{mexican style zucchini}

I got my mind on my tacos and my tacos on my mind. Ha! Anyone else religiously make/have tacos every.single.Tuesday? Okay, good! I’m not the only one.

Another question? What do you serve with your tacos? Like a side dish?

Rice + beans? Yep, me too!

Ever want to add some veggies up in the mix? I got ya!

There are many things I can give up for health benefits. AKA booze. See you on Good Friday, good friend! Sugar. I can do that too. But, tacos? Nah. I’m not willing to part with them. I legit crave tacos. In all forms. Taco salad. Taco bowls. You name it.

You guys, I’ve been following WW (weight watchers) again! You’ve heard this song and dance before. But, it works – when I stick to it. So, here I am again. Counting my points. And it’s not that bad at all. Not that hard. I can eat everything, within reason.

When it’s Taco Tuesday, I’m having tacos. Instead of rice + beans, which are high in points. I’m swappin them out for these mexican style veggies.

It’s quick. It’s easy. It’s fresh AF. It’s healthy. It’s ZERO WW points. Which means = more tacos 🙂 You follow?

Not going to lie, the fam bam isn’t a fan. So they get the rice + beans. I am 100% in love with this taco side dish tough. OMG the leftovers with an over easy egg on top? Some avocado + tap-your-uncle (aka tapatio) BOMB! BOMB!!

{mexican style zucchini}

  • Servings: 4

{mexican style zucchini}

Here’s what you’ll need:

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 medium zucchini, diced
  • 1 medium squash, diced
  • 1 cup mushroom, quartered
  • 1 cup cheery tomatoes, halved
  • 1/2 teaspoon cumin
  • 1/2 green onion, thinly sliced
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon pickled jalapenos, chopped
  • 1/2 cup cotija or feta, crumbled
  • fresh lime juice
  • salt + pepper
  • red pepper flakes

Here’s what you’ll do:

Add olive oil to a pan, once hot add garlic + zucchini + squash + mushrooms and cook until softened. About 3 minutes.

Stir in tomatoes + green onion + cumin and continue cooking for 3 minutes.

Remove from heat and top with cilantro + jalapenos + cheese + fresh lime juice + salt + pepper + red pepper flakes.

Serve warm.
