You guys, I hate to say it, but can 2020 get any worse? I take that back. Yes, yes it can. Everyday it’s something new + different. Not good stuff either. My heart breaks for all the fire victims.

On my weekly intentions, I’m going to add: Share a recipe. I miss sharing writing up yummy recipes. Then seeing you guys recreate them in your kitchen. So, I’m going to be better at it.

Anyone else is obsessed with the Starbucks egg bites? They are such a great healthy + quick option for breakfast. And I’ve found a way to make them very similarly but with your oven at home! No fancy equipment needed, just a little water bath and a muffin tray.

This recipe makes 12 egg bites. I have 2 each morning. Pop in the microwave for 30 seconds and breakfast is served. Topped with some Tap-Your-Uncle (tapatio) + a couple of slices of avocado.

The best part – You can add anything to the egg mixture to create you’re very own egg bites. Like ham – add it. Bell peppers are your jam….dice them up and throw them in. Anything goes!

Here’s what you’ll need:

  • 2 cups spinach
  • 1/4 cup red onion, diced
  • cooking spray
  • 3 large eggs
  • 4 egg whites (3/4 cup egg whites)
  • 1/2 cup plain non-fat greek yogurt
  • 1/4 cup feta cheese (any cheese works)
  • 1/2 cup real bacon bits
  • salt + pepper

Here’s what you’ll do:

Preheat oven to 300 degrees. Bring a small pot of water to a boil. Spray (liberally) muffin pan.

Add cooking spray to a pan and cook down the spinach + onion for a couple of minutes till spinach is wilted. Allow to cool.

Blend eggs + egg whites + yogurt in a food processor or by hand. Stir in feta cheese + bacon + salt + pepper.

Add spinach + onion to the egg mixture.

Using a measuring cup, pour 1/3 cup of mixture into each muffin section.

Pour boiling water into a rimmed baking sheet. Place muffin pan over the boiling water.

Bake for 30-35 minutes, until eggs are set.

Enjoy from the over or store in an airtight container in the fridge for a few days.

I used a spoon to loosen up the eggs from the sides of the muffin pan. And they popped right out.
