What’s better than a big bowl of soup on a rainy day?
Sarah P’s Chicken Tortilla Soup, to be exact. This recipe is like circa 2002-ish?
It’s vintage! Kinda like mine and Sarah P’s friendship….old AF! lol
I rank this soup up there in my top 5. It’s packed with tons of flavor. You can make it real, real easy too. Grab a rotisserie chicken and you’ll have dinner on the table in 20 minutes. Just add your favorite taco toppings and you’ve got a winner winner chicken soup dinner.
Back in the “Letters To Santa” ages….When I used to host all the kids and all my homegirls over for a night of Holiday cheer. The kids wrote their letters. We sipped (guzzled) wine and had this soup. Every.Single.Year. I’ve had peeps request it. I can’t even count how many times I’ve emailed this recipe to friends and family.
Hi friends. Hope you all had a great weekend. This weekend I filled up “my cup” with the a work outs + good people + some early spring cleaning and decorating + meal prepping. Doing things that make me feel good. And things that make me forget my phone. What do you do to fill up your cup?
I’m a grande pike (black) in a venti cup. Sounds kinda boring, huh? It truly is what I ALWAYS order and enjoy. But, I want to try something fun. Something new to look forward to on Friday coffee dates. Not too sweet though. Any recommendations?
Hope you have a great weekend. We don’t have many plans, and I’d like to keep it that way. Craving a low-key weekend. Extra cups of coffee in my Pj’s kinda weekend, ya feel me?
It’s Friday and I’ve got 5 things on my mind……
ONE – March //
Little things I’m looking forward to this month…..
Taking long walks down each and every isle. Ahh, it’s one of my favorite things to do. Right when those automatic double doors open up, I beeline it for the floral section. I scope out the eucalyptus first. Always. Then walk about the the whole stem section once. Or twice to check out all the pretty blooms.
Next thing, I hit the coffee pot for a mini sample of coffee. I’m come back once or twice for a re-fill.
Every time I make a TJ’s run my DM’s fill up with questions on the New products. And what I got. So, I’m going to tell you ALL THE THINGS Trader Joe’s new arrivals. Everything I’ve picked up in 2019 that I loved. And a few that I legit hated too.
Things I’m Totally LOVING:
ABC Bars – 160 calories pocket sized delight. Soft chewy chocolaty dough with a creamy almond butter filling. They are gluten free + vegan! I’ve been really lazy with breakfast the last week. These have been my grab and go eat in the car on the way to work breakfast. They go incredibly well with coffee too.
Organic Buffalo Style Hummus – OMG!! So good! I dipped TJ’s plantain chips and fell in love with this hummus. I have buffalo chicken lettuce wraps on the menu. I’m planning to spread a layer of this hummus on the lettuce. Top with chicken. Sprinkle blue cheese. Doesn’t that sound so good? Stay tuned. I’ll tell you all about it.
Indian Fare Madras Lentils – I swore I didn’t love lentils for years. I was grabbing my mini coffee at TJ’s the other day and I wanted to droll of the Sample tray. It was this microwavable lentil packet with a piece of bread to dip. I rarely try the samples or buy them. There was NO way I could pass this one up. I haven’t made it at home yet, but plan to this weekend.
It’s Wednesday. Hump Day. So let’s have a little fun.
5 things about me….
Some of you may already know all these things. And some of you are shaking your head, thinking – really? You had to go there? Ha. Yes, yes I did! Correction – I had to delete and re-write #5 twice. My Mom said I went to far. Thanks for lookin out Mom!
My love for pizza is real. I’m a pepperoni + black olive kind of gal. Sometimes I get real wild and add jalapenos. And ranch, always ranch. EXTRA ranch, to be exact!!
This past Sunday, February 17th, was Nation Random Acts of Kindness Day. Out of all the cheesy “national days” I think this is one we could + should all get behind! Get outside your comfort zone…just a little bit. Kindness is straight up magic. And it can really brighten the shit out of someones day!
And to be completely honest, it’s a really great way to lift your own spirits too! It’s a two for one, baby!
For example: I was at Target the other day….go figure. Waiting in line. I let a women with #hellakids go in front of me at the self checkout. She was dumbfounded that I would let her go ahead of me. As though nobody had even done that for her before. She even offered to buy me the sugar free red bull I had in hand.
Which got me thinking…….
Just think if each of us do ONE simple random act of kindness each day. What if it became a chain reaction?
Here’s a list of simple acts that I came up with……
Happy President’s Day…..coming from the only person on earth that is working today. Lol! According to Instagram story polls, there are about 4 of us total. I cant bitch too much, since I did take Friday off for a long weekend in Tahoe. Cold very cold and snowy Tahoe. Hope your Monday is off to a great start. It’s going to be a good week! I can just feel it!
Intentions for the week:
