Easter Sunday is this weekend. More importantly, Good Friday! Ha! I can FINALLY drink booze again! So watch out, mama’s getting buzzed. With a couple little hiccups in the last 46 days. Keep’n it real, the struggle is real.

Since I have so much extra time on my hands, I made the sweetest Easter cake for dessert last weekend. We had my 95 year old grandmother + her caregiver, Eda and my parents over for dinner after Palm Sunday service. And I served this sweet cake.

It’s semi-homemade. Semi-naked. Bunny ear cake!

Not to be mistaken with a Bay Bakes cake. She’s totally over baking, so I’m on my own these days. I have to say, it’s kinda of therapeutic baking + decorating.

I used a boxed cake and 2 tubs of store bought frosting for this cake. But, if you want to make your life even easier…..

Buy a cake from the grocery store. Scrape some of the frosting off. And voila – a semi-naked cake in minutes!

Next, you’ll wrap thyme around the bottom of the cake. The frosting helps hold the herbs in place.

Next you’ll need some floral wire. I ordered gold floral wire from Amazon for a couple of bucks, but any color will do the trick. I also used thyme from my garden. One grocery store bunch will work for this cake.

Cut 2-10″ pieces of floral wire and form into the shape of a bunny ear. Cut another small piece to wrap around the bottom to hold together.

Next, weave pieces of thyme around the bunny ears. You may need to use another small piece of floral wire to keep in place.

Stick thyme bunny ears in the top middle of the cake.

Top with some fresh flowers and you’ve got a super festive, super cute bunny ear cake!
