Day #4 of the Trader Joe’s recipe round-up!  Not going to lie, I am so sick of talking about food…lol.  It’s been a food filled few days and I’m ready to move on to some cute #ootd’s or some kind of decor.  Who’s with me?

What a week!  Getting home from Tahoe and taking off to Alliance Redwoods the next morning, kicked my butt.   Bay’s now home!!!  Ready to get back into the swing of things!

Weekend plans: kickin it!  I’m itching to get some Spring cleaning done too.  Even though there is rain in the forecast.  The month of March always gets me wanting to clean + organize.  My closet desperatly needs some attention!  Meal prep.  Monday, I will be doing a little 2-day cleanse followed by a sugar cleanse for the remainder of the month.  Drink some wine with the girls!  Polish off the rest of the girl scout cookies.

Sounds like a damn good plan to me.  What’s on your agenda for the weekend?

{15 minute beef stir-fry}


It’s Thursday friends!!! Believe it or not, I’ve got another Trader Joe’s dinner for you today.  Day #3 of the Trader Joe’s recipe round-up.  I saved a good one for you.

But, I’d like to interrupt our TJ’s round-up for just a sec……

Because its International Women’s Day and I can 🙂

Ok, now back to the recipe……

Who doesn’t love a quick dinner??  I’m always down to save some time.  Which therefore allows more time for me to catch up on my BRAVO shows.  Vanderpump.   Summerhouse.  Beverly Hills Housewives.  Who’s excited for New York to begin next month?  Man, I watched the teaser and they look + act crazier than ever!

And who doesn’t love an easy dinner?  Less dishes to clean.  Less prep.

Being in the kitchen is how I unwind each night.  Normally with a glass of wine in hand and the record player playing something good.  Just typing that made me smile:)

Oh and I almost forgot, I’d also be wearing my sweatpants + slippers…ha.  How did I almost forget the first thing I do when I walk in the door?

Where was I going with that?  Anyway, I love being in the kitchen, but weeknights can be cray-cray sometimes.  I try to plan at least one super easy dinner each week.

I look over my calendar and decide what night I’m going to take advantage of the pre-prepped veggies + protein.  Then save the tougher, longer to prepare dinner for a night that I don’t have much going on.  When you’ve got a little extra time to pour a glass of wine and take your time.  And maybe insta story as you go 🙂  Not that I’ve ever done that…lol.

This stir-fry was a hit in our house.  So easy.  So fresh.  So good.  BOMB.com leftovers.

{trader joes cauliflower crust pizza}


Day #2 of the Trader Joe’s recipe round-up!

Also, day #3 of my 6th grade field trip hostage situation.

Only kidding.  I actually signed up to do this!

I wrote this post last week, so I’m sure right now I’m dying for a shower + my bed + a big ass glass of chard.  Ha!  Maybe not.  Maybe I’m enjoying the hell out of the slug snail trailing across my face.  Who knows?!?!

Remember a couple of weeks ago, when I insta storied my cauliflower pizza experience?  I had TONS of DM’s asking how the crust turned out.

I Stacy Brown, self proclaimed pizza connoisseur, make this solid promise to you, from this day forward, for better, for worse, for richer, for poorer, in sickness and in health, until death do us part…. (that was a little much)


I didn’t miss the traditional crust at all.  Not even for a second.

But, you HAVE to promise me one thing….

You HAVE to follow the pre-cooking process to achieve the best crust ever!


Trader Joe’s products used to create this meal:

  • Cauliflower Pizza Crust
  • Shaved brussles sprouts (the remainder from the halibut tacos)
  • Prosciutto
  • Vegan kale, cashew & basil pesto (this stuff is to die for)

*remember, I hate to waste food.  I decorate with herbs that I’m working with that week.  I utilize all produce purchase.  If it begins to wilt.  Roast it.  If it’s freezable…freeze it!  Throw it over greens.  Smother it in ranch.  Just use it.  For instance, the prosciutto, I baked the remaining of it.  Bay likes to snack on it for breakfast, kinda like bacon.  The shaved brussels sprouts.  I bought them for this pizza recipe, but decided to use them of a slaw on the halibut tacos too.  Instead of buying a package of slaw too.  Think ahead.  End of rant!

{halibut tacos + roast corn salad}


Today kicks off day #1 of the Trader Joe’s recipe round-up!  And it only makes sense that we start with tacos!  Not just any plain ol tacos.

Halibut Tacos!

With a roasted corn salad on the side.

And how about a can of pinto beans?  That’s Bay’s fave.  With a touch of cotija cheese over the top!  Yummm!

Halibut is hands down (or should I say hands up in the air waving like I just don’t care) my favorite fish.  And I NEVER buy it.  It is a little pricey, but 100 worth it.  I vow to make halibut appear on my dinner rotation more!

You know what would go good with these halibut tacos?  One of my Skinny, Skinny Margs from {friday 5}.  Make dos to be safe and make some tacos tonight!

{weekend notes}

Good Morning! I can’t remember the last time I wrote morning. I’m no ally scrambling at 4pm to get this post live. Today is a special Monday. At 8am, I’ll be headed to Occidental, CA with Bays 6th grade class for one week of camp. Bays so excited she could hardly sleep. Me, on the other hand, savored every last minute in my nice, warm, cozy bed lol. Have a great week and keep your eye out for a week dedicated to Trader Joe’s. Each day will be a new TJ’s recipe. Hope you like it.

