There is one thing Bay + I will ALWAYS agree on…..

Tuesdays are for tacos!!!

In this case, Taco Tuesday Salad.

 

Everyone makes taco salad, right?  It’s like my easy week night meal.  I make a shit-ton of it so we can have lots of leftovers too.  Burrito bowls (just add brown rice) + salads are on the lunch menu for this week.  All week, to be exact.  Since I got home late Monday night and have NO plans of meal prepping this week.  It is what it is.  Luckily we love taco salad.  I honestly crave it…ha!

It’s not only packed with tons of flavor, but check out the super vibrant colors.  This salad is so good and so pretty!!  Great combo!

Here’s what you’ll need:

  • 1 lb ground turkey
  • 1/2 red onion, diced
  • Romaine, chopped
  • 1 can sliced black olives, drained
  • 1 can black beans, drained + rinsed
  • 1 can corn, drained
  • 2 avocados, diced
  • 3 green onions, chopped
  • cherry tomatoes, sliced
  • shredded cheese

 

Taco seasoning:

  • 1 1/4 cup chili powder
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 2 tablespoons crushed red pepper flakes
  • 2 tablespoons dried oregano
  • 4 tablespoons paprika
  • 1/2 cup cumin
  • 1/3 cup pepper

*This recipe makes a shit ton.  Totally half the recipe or save the extras for next taco Tuesday.  I make this about once a month.

 

Avocado Cilantro Dressing:

  • 1 avocado
  • 1 cup cilantro, chopped
  • 1/4 cup fresh lime juice
  • 1/3 cup olive oil
  • 4 tablespoons water
  • dash of salt
  • dash of cumin

 

Optional Toppings:

  • tortilla chips
  • sour cream
  • salsa
  • cilantro

 

Here’s what you do:

Brown ground turkey with chopped red onion.  Add 2 tablespoons taco seasoning + 1/4 cup water.  Once turkey is cooked through, drain and set aside.

While your turkey browns, throw the Avocado Cilantro Dressing together.  In a food processor add avocado + cilantro + lime juice + salt + cumin.  Blend until smooth.  Drizzle in olive oil and blend again.  Add 2 tablespoons of water.  You may need 2 more tablespoons water, I did.

On a serving platter (because it looks pretty) or large bowl, layer veggies + cheese + turkey then top with your favorite toppings.  Drizzle with Avocado Cilantro Dressing.

Today I topped my salad with the Tessemae’s Creamy Ranch that I shared last week on {friday 5} + and some homemade salsa just to change it up a bit.  I cannot explain how much I’m diggin this ranch!!!
