Last month I scored last minute tickets to Rachel Devaux’s book signing in Larkspur. She released a book full of her easy, laid-back, nutrient-rich recipes, Rachael’s Good Eats.. If you follow her on Instagram, then you know. Rachel was legit the sweetest influencer I’ve ever met. She took time to give each person a giant hug, ask where you came from. I told her I live for her Sugar cleanse. Which she then flipped to the page in the book – there is a 2-day sugar cleanse that I plan to try next week! Oh and Bridger, her husband then offered to take our picture with my phone. No rush, just very chill and made everyone feel so special for coming. I could go on and on….
Okay, so I have been cooking from Rachael’s Good Eats.. for the last couple weeks. We’ve loved each recipe. Which is saying allot for my picky ass peeps.
Last week I made this salad with grilled chicken over the top. Then I proceeded to eat the leftovers for 2 days straight. It’s that good friends!! And remember – I’m not a big fruit fan.
So, back to the recipe….
It’s super fresh. Super healthy. Super easy. And you most likely have most of the ingredients already. Sub out items for things you prefer. I used walnuts in this recipe since that’s what I had on hand. Even toasted them up on the stove, because yummm. I’ve never met toasted nuts I didn’t love…ha!

Here’s what you’ll need:
- 5 big handfuls of mixed greens
- 5 strawberries, cut into matchsticks
- 1/2 honeycrisp apple, cut into matchsticks
- 1/4 cup crumbled feta cheese
- 1/2 cup walnuts, toasted
- olive oil
- balsamic vinegar
- salt + pepper
Here’s what you’ll do:
Layer all ingredients in a large bowl. Drizzle with olive oil + balsamic. Sprinkle with salt + pepper. Give it a good toss and dig in!
