Friiiii-dayyyyy! I can’t even wipe the smile off my face today. Just happy AF it’s the weekend. Got up early, early this morning and cleaned the house from top to bottom. Even decorated for Spring a little too. I LOVE walking in Friday evening to a clean house. Makes starting the weekend extra sweet! You guys, we have hardly any plans….AGAIN! I’m sleeping in tomorrow, that’s #1 on my list. I’d love to work on the patio, if Mother Nature cooperates. Hope you have a good one!

5 things on my mind…..

ONE – Buffalo Cauliflower //

I dream about the buffalo cauliflower from Morgan’s On Main. Anyone else? If you haven’t tried it yet, it’s a MUST! I keep seeing insta stories of chicks making killer buffalo cauliflower in the air fryer. I’m weird about kitchen appliances. I just don’t really love them. Feels like it’s one of those things you HAVE TO HAVE. Use for a hot minute, then store on the counter for the rest of your life. If you know me, you also know…I don’t keep anything on my counters. It’s another one of the (many) odd things about me…lol. So I gave oven roasted buffalo cauliflower a shot. BOMB! Spicy. Crispy. And totally hit’s the spot. I served this as a side dish to grilled tri-tip the other weekend and ate almost the entire batch!

Buffalo Cauliflower

  • Servings: 2
  • Difficulty: easy

{Buffalo Cauliflower}

Here’s what you’ll need:

  • 1 head cauliflower, cut into florets
  • 1/8 cup olive oil
  • 2 tablespoon franks hot sauce
  • 1/4 teaspoon smoked paprika (one of my fave spices)
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • salt + pepper
  • 1/4 cup grated Parmesan
  • 1/4 cup shredded cheddar cheese

Here’s what you’ll do:

Preheat oven to 425 degrees. Line a baking sheet with parchment paper or a silpat.

In a bowl, toss together cauliflower + olive oil + franks + paprika + cayenne + garlic + salt + pepper + Parmesan. Everything but the cheddar.

Spread in a single layer on the baking sheet and roast for 20 minutes.

Add cheddar and pop back in the oven for about 10 minutes. Cauliflower will start to crisp up so watch it.

Allow to cool for a minute and get to dippin! I use the Bolthouse Chunky Blue Cheese Yogurt Dressing for my dipping sauce.

Alex and I are making our runway debut at the bella moda boutique fashion show. Come laugh at us. And support the downtown Woodland shop! Tickets are free, but limited. THREE – Gas Station //

Random, I get it! Ha! But, is it a sign of old age when you have “your gas station?” Like the only gas station you go too? I’m an AM/PM on Main + Ashley gal. That’s it! I fill up my car once a week and I’m good to go. I have to admit, AM/PM is a total shit show. I’ve seen fights. Dudes smoking cigs while pumping their gas. All I can think of is….I’m going to DIE. Just about every time I pull in that gas station, but it’s MY gas station. Cory told me the other day that Woodland Smog (on the corner or Main + Cleveland) matches AM/PM prices. So, I broke up with my gas station. And now I go here. There is NEVER anyone there. It’s such a breeze and I’m so much less stressed. Okay…end rant. Told you I’m OLD AF! lol!

FOUR – Sale Finds //

Great sale finds this week. I rounded up all these from Nordstrom Rack, which has been on point lately. I really didn’t shop the Rack till recently. And now I’m hooked. My Block Heel Mules, that I wear pretty much every.single.day are ONLY $40. Remember this Madewell print I rock on the blog? The style I have is sold out, but I was so happy to see this Wrap Front style. Super cute and LOVE the color combo. Great for Spring. I cannot believe how many of you said you own and are obsessed with this Maxi Dress. This Button Front Dress is such a closet staple. I own one is red and it’s one of my faves. Last, but not least, Shoreline Converse. GREAT for Spring and Summer. They go with shorts + jeans + dresses.
