It’s hot AF…there I said it. I know I said I wouldn’t, but damnnnn. I was sweating this morning at 7am getting ready for work. My AC kicked on before I hopped out of bed. Don’t even bother looking at the weather forecast….nasty! But, it’s Friday…thank god. We are taking off for a quicky trip to see one of our favorite families. I foresee lots of wine tonight. Breakfast burritos in the morning. Some pool time. And lots of chit-chat. Hope you have a great weekend planned too!
I’ve got 5 things on my mind…..
ONE – Father’s Day Coupon Book // I don’t know about you, but I’m a total sucker for a cute handmade gift from my kiddo. Especially when it’s a gift that is full of coupons for extra help around the house and more hugs! You’ll find…Movie night (of your choice), Breakfast in bed, One bathroom cleaning, etc. There are a couple of blank coupons too. You can fill them out or let you’re Dad write in something special. I didn’t have any colored paper handy, so I printed on white and Bay decorated them by hand. Handmade, remember 🙂

TWO – Kristin Ess hair care // Kristin Ess aka the women behind Lauren Conrad’s forever covetable locks. She released an affordable hair care line for Target. And obvi I needed it! I tried for at least 3 weeks after it was first released, back in January (um, this is JUNE). It was out of stock on-line. Out of stock at every store within reasonable driving distance. You guys, the struggle was real, but I finally got my hands on some Kristin Ess The One hair care products. The scent of the combo is unreal. Some reported that it was a bit too strong for them. Bay + I personally dig it big time. Not to mention it leaves my hair silky smooth, soft + healthy. And I have to say, on days I plan to curl my hair, I use this duo. I feel like my hair styles so much better after using these products.

THREE – Creamy Avocado Salsa Verde // I saw this recipe featured on Foodie Crush a couple of weeks ago and thought, damn that looks good. It’s clean. It’s no-cook, which makes it a breeze to make. Throw everything in the food processor and just like that, you’ve got your salsa. The avocado gives this salsa a creamy texture, which is perfection. I killed the whole batch in less than a week. Great dip for veggies + chips. Burrito bowl topper. Sandwich spread. And I even added a little extra virgin olive oil and finished off the last of it as a salad dressing. It’s good shit!
Here’s what you’ll need:
- 4 tomatillos, chopped
- 1 avocado, chopped
- 1 lime, juiced
- 1/3 cup cilantro, chopped
- 1/4 cup green bell pepper, chopped
- 1/4 cup white onion, chopped
- 1/4 cup water
- salt to taste
Here’s what you do:
Throw all the ingredients in your food processor. Blend until smooth. Season to taste.
I stored my salsa verde in a large mason jar. This will keep for up to 5 days.
But, I bet it wont last that long. It sure didn’t in my house.
FOUR – PB&J Apple Sandwiches // Last night, as I was tucking Bay into bed, she requested a “cute” breakfast in the morning. I agreed. I’m always up for a challenge lol. Here’s what I whipped up for Bay’s “cute” breakfast….
Stand an apple upright and cut thin-ish slices. I got 4 per side, avoiding the core. I dug out a “cute” little heart-shaped cookie cutter from our stash and cut out a heart from 1/2 the apple slices. Spread peanut butter over the other 1/2 of the apple slices (without the heart). A little dollop of strawberry jam in the center of the peanut butter. And topped with the heart cut-out apple slices. I stole one apple sandwich to try out for myself. Pretty damn good! Bay was impressed and loved the one with the added sprinkles in the center.
This would be perfect for a Valentine’s Day lunch too!
