{taco stuffed sweet potatoes}

Today I’m breaking my 2 week silence…ha! Hi friends. I know it’s been quiet around here. Took a much needed break. Sometimes you just have to shut it down and walk away for a bit. But, I’m back today and feeling excited to start sharing ALL THE THINGS with you again.

It’s been over a month, May 30th to be exact, since I’ve even shared anything food related. Not even sure how that happened. But today is TACO TUESDAY! Like, the best day of the week….other than Friday + Saturday. So, I thought it was the prefect time to share my taco stuffed sweet potatoes. I straight up lived off these for lunch for a whole week.

Seriously, they are so good. And so easy!

I once again used my trusty air fryer to cook the potatoes. Took about 30 minutes. 15 minutes. Flip the potatoes. Then 15 additional minutes. They were cooked to perfection. The oven totally works too, but I’m just currently hooked on pulling out the air fryer for anything and everything. I own and swear by this one here: As Seen on TV 2.4qt Power AirFryer XL

This recipe is 6 points her sweet potato! It’s super filling and super easy to make! Try it out and let me know what you think 🙂

{taco stuffed sweet potatoes}

  • Servings: 4

This is what you’ll need:

  • 1 lb ground turkey (ground beef if you prefer)
  • 1 cup onion, chopped
  • 1 clove garlic, minced
  • 1/2 cup salsa
  • 1/2 packet Trader Joe’s taco seasoning
  • 1/2 cup water
  • 4 medium sweet potatoes

Toppings:

  • 1/2 cup shredded cheddar cheese
  • diced tomatoes
  • salsa
  • Chobani low fat squeeze greek yogurt
  • diced red onion

Here’s what you’ll do:

Set the air fryer to 400 degrees for 5 minutes to preheat. Or preheat your oven to 400 degrees.

Using a fork, poke holes all over the sweet potatoes. Spray with non stick cooking spray or olive oil. Using your hands, rub the oil all over the potatoes.

Once air fryer or oven is preheated, place potatoes in at 400 degrees for 30 minutes. Flipping half way through. If you’re using the oven, place potatoes on a foil lined baking sheet. The oven will take about 1 hour to cook potatoes.

Brown the turkey with onion + garlic. Once cooked stir in salsa + seasoning + water. Simmer for 5 minutes and set aside.

Once potatoes are cooked, allow to cool for a couple of minutes. Slice lengthwise and fluff the insides with a fork.

Divide cooked turkey between the 4 potatoes.

Then pile on the toppings!

They are GREAT leftover too! Like I said before, I had these for lunch everyday for a week. And didn’t even get sick of them. Bay preferred regular russet potatoes and LOVED this as well.
