Anyone else straight up craving all the greens + veggies? After over indulging (in every way possible) last week, I’m so ready to get back on track. I was a no limit solider. All the desserts. All the leftovers. All the wine. I even stole some cookie dough Bay was hiding in the fridge. Shhhh! I won’t even dare step on the scale for a while…lol. But, I was living my best life #YOLO
Now I’m like, Bring on the soups + salads! STAT!
This chili is healthy + hearty + comforting. Loaded with veggies.
Oh and I didn’t mentions, this chili is ready in under 30 minutes! Makes lots of leftovers. I love to serve it over baked potatoes or sweet potatoes day two. I’ve been known to make a pretty mean chili dog with this recipe too!
The veggie chopping is the most time-consuming. I typically do all my chopping the night before. And I swear by this Vidalia Chop Wizard
I use this for everything. I’m kinda of a freak and I really, really dig all my veggies to be uniform in soups. Ha! I can’t believe I just admitted that. It’s super easy + dishwasher safe….whoop whoop!
I used to call this the Weight Watchers Chili 1 Point Chili. Did I ever tell you guys I used to be a Weight Watcher? I lost 20 lbs using the program when Bay was 6 months old. Even became a lifetime member!
Anyway, they change the points program so often that I can’t keep up of this recipe still falls under the 1 point per serving range.
Top it with some sour cream + shredded cheese and your kids will never know it’s basically a veggie soup.
turkey + loaded veggie chili
Here’s what you’ll need:
- 1 lb ground turkey (beef works too)
- 1 onion, diced
- 1 tablespoon olive oil
- 1 (28 oz can) diced tomatoes
- 1 zucchini, diced
- 1 yellow squash, diced
- 1 can black beans
- 4 celery stalks, diced
- 1 green bell pepper, diced
- 1 can beef broth
- 1 packet dry chili seasoning
Toppings:
- shredded cheddar cheese
- sour cream
- green onions
- cilantro
- radishes
Here’s what you do:
In a large soup pot add olive oil + ground turkey + onion. Cook till turkey is browned. Drain and back to soup pot.
Add all the other ingredients to the pot. Bring to a simmer. Cover and simmer over medium heat for 20 minutes. Till veggies are tender.
Top with all your favorites. Sour cream + green onions + shredded cheddar cheese + cilantro + radishes are my go-to’s.
