Cottage cheese pancakes? Yes ma’am, you heard me right. I have never ever been a fan of cottage cheese. Like it straight up grosses me out. But, I will try anything once….or twice. The way I see it – if cauliflower can be pizza, then why the hell can’t cottage cheese be pancakes?

Have you seen people subbing cottage cheese for basically everything lately? I even tried a cottage cheese ice cream. Annndddd, I didn’t hate it. For now, I am sticking to the pancakes though.

This recipe makes protein packed pancake that taste a lot like French toast.

Here’s what you’ll need:

  • 4 eggs
  • 1 ½ cups small curd cottage cheese
  • 1 teaspoon vanilla extract
  • ½ cup flour
  • ½ tablespoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • Pure maple syrup
  • optional: add protein powder

Here’s what you’ll do:

In a blender add eggs + cottage cheese + vanilla + flour + baking powder + cinnamon + salt. Blend until smooth.

Heat a non-stick skillet over medium heat. Coat pan with non-stick spray. add a bit

Scoop out ¼ cup portions of batter and cook the pancakes until golden brown on one side. Adjust the heat so it doesn’t brown too fast.

Flip and cook until cooked through and no longer gooey at the edges.

Place the pancakes in a stack under an overturned bowl. This will keep the pancake warm.

Cook remaining batched of pancakes.

Serve pancakes topped with pure maple syrup.
