And now for the easiest clam chowder recipe on earth. My mom has been making this for years. And it’s like a bowl of comfort. You know what I mean?
It’s legit 20 minutes + ready to serve. Pile on some toppings to make this soup fancy AF! Here I added fresh crab + crumbled bacon. GAME CHANGER! But, you don’t have to do that to have a bomb bowl of soup.
{easy clam chowder
Here’s what you’ll need:
- 1/2 lb bacon (about 8 slices), chopped
- 1 yellow onion, chopped
- 1 cup celery, chopped
- 1 clove garlic, minced
- 1/4 cup butter
- 1/4 cup flour
- 1 1/2 cups half + half
- 8 oz. bottle clam juice
- 32 oz. bag diced frozen hash browns
- 2 (6.5 oz.) cans chopped clams
- salt + pepper
Here’s what you’ll do:
In a large pot, cook bacon till brown + crispy. Drain all but about 1 tablespoon of fat.
To the pot, add onion + celery + garlic. Cook for about 2 minutes.
Melt butter then stir in flour. Whisk until flour is lightly browned. About 1-2 minutes.
Gradually whisk in the half + half. Allow to come to a simmer + thicken.
Stir in clam juice + hash browns. Add water till potatoes are submerged. Bring to a boil, then reduce + simmer for 15 minutes.
Once potatoes are softened, add chopped clams with the juice. Then season with salt + pepper.
When ready to serve, pile on all your favorite toppings. I love oyster crackers + hot sauce + parsley. When I’m feeling fancy we add fresh crab + bacon. You really can’t go wrong with any toppings.
ENJOY!
