{grilled salmon + avocado salsa}

Okay friends, it’s time to get all healthy and shit.  Anyone else on hopping on the health bandwagon?  It’s time.  I’ve decided.  I’m ready.  No more excuses.  No more potatoes.  No more bread.  Clean eats it is.

My house is back to normal.  Christmas has offically left the house!  No even a trace left behind.  Don’t get my wrong, I LOVE the Holidays.  #holidaywhore

But, when it’s done.  I’m done!  No joke.  Tree down the next day.  Decorations down.

Ready to re-focus.  Ready to un-Christmas.  Damage control.

Ready to focus on eating right.  Good + healthy + fresh  foods.

While scouring the internet for new Whole30-ish recipes, I came across The Cookie Rookie.

 

With over 2 million “pins” I figured it must be a good one.

Look at that avocado salsa.  Nothing better than cutting into a perfectly ripe avocado.

The verdict…YESSS!

Not just Whole30 approved.  Not just healthy.  Not just another salmon recipe.  This one is so flavorful.  The combination of the spice rub + avocado salsa are heavenly.  So fresh.  So simple + quick.  Other than the salmon, I already had all the other ingredients in my pantry + fridge.  Don’t you love it when that happens?

Here’s what you’ll need:

  • 2 lbs salmon, cut into 4 pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried minced onion or onion powder
  • 1/2 teaspoon chili powder
  • 1 teaspoon black pepper
  • 2 avocados, cubed
  • 2 tablespoon red onion, minced
  • juice from 1 lime
  • 2 tablespoons chopped cilantro
  • coarse salt

 

Here’s what you’ll do:

Mix together salt + cumin + paprika + onion (dry minced or powder) + chili powder + black pepper.

Rub salmon with olive oil.  Then rub all over with spice mixture.

Set in the fridge for 30 minutes.

Combine avocado + red onion + lime juice + cilantro + coarse salt.  Leave avocado chunky.  Chill in the fridge till ready to serve.

Grill salmon till desired doneness.  About 5 minutes was perfect for me.

Top with avocado salsa!

Enjoy!

I served my salmon over roasted sweet potatoes + squash.  With a side of steamed green beans.  So, so yummy.

Bay loved her salmon, served over mashed potatoes.  She will not be giving up potatoes + bread.  She’s declared her love for carbs and I’m backing her 100%!
