Is anyone else as excited as I am for the freakin’ weekend?  Yes?  Yeah, I thought so!!  You guys, I have NOTHING that I have to or need to do tomorrow.  Say whaaattt?  Sofa king excited to kick it and do whatever the f I want.  Should I lay out?  Maybe cook something bomb?  Shop?  Watch TV all day?  Who knows, but I already know it’s going to be a killer day!!

It’s Friday and you all know that I’ve got 5 things on my mind…..

 

ONE – This was an out-take that I almost deleted.  Then I looked again and kept it.  This week I did some major reflecting.

I was going to “fire” my life coach this week.  Not because I don’t think she’s the absolute shit. (She is THE shit)  But, because I thought I was good-to-go and didn’t need to meet on a weekly basis anymore.  WRONG!  I had a complete meltdown.  She asked one simple question that put me in a total tailspin.  Her response “You don’t have to be on-point all the time.”  Followed with  “You’re so hard on yourself.”

Life is hard, but so am I!  I’m happier than I’ve been in a long long time.  I’m working on becoming the very best version of me, but this shit is a process and it’s going to take some time.

Needless to say, I scheduled an appointment next week!  LOL!

That very same day, I saw this on Instagram…and it hit me hard!!

WOW, that was kinda deep for a Friday 5.

 

TWO –  Kaia sisters – You are pretty fucking awesome.  Keep that shit up!  Hell week is OVER and we all survived!  Yeahhhh!  The workouts were extra challenging and I saw so many ladies kick ass!  It was beyond motivating!!  I was never able to make it back to Kaia for a double day, but I did do a couple doubles at home + Oasis in the evenings on my own.  I’m tired.  My muscles are sore.  Next week is detox week.  I’m feeling super unmotivated.  I know the key to next week is going to be “keep it simple” as Melika would say.

Smoothie + soup + salad.

2 weeks of BRIK left.  We got this!!!  Knuckles!

THREEGlitter Guide’s 10 things you need from Target // I personally made a trip to Target, again, to check this shit out in person.  Davis didn’t have the bar cart though.  I’m dying to see it and touch it…..lol.  The “leather” made my ears perk up.   So many cute accent pieces, fall decor (OMG, you should see all the pumpkins), marble items, baskets and the throw pillow section is on fire!!

FOUR – Holy Smashed Sweet Potatoes with Parmesan Cheese // last {friday 5} under Links I ♥  I posted holy sweet potatoes.  Well, I began daydreaming of this recipe.  Only problem, the original recipe was smothered in butter.  Not really Kaia friendly.  But the image just wouldn’t get out of my damn brain.  So I took it to the kitchen to try a lighter version.  And, drum-roll…..it was so damn good that I have to share!

Here’s what you’ll need:

  • 1 sweet potato
  • 1 tablespoon olive oil
  • 1 tablespoon Parmesan cheese
  • salt + pepper

 

Trim off the ends of the sweet potato then cut into 1 1/2 inch pieces.  (I got 5 pieces)

Bring a pot of water to a boil.  Add sweet potato pieces and cook, covered for 20 minutes.

Preheat oven to broil.

Spay cookie sheet with nonstick spray.  Place sweet potato pieces on pan.  Very lightly flatten each with the back of a fork.

Brush olive oil over the top of each potato and sprinkle with salt + pepper.

Broil until golden and crispy.  About 15 minutes.

Remove from oven and flatten with the back of the fork again to get a smashed look.  Sprinkle with Parmesan cheese.

Return to oven and allow to broil till cheese is melted.  About 2 minutes.

 

Holy sweet potato yo!  I would normally mow down a whole sweet potato without hesitating.  But, I served myself 2 of the pieces and was very pleased.

I served the holy sweet potatoes with steamed broccoli + baked lemon pepper salmon.   I used Nugget’s coupon last week and saved $14.42.  Whoop Whoop!  Easy weeknight meal that was truly a treat.
