I am! I’m ready for our regularly scheduled life back. Bay’s got all her school supplies. Backpack is locked and loaded. First day outfit is picked out. We’ve got our 1st day sign ready for a photo shoot (which we do the day before) #momhack
The first day is entirely too wild. Emotions are at an all time high. It’s fucking stressful. So last year we decided – first day pics the day before. And it worked like a charm! Try it! I’ll be sharing some cute free printables in the next week or so.
I feel like dinnertime + cooking in general (that first week or two) is also crazy stressful. Especially when we have those big ass packets of Mom homework. I dread them every year.
So, I’ll be sharing some easy weeknight dinners.
Which are also great for meal prep.

We’re salmon lovers at our house. I love just about any fish or seafood. My teenager, not so much. But, she’s down with some salmon here and there. So, salmon it is. Ha! I typically bake it in the oven with lemon. Sometimes I’ll add a honey + Dijon mixture. Honestly, I keep it pretty basic. The other night I got a wild hair and wanted to try something new. And it was a HIT! I felt like a won a fucking award as Bay cleaned every last bit of food off her plate! Ha!

I know salmon is zero points and there are SOOOO many ways to enjoy this as a zero point meal, but just trust me on this one, K?

My Mom and I have am ongoing bet for weigh-ins. And I’m going to WIN!!! Did you hear that Mom?

Have you ever added panko bread crumbs to a dish you were baking and it came out soggy looking? Not browned? Not pretty? I have a trick to perfectly toasty browned bread crumbs. And it’s really, really easy.

Here’s what you’ll need:
- 1 to 1 1/2 lbs. Salmon, sliced into 4 equal pieces
- 4 tablespoons hummus
- 1/2 cup panko bread crumbs
- 1/4 cup parmesan cheese
- 1 teaspoon Italian seasoning
- salt + pepper
- lemon, cut into wedges
Here’s what you’ll do:
Preheat oven to 375 degrees. Line a baking sheeet with a silpat or parchment paper.
Place salmon on baking sheet. Sprinkle with salt + pepper. Spread 1 tablespoon of hummus over the top of each salmon fillet.
In a hot, dry skillet – add panko bread crumbs. Stir continuously till browned + toasted.
Cool slightly then add parmesan cheese + Italian seasoning to toasted panko bread crumbs.
Evenly distribute bread crumb mixture over each salmon fillet. Pressing lightly.
Bake for 20 minutes. Salmon should flake easily with a fork when done.
Serve with a lemon wedge along side rice + mashed potatoes or even a green salad.
Enjoy!
Would you look at that? Over a bed of arugula. My personal favorite. With a side of green beans + sauteed mushrooms. Makes me hungry just typing those words.