Intentions for the week:

  • Survive Alliance Redwoods 6th grade campsuch a cool experience as a parent
  • NO online shopping for a week (no phone service will help with that) – EPIC FAIL!!!
  • Find the perfect one piece #mombodfound it and I’m gonna tell you all about it
  • Come up with a cute Dime-A-Dip dessertBay made the cutest pig cake
  • March budget spreadsheet…..just a little latedone 
  • ONLY 1 grocery store trip.  Unless I run out of wine 🙂hit TJ’s once…record breaking
  • Tackle my closetfeels so good to see all my money hanging again
  • Figure out a new way to organize shoes bought some organizers, stay tuned!
  • Clean out the pantrydone

Highlights from the weekend……

Friday we headed up the hill to spend the weekend in snowy Lake Tahoe.

Pit stop at Strawberry Lodge. It’s a tradition. Minus the blizzard.

Waking up to lots of fresh snow.

The road had a little snow too.

I braved cold toes to get this shot lol. I could resist. Our cabin, the cabin my grandpa built, is a natural beauty.

Snowshoeing was added to the Winter To-Do’s list, not 100% intending to actually do it though. You see, I kinda hate the snow. I’ve never been a fan of snow sports. But I’m always up for an adventure.

{friday 5}


Oh hey Friday!  Happy to meet you again.  So ready for the weekend.  But first, can we take a minute to talk about this flash back Friday photo my Mom dug up?!?!  A few things.  My hair?  My Mom is a total babe.  Benny is a spitting image of my sis.  My Dad looks like a teenager.  And we’re sitting on the deck at the cabin.  Same place I will be spending this weekend ♥  along with a lot of snow.  It’s always fun to pull up to the cabin anticipating how much snow will actually be on the ground.  I have a feeling we’ll have more than I’m ready to deal with…Ha!  Did I mention, I’m not a fan of the snow…like, at ALL!  Cheers to the weekend friends!


5 things on my mind…..


ONE – The Skinny, Skinny Margarita //  Whenever I order a marg, I always ask for a skinny, skinny marg.  Ha.  I hate sweet.  The less sugar.  The less syrup.  The more tequila….the better.  Am I right?  I want to taste what I’m drinking.  You know when you take that first sip, and you pucker up because it’s so overly sweetened?  Not havin’ it.  So, I think I invented the at home skinny, skinny marg.  Unless some other jerk already has.  But, until then, I’m claiming it!  This is like my second invention in a week!  Remember the roasted cauli rice one last week on {friday 5}?  That was mine too 🙂


Here’s what you’ll need:

  • 3 oz Patron Silver (don’t buy the cheap crap)
  • 1/2 cup lime La Croix
  • 1 lime juiced
  • Ice
  • Margarita salt


Run the cut side of the lime along the rim of the glass.  Dip in margarita salt.

In a shaker…or yeti, like I used, combine all ingredients.  Give it a good 15 second shake.

Pour into glass + add a little more ice.


Make another 🙂

TWO – Velvet Tank // Velvet was such a BIG deal this fall/winter.  I was all about it.  As Spring starts showing it’s pretty face, I have a feeling the trend will fade.  But, this velvet tank top wont.  I promise you will continue to see me wearing it any chance I get.  I also layered necklaces for the first time.  Did I do okay?  I’m kinda diggin it.  Now I need some long necklace options.  This one here is from Forever 21 a longgg time ago.  And it’s still alive.  Don’t hate/discriminate on F21 jewelry.  Some pieces will outlive you 🙂

THREE – Oscar Bingo //  I can’t remember a time where I enjoyed the awards season more.  The red carpet fashion.  The stars.  All the movies.  I think watching a lot of the movies that are nominated helped.  I, Tonya.  Lady Bird.  The Post.  COCO.  Wonder.  The Greatest Showman.  The Big Sick.  And just this week we crossed Darkest Hour + Roman J. Isreal, ESQ. off the list too.  Denzel Washington deserves “Best Actor In a Leading Role” for Roman J. Isreal, ESQ.  He was, as always, fantastic!

Super pumped for Sunday’s Oscar Awards.  Bay + I plan to pop some popcorn, bust out some bubbles (for me obvi) + play a friendly game of Oscar BINGO!  Check out these super cute free printable cards I found on Pizzazzerie.   Four different cards so you can play with your kiddos + company.

{spring table + rose napkin fold}

In celebration of March, today I’m sharing my Spring table setting.  Setting a pretty table has become one of my favorite seasonal projects.  Simple + clean.  Lots of white.  And it’s always fun to shop my own house for different pieces to finish the table off.
A set table makes the home feel so welcoming.
And nothing sets the Spring tone like a bright cheery room.

She rolled all the rose napkins.  Perfectly.  She knows how I roll….lol.
Farmers Market flowers were my favorite find last Saturday.  Super unique.
Once these begin to wilt, I’ll probably grab a couple of bunches of eucalyptus to replace it.
Fresh rosemary + thyme tied with bakers twine.  As soon as the candle was lit, I could smell the fresh herbs.  Such a fun touch.  The thyme wilts quickly.  If you decide to try this at home.  Either stick with rosemary for a longer lasting look.  Or do this the day of, if you’re having peeps over.  Either way, I love using anything fresh I can get my hands on.  I have rosemary planted out back.  Fresh thyme was leftover from a recipe.  I also love using up things I already have in the fridge.
I wanted a layered look without chargers or extra on the table.  I bought this plate set at Walmart yearrrrsss ago.  It’s from the Better Homes and Garden collection.  Which is still available.  I have 2 sets making an 8 piece place setting.  They are great quality and don’t have a single chip.
