
Happy Hump Day Peeps! I was going to do a long ass blog post about Trader Joe’s. But then I scrolled through my phone and realized I never shared my sheet pan meatloaf dinner.
So, Trader Joe’s will have to wait. Maybe Friday?
I love a good sheet pan meal. Especially a healthy + easy weeknight dinner!
Some of my fave sheet pan meals to date….

Meatloaf is an American classic if you ask me. Everyone and their Mom has a family recipe they make. Which I’m sure would work perfectly fine as a sheet pan recipe too!
Mine go-to recipe has a turkey base. Just cause we like it. Some quick oats. Ketchup. Egg. Onion. Seasoning.

Add your fave veggies. 30 minutes in the oven and you’ve got a complete meal on the table!

We are obsessed with Trader Joe’s Les Petites multi colored carrots.

The key to my heart…
It’s all about that sauce over the top of the meatloaves.

Cory + Bay both gave this recipe two thumbs up. And I’m not even joking when I say, they can be a hard crowed to please these day! Ha!!
{sheet pan meatloaf dinner}

Meatloaves
- 1 lb ground turkey (or beef)
- 1/3 cup quick cooking oats
- 1/4 cup red onion, chopped
- 1 egg
- 3 tablespoon ketchup
- 2 teaspoons Worcestershire sauce
- 3/4 teaspoon salt
- 1 teaspoon creole seasoning (we dig Tony Chachere’s)
- 1/4 teaspoon pepper
Topping
- 1/3 cup ketchup
- 2 tablespoons mustard
- 2 tablespoons brown sugar
Vegetables
- 1/2 pound green beans, trimmed
- baby potatoes
- 12 carrots, peeled + trimmed
- 2 tablespoons olive oil
- salt + pepper
Here’s what you’ll do:
Preheat oven to 450 degrees. Line a rimmed baking sheet with parchment paper or spray with cooking spray
Combine all the meatloaf ingredients in a bowl. Divide meatloaf mixture into equal parts and shape into mini loaves. Place on one side of prepared cookie sheet.
In a small bowl, mix topping ingredients and brush over each meatloaf.
Toss veggies with olive oil + salt + pepper. Place in a single layer on the pan.
Bake for 15 minutes.
Turn veggies and bake till meatloaves are cooked through…about 12-15 minutes.
