It’s FRI-NALLY Friday!  What a brutal week that was.  So ready for the weekend.  A pretty chill weekend, I might add.  Looking forward to all our plans.  Especially my plans with a glass of wine + backyard lounge + the sun.

Since it’s Friday, I’m sharing 5 things on my mind…and some links I loved over the week.

ONE – April Fools // I’m happy to report that Bailey fell for the SAME trick, yet again this year.  It’s only about the 5th year in a row that I’ve pulled of the exact same April Fools prank.  Frozen cereal + chocolate milk.  She grabbed the spoon and gave me that what’s wrong look.  Once I started laughing she finally realized that I got her again 🙂  Cory tried to prank me this morning, but I was on point.  Not falling for shit this year.

TWO – Ham + Cheese Quiche // Anyone else have a plethora of ham after Easter?  I was so worried our ham wasn’t large enough for our bunch.  Ummm, it was huge.  We maybe ate half of it.  I absolutely hate wasting food.  So I whipped up one of my favorite Quiche recipes.  I have seriously made this quiche recipe for over 10 years and it’s always so damn good…and easy too.

Here’s what you’ll need:

  • 1 cup cooked ham, diced
  • 3 eggs
  • 1 cup milk
  • 1 1/2 cups shredded cheddar cheese (I used 1/2 almond cheese)
  • 4 tablespoons flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 (9 inch) refrigerated pie crust

Place pie crust in a 9 inch pie dish.  Mix flour + cheese together.  Sprinkle cheese mixture over pie crust.  Add ham on top of the cheese mixture.

In a medium bowl, combine milk + eggs + salt + pepper.  Pour over cheese + ham.

Bake at 400 degrees for 50 minutes.

 

 

THREE – Moms + Daughters that wear Air Max together, stay together.  LOL.  I had to.  You know how I love to match with my kiddo, right?  Well, Nike just made our #twinning game that much better.  Bailey got her first pair for Easter from my parents.  They are so damn cute.  She says it feels like she’s walking on clouds….she now understands my love for these sneakers.  So we did what any normal mother + daughter duo would do.  Tried to take a shoe shelfie.  Link (our rabbit) wanted in on the action.

FOURThe Good Girl // I finished this book (audio version) last week. Highly recommended.  I didn’t kill my car battery this time, but I did get hooked a couple of times and bring it in and finish listening in the house.  It was a real disc changer 🙂  Some say the ending was far too predictable.  Maybe I was clueless?  I found it shocking.  Lot’s of jumping back (“Before”) and forth (“After”) in time. This may sound complicated, but it wasn’t.

I finished Kate Hudson’s Pretty Happy this week.  Luckily it was short, or I probably would have given up.  Next week I’ll break down my fav books and which ones I cant wait to get my hands on.
