Bay bakes, again!

Before we get to the cookie recipe, let’s do a quick little Bay update……

 

Spring Show/ 4-H is OVER!  Pig is sold.  Tablesetting is over.  Baking, will contiune in our own kitchen.  Now to complete the Record Book.  In my opinion, the worst ever.

I take that back, we are sitting in on a 4-H county meeting tonight to make up for a missing club meeting.  Think I can sneak wine?  I hear they are boring AF!

Bay was elected the 2018-2019 Willow Oak 4-H Secretary.  She’s so excited.

English horseback riding is the only activity Bay is currently doing.  BIG thanks to Sara for making it happen.  I remember when we had riding + swim team + gymnastics + soccer all at the same time.  WTF was I thinking?  Ha!  #lessonlearned

Filled out all the paperwork for Bay to begin Faith Formation again.  I was never confirmed.  I blame it on Mary Ann though 🙂

Summer camps: Volleyball + algebra academy + ASES.  Along with some babysitting and ditching me to hang with Gram + cousins in Tahoe.

Bay shaved her legs over the weekend.  I sat outside the tub and coached her.  I felt so proud and devastated at the same time.  Where did my hairy legged baby go?

In 16 day, Bay (and I) will no longer be Plainfield Elementary School peeps.  This is a hard one!  We’ve loved this school for seven years.  No more carpool.  No more PTA?  Shit is getting real…let me tell you!

6th grade promotion is also 16 days away (11 school days to be precise)  Thanks for all your instagram story poll votes, Bay picked out her 6th grade promotion dress.

Did I mention there is a 6th grade dance on June 1st at the Community Center?  ONLY 6th graders….No parents allowed.  OMG.  Promotion.  Shaving legs.  And now a dance too?  Dying!  So, in true crazy mama fashion, I ordered Dress #1 + Dress #2 for her to choose between for the dance.  Because, “you can’t wear that same dress to both” according to Bay.  Not sure where she’s heard that shit from?  In my defense, J.Crew is having a killer deal.  All the dresses are marked down 40% + free shipping.

Soft + chewy.  Peanut buttery little slice of heaven.  And chances are, you’ll have everything in your pantry you need to whip up a batch.  Beware, the dough is insane!

{friday 5}

We’re doing the HAPPY FRIDAY dance today!!  Wishing you all a really rad Friday!  Now bring on the weekend!

 

5 things on my mind…..

 

ONE – Back at it // Is it just me, or did every kid activity started up this week?  Bay started Horseback riding lessons + Volleyball + 4-H…THIS WEEK!  She even snuck in some tennis with the neighbor.  I love watching her do what she loves.  But, damn, I earned my wine this week.  Ever feel like you are your kids uber driver?  Except they leave all their shit + wrapers behind and don’t leave a tip?  I did sign her up for all these activities, so I can’t complain too much.  Cheers to the Septmeber craziness!

 

TWO – Chop Salad // You know those days where meal prep just aint gonna happen?  But, you don’t want a shit lunch with 5 bazillion calories?  I got ya covered.  Buy a bag of chop salad.  The southwest is my fave.  Open a can of black beans.  Slice an avocado.  Grab some leftover protein from your fridge.  Chicken, ground turkey, quinoa…anything will work.  Divide between two bowls.  You can toss the dressing (I didn’t, lazy AF) and use a homemade or healthier.  Or divide the packet into two ziplocks.  And you’ve got lunch for 2 days!

Healthy

Zero prep.  Or maybe, like, 5 minutes tops!

And you use up the leftovers in the fridge

Chop salads come in so many combs.  I plan to try a new one next week.  If it’s a hit, then I’ll be sure to share it with my peeps!

THREE – Table talk // Are you guys stick of reading about my table yet?  Me either 🙂

To make it a little fall-ish.  Probably as fall-ish as this table will get.  I added these super cute velvet pumpkins from the $1 bin at Target!  Go now!!  At a $1 a pop, these things will disappear in no time at all!

{weekend notes}

Take me back to Tahoe please!

We had our final-final summer adventure last weekend.  Most peeps are celebrating their last summer hurrah this Labor Day weekend.  Unfortunately, we will be spending our 3-day weekend moving.  So. Much. To. Do!  Currently wishing I was still sitting on Pope Beach with a bud light lime in hand enjoying the 80 degree weather.  This 110 shit is for the birds.

 

Here’s a little recap of the highlights from our weekend……

We hit the road Friday with Ruby (Bay’s BFF) in tow.  I love these girls and their friendship ♥

Pit stop at Strawberry Lodge for sodas.  First time ever (in my adult life) I haven’t sat at the bar, played Janis Joplin on the jukebox and enjoyed a coldie.

They did a boomerang cheers.  Like mother, like daughter.  Pretty sure that was Sara + I a couple of weekends ago….Ha!

 

The Cabin.  With mom waiting for us.

 

First thing first…Lake Tahoe Pizza Co. for pizza.  Pizza is kinda our Friday night thing, if you haven’t caught on yet.

We did half cheese (borefest) + half Mean Greek.  You guys, it was BOMB.  Sundried tomatoes + sautéed spinach + feta cheese + red onions + peperoncino + chicken.  Sounds good, huh?

Along side avocado toast Carol Willis style.  I love avocado toast, but do you want to know how to make your avo toast even better?  Add crispy prosciutto.  Yes!  Carol had made this for my mom a couple of days before.  When she told me about it, I requested she show me Carol’s ways.  OMG!  It was killer.  She crisped up a couple thin slices of prosciutto on the stove then layered it up over a toasted pieces od Dave’s Killer Bread.  Try it.  And thank Carol after!

Horseback riding!!  WTF did I get myself into?  I am afraid of horses.  Horses don’t like me.  Pretty sure they can sense how uncomfortable I am.  At least, that’s what I’ve been told.  I am 35 year young, and have yet to get on a horses.  I’ve had plenty of options, but have declined every single time.

The reason we are here….Bay + Ruby are completely horse crazy.

They’ve been riding since they were 5 years old.  Look how little they are in the images below.

Then a couple of summers ago, Paige + Willy introduced Bay to Junior Rodeo.  She learned barrels + poles + roping.  Probably one of the coolest things I’ve ever seem my girl do.

She would ride out to a goat.  Jump off her horse.  With a hope in hand.  And tie up a live goat and lay it on its side.

Bay was 9 years old at the time.

I don’t think I could even do that now.

Ok, so now that you have the history you know why it was time for me to finally get on a horse.  Bailey has asked me to a million times.

I said yes.

We went for a guided trail ride in Tahoe at Camp Richardson Corral.  I can’t say tell you how great the guides + staff treated us.  They knew I was freaked the fuck out.  They got me on a horse and reassured me I would love every second of it.

{back in the saddle}

Bailey is back in the saddle.  Something she LOVES.  Something we both love.  She is obsessed with horses, and I love watching her do what she loves.

At Bailey’s 9 year doc appointment, her pediatrician asked her “what do you love to do the very most, what’s your passion?”  Without hesitation, “Riding horses!!”  I realized she hadn’t ridden a horse since last summer.  Holy guilt trip.  I called and booked her a package of lessons the very next day.
