Last weeks intentions: {weekend notes}
Our weekend highlights and not so highlights….
Link //
Our beloved pet rabbit passed away Friday afternoon. We are guessing old age? Or possibly the move. He never seemed nearly as happy at the new place as he used to be. I do know one thing, he lived a good life. I will miss my morning rabbit greetings in the morning. I still catch myself opening the slider and calling his name. Bay is the fence about getting a new pet. She’s assured me that, no pet could be as cool as Link. I think she’s right. Maybe with time….
You can read a little more about him here:
Always photo bombing…..
Our Christmas cards came and I completely forgot that I added this picture above to the back out our cards. Our little tribute to Link ♥
Some of our favorites…..
RIP Link ♥
You even made this cold-hearted bitch shed crocodile tears!!!
We spent the rest of the weekend doing anything and everything to salvage what we had left of it. Cooking + shopping. Two of my favorite things! And Bay got to cut a rug at the Father Daughter Dance ♥
Father Daughter Dance //
Bay + her dad (aka baby daddy) went to the Father Daughter Dance. I love this tradition of theirs. She did her own makeup and looks about 15…I die!! But, she felt beautiful and looked beautiful, so that’s all that matters.
She said it was like a date night with her dad. So sweet!!!
UC Davis Arboretum Plant Sale //
When they say they’re having a plant sale, they are not messing around. We found our way to the Teaching Nursery located near the Arboretum. Plants are organized by shade + sun. Grasses + trees + shrubs + succulents. Indoor + outdoor. They even supply the wagons for you to load up with plants. Garden experts ready for all the questions. We had a student walk us to our car and load up our plants.
Look at all the pretty plants I scored. Actually, 2 of them are my Mom’s. My 6 plants cost $25.00.
If you’re interested in the next sale, click on the link below. I believe this was the last sale for 2017. I’m sure there will be more come Spring.

Davis Farmer’s Market //
I can’t remember the last time I went to the Saturday market. I had apples on my mind. In search of the best apple to make my first apple pie.
I found all kinds of goodies. And another plant. Everyone needs a Christmas cactus. When I spotted a white Christmas cactus, I knew it was meant to be. The honey nut squash, which I’ve also never seen before is our veggie of the week. It came with a recipe: roast honey nut squash with rosemary and gruyere. OMG!!! Stay tuned!
Foodie //
I was able to stay on track with the Keto diet while eating out. Crepeville omelette with bacon + feta +mushroom + avocado + salsa.
Bay was craving “Inside Out Burger” so I got the lettuce wrapped with grilled onions and I was happy AF. Bay handled all the fries on her own…it hurt a little.
Sara wined + dined me with her Keto Taco Bake + bogle…so good.
In the Kitchen //
I made a big batch of pesto with basil that I didn’t want to go to waste. I know I’ve shared it before, but I’ll share this one again because it’s my go-to pesto recipe that never fails. I used toasted walnuts this time and it was just as good.
Here’s what you’ll need:
- 1/4 cup pine nuts
- 2 cups basil leaves, packed (2 small grocery store packages)
- 1 clove garlic, peeled
- 1/3 cup grated parmesan cheese
- 1/3 cup olive oil (Seka Hills preferably)
- pinch of salt
- squeeze of fresh lemon
First off, I like to toast my pine nuts for pesto. It takes just a couple of minutes….so please don’t skip this step. I truly believe this enhances the flavor and makes this recipe perfection.
Heat a a pan over medium high heat. Lightly toast pine nuts until golden. Giving the pan an occasional shake.
Place pine nuts + basil + garlic + parmesan + lemon juice in your food processor and pulse until finely chopped. Scrap down the sides of the food processor with a spatula if needed.
With the food processor running, slowly add olive oil. Sprinkle with salt at the very end.
Almonds work great with this recipe too!!
Short Ribs were a hit. I’ll have to share this one next week. It’s a crock pot recipe!!! This photo doesn’t do it any justice.
Keto Broccoli Cheddar soup
I just demolished the leftovers for lunch 🙂
Apple Pie
My one cheat/carb over the weekend. Still not 1 sinlge piece of halloween candy. This is record-fucking-breaking!!!
It was 100% worth it!
My first apple pie. Isn’t she pretty?
I will be sharing this recipe too, don’t even trip!
Look what I found……
Chocolate Peanut Butter Cheerios!!
I take that back, I did indulge in a handful of these too! Cheerios outdid themselves with this one. I can only imagine what this tastes like in a bowl of milk.
If you find a box, buy it. Or 2. Or 3! Target is the only place I’ve found that carries this flavor so far! Run!!!
DVR //
Bay + I spent a large portion of the weekend clearing the DVR. It’s gotta get done. And what better day than a rainy cold weekend. Coffee + hot chocolate + TV for hours!!
Shopping //
We made a tip to Nordy’s to get my leather jacket. I experienced my first dressing room waiting. and waiting. and waiting. I remember dragging my mom with me to go shopping and she would do the same thing. Wait. And wait. Bay found some cute stuff. We rarely go shopping, other than Target. I kinda hate people and crowds, so online shopping is the way I go. She was in heaven! I secretly loved it too.
When I saw that the Top Shop leather jacket I’ve had my eye on was price matched and 50% off. Plus I had a $40 Nordstom note. I hoped in the car and went straight for Nordstrom….ha. I’m not joking. I snagged this beauty for $19! I love a good deal!!
Luna Faux Leather Biker Jacket
You’ll definitely be seeing more about it this week…don’t you even worry 🙂
That’s all she wrote. Hope you had a good one!
