
You guys – I wrote in my Intentions for the week to share a recipe. And here ya go. Holding myself to it. Last night I made my famous (not really lol) {sheet pan sausage + veggies}. I’m a BIG fan of sheet pan meals.
The clean up is key for week nights. And they’re typically pretty healthy recipes….protein + veggies.
Did I mention, I no longer have a dishwasher? I AM the dishwasher. Ha! Our little old 1950’s house has no dishwasher. We plan to do a kitchen renovation in about 6 months….fingers crossed. And a dishwasher is at the tip-pity top of my “must have” list.
I was always one to store my dirty dishes in the dishwasher. Until it was full, then run it. Anyone else?
And I made my sheet pan sausage + veggies last night, it reminded me of this salmon dish I made a few weeks ago. I snapped photos and planned to share it the next day. Then I probably decided to blog about Target or something.
You can get all these ingredients at Trader Joe’s. I LOVE their Atlantic Salmon fillets. And the tri-colored carrots make any dish a more vibrant and pretty.

Here’s what you’ll need:
- 1-1.5 lbs salmon
- 1 package tri-color carrots
- 10 small potatoes (baby or small red work best)
- 1 lemon, sliced
- 1/4 cup mustard (spicy or Dijon is my fave)
- 2 tablespoons maple syrup
- olive oil
- salt + pepper
Here’s what you’ll do:
Preheat oven to 425 degrees. Line baking sheet with parchment paper or silicone baking mat.
Bring a pot of water to a boil. Add salt + potatoes. Boil for 15 minutes, until fork tender.
Place cooked potatoes + carrots on baking sheet. Drizzle with olive oil + salt + pepper. Using your hands, toss till evenly coated.
Using a potato masher, fork or bottom of a cup – gently smash each potato.
Pop in the oven and roast the potatoes + carrots for 10 minutes.
While potatoes + carrots are roasting. In a small bowl whisk mustard + maple syrup.
Place salmon in the center of the baking dish. Spoon the mustard + syrup mixture over salmon + top with lemon slices.
Flip potatoes and give the carrots a stir. Back in the oven for 10-15 minutes, until fish flakes easily with a fork or cooked to your preference.

And there you have it. The complete dinner is done on one pan (and a pot). It’s healthy, fresh + delish….just how I like it!
