Kaia girls (or any girls, really), I’ve got a killer clean recipe for you! With BRIK right around the corner, I know you’re all busy working on your meal plan for week #1. Not only is this recipe healthy and delicious, but clean up is a breeze. Literally!
Perfect for a quick week night meal. Or meal prep for a healthy lunches for the week.
You can customize this dish with your favorite veggie combos. Your go-to seasonings. Or the sausage your family digs. So many options. I used veggies I had on hand. I love throwing in tomatoes at the end…so good! This recipe can me made with or without potatoes too. Totally up to you! Bay hates tomatoes (so I left them out) and LOVES red potatoes, so I added them this time around. The options are endless!!
Here’s what you’ll need:
- 1 package of chicken sausage, sliced
- 1/2 red onion, sliced
- 1 zucchini, sliced
- 1 cup broccoli, chopped
- 1 package mushroom, quartered
- 1 orange bell pepper, sliced
- 1 1/2 cups red potatoes, diced (you can sub sweet potatoes) Or skip the potatoes all together!!
- cherry tomatoes (I didn’t add this time, Bay HATES tomatoes)
- 1/4 cup olive oil
- salt + pepper
Here’s what you do:
Preheat oven to 425 degrees. Line your sheet pan with foil.
Place all chopped veggies in a large bowl and drizzle with olive oil + salt + pepper. Toss with your hands to coat evenly.
Pour veggies onto sheet pan in a single layer and bake for 15 minutes.
Remove pan from oven. Add tomatoes (if that’s your thing) + sausage. Return to oven and cook for an additional 15 minutes.
Throw away your foil and pop your sheet pan in the dishwasher….and boom! You’re done!
Trader Joe’s smoked, apple chardonnay chicken sausage is amaze! Get some. I mean, they clearly got with the chardonnay 🙂
I enjoyed the leftovers for the rest of the week. Over a green salad…yumm. Add an over easy egg for breakfast…yumm! Over rice (if you skip with potatoes)…yumm. Ohhh, or how about loaded on top of a bowl of quinoa…yumm!
Kaia girls – what’s on your menu for the first week of BRIK? I love talking food, especially good food that’s good for you ♥
