{breakfast croissant strata}

Nothing screams HOLIDAYS more than a breakfast casserole. We grew up on Christmas morning breakfast casserole. My Mom still makes the exact same breakfast to this very day. The nostalgia, ya know?

Well, I picked up the Half Baked Harvest new cookbook Super Simple. Flipped through it for a bit and stumbled on the most beautiful image. A breakfast casserole. With a more sophisticated name: Buttery Croissant Strata. I may have drooled.

Buttery croissants. Melty cheese. Crispy prosciutto. All baked to a warm goodness.

We’re officially off to the Oregon coast for a little vacay. Packed up all my fall clothes and sofa king excited to bundle up by the ocean. I snagged this $20 AC/DC sweatshirt from target this week and currently wearing it as I type. It’s so cozy. Stole bays new Reebok sneaks and I have to admit, they are way cuter than I thought.

Anyway, My goal was to have a blog post up everyday this week with one being a new recipe. So, here we go.

Another day, another sheet pan meal. You know one dish dinners are my jam. This one is perfect for the season. It screams fall.

Wish the weather was on track with my comfort food cravings lately.  The season changed, but the California weather – not so much.

{sheet pan salmon}

You guys – I wrote in my Intentions for the week to share a recipe. And here ya go. Holding myself to it. Last night I made my famous (not really lol) {sheet pan sausage + veggies}. I’m a BIG fan of sheet pan meals.

The clean up is key for week nights. And they’re typically pretty healthy recipes….protein + veggies.

Did I mention, I no longer have a dishwasher? I AM the dishwasher. Ha! Our little old 1950’s house has no dishwasher. We plan to do a kitchen renovation in about 6 months….fingers crossed. And a dishwasher is at the tip-pity top of my “must have” list.

I was always one to store my dirty dishes in the dishwasher. Until it was full, then run it. Anyone else?

And I made my sheet pan sausage + veggies last night, it reminded me of this salmon dish I made a few weeks ago. I snapped photos and planned to share it the next day. Then I probably decided to blog about Target or something.

{copycat starbucks egg bites}

You guys, I hate to say it, but can 2020 get any worse? I take that back. Yes, yes it can. Everyday it’s something new + different. Not good stuff either. My heart breaks for all the fire victims.

I did see, possibly, the best covid new to date. Holy Rosary is doing a drive-thru fair taco fundraiser. I might camp out the night before. Anyone wanna join me? Save the dates 8/29 – 8/30. Holy Rosary Community Center on California Street. I’ll see you there!

On my weekly intentions, I’m going to add: Share a recipe. I miss sharing writing up yummy recipes. Then seeing you guys recreate them in your kitchen. So, I’m going to be better at it.

Anyone else is obsessed with the Starbucks egg bites? They are such a great healthy + quick option for breakfast. And I’ve found a way to make them very similarly but with your oven at home! No fancy equipment needed, just a little water bath and a muffin tray.

{lazy lasagna}

What’s for din, friends? I haven’t posted a recipe is a bit. And since this one has been highly requested since I gave a sneak peek on Instagram stories, I thought today was a good day!

The absolute easiest lasagna recipe to date! Layered up with the most delicious flavors + so incredibly cozy and comforting. Even when it’s 100 degrees out!

This recipe is old school. I think the very first time I ever had lazy lasagna was when my grandpa’s wife, Lois, make it for a holiday? It was honestly yearrrsss ago. Just like traditional lasagna, there are so many ways to sneak in veggies. Make it a little lighter. You can really add anything you like and it will still be amazing. Almost anything.
