Sweet. Salty. Chocolaty. Shall I keep going?

If you’re working on your quarantine bod too, I got a good one for you. Really, Bay has a good one for you!

In the last week or so there is one thing I’ve become very good at, taste testing! Ha! And these bars get my stamp of delicious approval.

Is it possible that baking cookies into the form of bars actually makes them taste better? I think Bay might be on to something here!

How are your kids holding up? I never really thought about how social our kids really are. They are with their friends all day at school. Then typically have some kind of practice. Or game. So many activities. Animals to raise. Hanging out. Sleepovers. And now they’re confined to the house. As an adult, it’s hard to wrap my head around at times. But, I just really feel for our kids right now. Everything is being canceled all around them. Trying to remind Bay of the bright side. Health. Spending time together. And that this too shall pass.

If you need a little cheer-me-up in your home too. Make a batch of these!

These are very easy to make! Great for your kiddos to do a little math + science work. Ya know what I mean?

  • Servings: 16-20 bars

{bay bakes // chocolate chip cookie bars}

Here’s what you’ll need:

  • 1 cup butter (more butter, more better)
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 1 tablespoon vanilla
  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk chocolate chips
  • 1 cup dark chocolate chips
  • coarse salt for topping

Here’s what you’ll do:

Preheat the oven to 350 degrees.

Melt butter in a pan till it gets nice and bubbly. Stirring often. Once you get little brown bits, remove from heat.

Using a brush or spoon, coat a 9×13 baking dish with butter.

Place remaining butter into a large bowl + add brown sugar. Mix until combined. Add vanilla + eggs, stirring quickly to they don’t cook.

Whisk together the flour + baking soda + salt.

Slowly add dry ingredients to butter + sugar mixture until they are combined.

Lastly, stir in the chocolate chips.

Firmly press the mixture into the buttered dish.

Bake for 30 minutes. The top will be golden brown.

Sprinkle the top with coarse salt.

Cool + slice into squares. Then dig in!
