
Wish the weather was on track with my comfort food cravings lately. The season changed, but the California weather – not so much.
I emailed Cory this recipe on Monday, just a reminder. Since we haven’t made it since last winter. And his response: Making it tonight.

Cory started making this Pioneer Women Pot Roast back in 2015. {weekend notes} It’s still one of our ultimate favorite fall/winter recipes ever. It’s easy AF. Delish AF. And easy clean-up.

Just one of the many reasons why I LOVE this one? It’s a one pot meal. Meaning, when Cory’s cooking – not every single pot + pan + dish will be left in the sink dirty when he’s done. Ha! Tell me I’m not the only one?
You see – I am the dishwasher, remember? NO dishwasher in our home? Well, technically we all do dishes, but I’m the best at it so I do it wayy more. Or at least, that’s what I’m told. LOL!
When we get around to remodeling our kitchen some day, I am going to have the biggest + baddest dishwasher on the market. Mark my word!

{the perfect pot roast}
Here’s what you’ll need:
- Chuck Roast (4-5 pounds)
- 2 tablespoons olive oil
- 2 onions, quartered
- 3 ribs celery, chopped
- 8 carrots, chopped into 1 inch pieces
- Salt + Pepper
- 1 cup red wine
- 2 cups beef stock
- 3 sprigs fresh thyme
- 3 sprigs fresh rosemary
Here’s what you’ll do:
Preheat oven to 275 degrees.
Using a large dutch oven, add olive oil and heat over high heat.
Add onions + carrots + celery cook until browned. Then remove + set asside.
Place the meat in the pan + sear for about 1 minute on all sides. Using tongs to turn it.
Remove roast + set asside.
Add wine to pan + deglaze, scraping a spatula or whisk on the bottom of the pan.
Place Onions in the dutch oven. Top with the roast. Add beef stock to cover roast about halfway. About 2 cups.
Top with carrots + celery + rosemary + thyme.
Cover and place in the oven for 4 hours.
Enjoy!
When you open the lid of the dutch oven, your whole family will head to the kitchen! It smells that good.
We like to serve our perfect pot roast over creamy mashed potatoes.

Even the dogs. Ha! They both sprawled out under the dinner table hoping + praying someone would drop them a piece of Perfect Pot Roast!
