.  Insert happy dance!  Doesn’t if feel like they’ve been on break for an eternity?  Bay’s been sleeping till about 10 am each day, so to my surprise, I heard her alarm go off at 5:45 am.  And she actually got up…ha!  She set her alarm extra early so she could curl her hair.  Remember when she got the Conair Infiniti Pro Curl SecretBay can curl all her hair all on her own.  And I don’t have to worry about her burning herself or our house down.  Coolest curling tool for kids.

What I’m really here to talk about today is my Healthy-ish Chicken Salad recipe though.  Now that Bay’s back in school and we’re back to our regular routine, I’m ready to tackle the new year.  Even though it’s day #8 and not day #1.  Better late than never, right?

I meal prepped like a boss over the weekend.  Chicken Fajita Bowls.  Chili Lime Walnuts.  Washed + chopped all our veggies for the week.  Hard boiled eggs.  Made dressings + sauces.  And lastly, this Chicken Salad.

My Mom tried it for lunch yesterday and gave it two thumbs up!  Whoop Whoop!

The walnuts give it the best texture and crunch.  I wouldn’t ever ruin a recipe by adding fruit, but I’m sure you fruit lovers out there would dig grapes in this?  Sounds disgusting to me though. HA!  I added a grainy Dijon mustard and some white vinegar.  I’m telling your, it’s really good.

{new years eve cioppino}

2019 is officially right around the damn corner.  4 days and counting 🎊

Did you know that fish is believed to be a “lucky” food to eat on New Year’s Eve? Fish scales resemble coins. And fish swim in schools.  Which invoke the idea of abundance.

So, if you too, are banking on 2019 being your year of health + wealth…I suggest you eat a shit-ton of seafood on December 31st, like myself.

Cory whipped up a cioppino the other night (I was his trusty sous chef) and it knocked our socks off.  It’s a little hoity-toity for a weeknight dinner.  So save this one for a weekend where you’ve got a table full of your favorite peeps ❤️

Cioppino is a seafood stew originating from the good ol City by The Bay, San Francisco.  It’s an Italian-American dish using a sauce consisting of tomatoes + wine + loads of spices.

Served along side warm crusty bread for sopping up all the delicious broth.

Although cioppino is impressive in appearance, it’s a fairly simple recipe to execute.

Pour yourself a big glass of wine.  Pull out the biggest stock pot you own.  And get to making THE best pot of fisherman’s stew.

One week left till Christmas.   Are you one of those freaks that’s all ready?  Haha…I used to be one of those freaks, till this year.  Or are you like me, and still searching for the perfect gift for the peeps on your list?  I’m getting there….slowly.  I’m hosting our girls Hand + Foot card night, which I came to realize was a blessing in disguise.  It really lit the fire under my ass.  I finally set our table.  Finished decorating for Christmas.  Hosting makes you do all the things you’ve been putting off.  So, I really have my card girls to thank for getting me a little more into the Holiday spirit.

 

Intentions for the Week:

  • get all my wrapping done
  • host hand + foot cards night
  • make a shaved brussels sprouts cesar salad
  • take Bay to see Mary Poppins
  • ornament exchange with girlfriends
  • get blonde AF
  • share a simple everyday centerpiece
  • stocking stuffer gift guide
  • drive around town to look at Christmas lights
  • slow the fuck down!

 

Highlights from the weekend……

Friday evening Bay + I got fresh mani’s.  Then got Bay ready for her first middle school formal.

And off she went.  With a full face of makeup…..Looking like a 15-year-old.

While Bay was whoopin it up at the dance, I went home.  Got in my Pj’s.  Poured a big glass of wine.  And made my {asian turkey + green beans}

I have been in a weird cooking frenzy.

Lori Carrion’s Spiced Nuts were made first thing Saturday morning.  This a great recipe for gifting.  Pour some in a cellophane bag and stick in an initial mug.  Or gift them on their own…so good.

and breakfast sandwiches.  I picked up hash brown patties, like McDonald’s.  Yumm.  I baked them and they turned out so good.  Just a little carb loading before we headed to the city.

There’s a million other things we should have been doing Saturday, but instead we ditched ALLLL responsibility and went to the city.  Best decision!

I gave Bay the option of going or staying home….and I was so happy she chose to come with us.  I know one day we’re not going to be fun anymore, so I’m soaking up all these fun day trips.

It was a gorgeous day in the city too.  We got to mark everything off our list to do + see.

Cory and I have been stopping here from the beginning.  I can’t tell you how many strawberry fields we’ve consumed over the years…lol.

So we took Bay to our old stomping grounds.  Back on our “kids free” weekends.  The outdoor area is so prefect.  If you’re planning on making a trip to SF, add this spot to your list.

The Fairmont is our favorite.

Last February we stayed at the Fairmont for the weekend. {weekend notes} It’s fucking magical.  The best customer service.  The hotel is gorgeous.  And the flags, I just love all the flags at the entrance.

We make a Fairmont stop each Holiday season to take a peek at the giant life-size gingerbread house.  It’s a tradition.  And I was so happy that Bay was still totally down for it.

You can walk though it.  And it legit smells like gingerbread.

