These taco cups are a frickin breeze to throw together. Open a couple of cans. Add some seasoning. Let it simmer. Done!
GREAT recipe for meal prep too!
The ingredients are pantry staples in our home. I always, always have a can of diced tomatoes + corn + black beans. You don’t even need to add toppings. Obvi you totally can! But, these come loaded with all the toppings in the mixture. This recipe makes a shit-ton. I was able to use these different ways throughout the week. I’ll show you at the end of this post!

Here’s what you’ll need:
- 1 lb ground turkey
- 1/2 packet Trader Joe’s Taco Seasoning (it’s the best)
- 1 (15 oz) can diced tomatoes with green chiles, drained
- 1 cup corn
- 1 cup black beans, drained + rinsed
- 1/2 cup salsa
- handful cilantro
- lime, quartered
- butter lettuce
- optional toppings: shredded cheese + avocado + greek yogurt
Here’s what you’ll do:
In a large pan, brown turkey.
Stir in taco seasoning + tomatoes + corn + black beans + salsa + cilantro. Simmer for about 5 minutes.
Add taco mixture to butter lettuce. Add all the toppings your heart desires.
Dig in!
Top with come Chobani Low-Fat Greek Yogurt (zero ww points for 2 tablespoons) and a slice of avocado. The avocado will have points, no longer making this a 0 point meal. Avocado is extra and I’m down with it!

This recipe makes a shit-ton of taco filling. And I’m totally down with leftovers. Hate wasting good food. Here’s how I incorporated this recipe into different meals through out the week. And I used up every little bit of this taco meat. Never once got sick of it either!
Enchilada Zucchini Boats // Weight Watcher’s Points: 0
I tossed some zucchini in the air fryer last night and made enchilada zucchini boats. BOMB.COM! Just hollowed out the center of the zucchini a little. Drizzled some enchilada sauce. Filled it up with this taco meat. Topped with some TJ’s almond mozzarella cheese and popped in the air fryer. Turned out heavenly. And I didn’t heat up my house one bit! Which is money during these triple digit temperature days.

Taco Pita’s // Weight Watcher’s Points: 3
For lunch I filled up a Joseph’s Pita with the taco meat. Added some avocado + lettuce too. Such a yummy and filling lunch.
