Bay saw a TikTok of a girl making these the other day. We watched the video + gathered all the ingredients and piece-milled the recipe. You guys – these are quite possibly the best cookies I’ve ever had. I know, I know – I’ve probably said that before. But, you gotta trust me on this one.
The recipe – intense. The outcome – worth it! The dough – dangerous.
Bay made me a batch to take to the Omega Nu Bunco tonight, so if you’re there, be sure to grab one and let me know what you think!!
Do you love coffee cake? We are BIG fans at our house. Have you ever tried my recipe for: {gg’s crumb coffee cake}? Or my {blueberry coffee cake}?
I’d say these cookies could be a Crumbl Flavor of the week. They are legit THAT GOOD!

Here’s what you’ll need:
CINNAMON DOUGH
- 1/2 cup butter, softened
- 1/2 cup vegetable oil
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 1/2 cups flour
STREUSEL
- 1/4 cup butter, softened
- 1/4 cup brown sugar
- 1/3 – 1/2 cup flour
- 1/2 teaspoon cinnamon
- pinch of salt
ICING
- 1/2 cup powdered sugar
- 1 tablespoon milk
- splash of vanilla
Here’s what you’ll do:
Preheat the oven to 350 degrees.
To make the dough….
Combine the butter + oil + brown sugar. Mix for a couple minutes until it is smooth. The mixture should be lighter in color and fluffy. Add the egg + vanilla, mix again. Add the remaining ingredients and mix until just combined.
To make the streusel….
Combine all the ingredients in a bowl and mix with a spoon. Start with 1/3 cup of flour. The mixture should stick together, but should also crumble when you run it through your fingers. If it isn’t crumbling, add 1 tablespoon of flour at a time until it crumbles.
Using a large cookie scoop, scoop a ball of dough onto a lined baking sheet. Using the back of your cookie scoop, make an indent on the top of the dough. Sprinkle a couple tablespoons of the streusel on the top of the cookie, into the indent.
Bake the cookies at 350 for 10-12 minutes.
To make the icing….
Combine the powdered sugar + milk + vanilla in a small bowl and whisk until it’s smooth. Once the cookies have cooled, drizzle on lots of icing!
Enjoy!
Thanks Bay for still baking all the sweetest treats and letting me be your forever taste-tester!