Fairmont San Francisco’s talented culinary and engineering teams have joined forces to meticulously plan construction of this year’s enormous Gingerbread House, which will be even larger than last year’s stunning, two-story-high Victorian! Once complete, the impressive, edible abode will stand more than 25 feet high, 35 feet wide and 10.5 feet deep and will feature more than 6,000 house-made gingerbread bricks (largest bricks to date), 1,650 pounds of candy and 3,300 pounds of royal icing. The gingerbread house’s railroad track also delights guests of all ages, who happily gaze upon this favorite feature.

The Top of the Mark

What you didn’t see in my stories, was that we waited in line for 30 minutes at the Mark Hopkin to get up to the 19th floor, Top of the Mark.

Worth it!  Bay and I have been, Cory had not.  The penthouse lounge provides 360 degree panoramic views of the city.  It’s hard to tell, but to the right of my wine glass is the Golden Gate Bridge.  Right outside the window from our table.  Perfect place for a happy hour drink + Shirley temple + snack.  They open at 4:30pm, so you get to watch the sunset!

{turkey + loaded veggie chili}

Anyone else straight up craving all the greens + veggies?  After over indulging (in every way possible) last week, I’m so ready to get back on track.  I was a no limit solider.  All the desserts.  All the leftovers.  All the wine.  I even stole some cookie dough Bay was hiding in the fridge.  Shhhh!  I won’t even dare step on the scale for a while…lol.  But, I was living my best life #YOLO

Now I’m like, Bring on the soups + salads!  STAT!

This chili is healthy + hearty + comforting.  Loaded with veggies.

Oh and I didn’t mentions, this chili is ready in under 30 minutes!  Makes lots of leftovers.  I love to serve it over baked potatoes or sweet potatoes day two.  I’ve been known to make a pretty mean chili dog with this recipe too!

The veggie chopping is the most time-consuming.  I typically do all my chopping the night before.  And I swear by this Vidalia Chop Wizard

I use this for everything.  I’m kinda of a freak and I really, really dig all my veggies to be uniform in soups.  Ha!  I can’t believe I just admitted that.  It’s super easy + dishwasher safe….whoop whoop!

I used to call this the Weight Watchers Chili 1 Point Chili.  Did I ever tell you guys I used to be a Weight Watcher?  I lost 20 lbs using the program when Bay was 6 months old.  Even became a lifetime member!

Anyway, they change the points program so often that I can’t keep up of this recipe still falls under the 1 point per serving range.

Top it with some sour cream + shredded cheese and your kids will never know it’s basically a veggie soup.

{thanksgiving kids table // graham cracker crust pumpkin pie}

My dining room table isn’t large enough accommodate the whole fam-bam.  Someday when I grow up (I say this all the time..Ha) I’ll have a table that can seat an army!  Until then, we shall set up the kids table.

Not just a boring kids table though.  A fun + entertaining table is key.  They stay busy = you get to enjoy your wine + pie with a little peace…HA!  Love them to death, but let’s be real.

I’m also sharing my graham cracker crust pumpkin pie.  Which I’m really sad to announce…I can’t take the credit for inventing.  Bobby Flay patented it about 8 fucking years ago.  What the hell.  As soon as you think you’re onto something BOMB.  Google it and it’s already been done!

Which isn’t always the worst thing.  I honestly had NO idea how long to bake.  So I followed Bobby’s baking directions, which gave me the perfectly set pies!

And how about this kids table.  The activity table-cloth is so perfect.  And the leaves.  My Mom collected each one of them at Casini Ranch while camping last weekend.  They have the most gorgeous trees that were dropping these giant leaves.  Thanks Mom!

I kept it simple using everything I had on-hand.  Including the used to be white mini pumpkins that are now yellow-ish.  I did buy them in September, so I should stop bitching.  Coloring crayons…we’ve all got some lying around.  Poured some Trader Joe’s chocolate covered sunflower seeds…mainly for the color factor.  But, for snacking too!

This color on activity tablecloth is from the one, the only….Target.  There is a word search for the older kids.  A pumpkin + turkey maze.  Even a spot to write what they are Thankful for!  Love it so much.  It completed the kids table.

Here are some of the recipes we will be enjoying for Turkey day tomorrow:

Cory has our Branigan’s Turkey in brine as I type.  He’s on turkey duty and will be cooking it in an air fryer.  I’ll be sure to snap some pictures tomorrow.

Pioneer Women Creamy Mashed Potatoes the main attraction, if you ask me!

I’ve been making these Stuffing Balls for years. I found the recipe in one of the old Kraft Magazines that used to come out monthly.  Do they still do that?  I sub the ground pork for good ol Jimmy Dean sausage.

My Mom will always be in charge of the gravy.  It’s the one thing that I just can’t get down with on the Thanksgiving menu.  Honestly I can’t even make it without wanting to gag.  Bay’s the same.

Her Pretzel Jello Salad (similar to this one) is probably our “weirdest” side.  Poop-A-Doop, my late Grandfather LOVED this salad.  Really, it’s not even a salad.  It’s a layer of pretzels + sugar + butter.  With a cream cheese center and strawberries + jello on top.  So random, so good!

Kissey will forever bring her favorite side, Campbell’s Classic Green Bean Casserole. She makes it the BEST!!!

Along with canned cranberry (the only way to serve it).  With lots of cans of whole olives to stick on our fingers.

Mom makes homemade rolls that are to die for too!

And for dessert, my Mom is trying a new recipe for mini pecan pies and I’ll be serving my, I mean Bobby Flay’s Graham Cracker Crust Pumpkin Pie (recipe below) with homemade whipped cream (made by Bay)
