
Today was the day. The first day of school! The day some of us (myself) have been secretly praying for…lol! And some dreading. I decided next year we need to have a Woo-Hoo + Boo-Hoo party after drop off. Where we can celebrate or be bummed our kiddos are back in school.
You know, just at a bar preferably. Before everyone gets on with their day.
Bay’s last day first day at Lee Middle School. I was reminded of it, bright and early this morning. Holy shit!
Yes – I let her keep the baby blue acrylic nails. Even though I cringe every time I look at her hands. On one condition – she learns how to spell “remember” Ha!
We always take photos the night before. #momhack. Such a time saver in the morning on the first day! It’s almost like a trial run. What to wear. Does it need ironing. What hairdo. Makeup. All the things. It truly makes the morning of such a breeze.

I, myself, spent about 90% of my day scrolling though all the 1st day photos. I cannot believe how big everyone’s kids are. How grown and mature they all look. Including my girlfriends kids. We’ve had this tradition since pre-school. My girlfriend Sara and I met one year at Raley’s. Mainly because it’s always empty. Each year the group and photo have grown larger + larger. Makes my heart so happy! Thanks for organizing this year Alex! Love to see everyone dressed in their best ready to take on a new school year.

I could go on and on, but I know some of you are only here for the recipe…lol. So, lets dive in……

I call this my Mom’s White Bean Caprese Salad. Although the recipe was adapted from the one, the only – Skinny Taste. If you’ve been around here for a while, then you know I’m a BIG fan of Gina’s recipes. They are light. Fresh. Weight Watchers friendly. And very easy. I think we can all say “hell yeah” to that!
This is a great salad to make in advance. Drizzle with balsamic glaze right before serving and it looks almost to good to eat.

Here’s what you’ll need:
- 1 15 oz can great northern beans, drained + rinsed
- 1 pint (about 2 cups) cherry tomatoes, halved
- 8 oz marinated mozzarella OR mozzarella pearls
- 1/2 cup fresh basil, chopped
- 2 teaspoons olive oil
- 2 teaspoons balsamic glaze or balsamic vinegar
- salt + pepper
Here’s what you’ll do:
Depending on what kind of mozzarella you find…..
If you cannot find marinated mozzarella, cube your mozzarella or use mozzarella pearls. In a bowl drizzle with olive oil. Sprinkle Italian seasoning, garlic fresh or powder, red pepper flakes.
Combine beans + tomatoes + basil + mozzarella + salt + pepper. Toss with olive oil.
Place in the fridge till ready to serve.
If you cant find balsamic glaze – to a saucepan add 1/2 cup balsamic vinegar + 3 tablespoons of honey. Bring to a simmer over medium heat. Once it gets bubbly, reduce heat and allow to simmer for 10 minutes until thicken. Remove from heat and allow to cool.
When ready to serve, finish with balsamic vinegar or balsamic glaze.
