Mini bacon burgers layered on a bamboo skewer, with lettuce + tomatoes + pickles. Who can resist that combo on a stick? Not me!! OR Bay!
These make the perfect low-carb dinner or appetizer.
I recently grabbed a copy of Danielle Walker’s Against all Grain Celebrations cookbook. So many beautiful + healthy recipes. I want to make everything. This one caught Bay’s eye. She’s not a bun girl. And anything on a toothpick is so cool to a 10-year-old.
I did modify the recipe a little. Using turkey in lieu of beef. I’m certainly not a beef hater, I just had turkey on hand. Either would work perfectly. I added some panko and minced onion. Oh and I was feeling lazy…so I used a package of Oscar Mayer Natural bacon pieces.
Here’s what you’ll need:
- 1 lb ground turkey
- 1/2 cup bacon, cooked + crumbled (I cheated and used a package)
- 1 tablespoon yellow mustard
- 1/4 cup panko bread crumbs
- 1/4 teaspoon salt
- 1/2 teaspoon dry minced onion
- 1/4 teaspoon pepper
- 16 cherry tomatoes
- 16 pickles (gherkins or slices)
- bag salad
- toothpicks or skewers
Here’s what you do:
Using your hands, mix together ground turkey + bacon + mustard + panko + salt + onion + pepper. From into 16 golf ball-size meatballs.
Place meatballs on a medium-high grill or grill pan. I LOVE my Calphalon grill pan!! Grill for 3 minutes on each side.
To assemble burger bites, thread the lettuce + burger + pickle then tomato onto toothpick or skewer.
Serve with your favorite condiments for dipping.
We each had two burger bites for dinner. Along side some tater tots 🙂 Which left us with 12. I enjoyed the leftovers for the rest of the week. Broke one up in my breakfast eggs. Through two over my green salad for lunch. Even snacked on one cold, right off the skewer.
