The frito salad is not only all the colors of the rainbow, it’s PACKED with flavor.
I like to call this salad vintage…ha! It’s been around for dayyysss. And to be honest, I need to apologize to Frito Salad. Kinda forgot about it till my sis requested it for her birthday dinner.
Our family has been making this salad for as long as I can remember. You can legit add anything you like. Ground turkey. Shredded chicken. Steak. Anything goes.
Well, except for ONE thing……
You MUST use chili cheese fritos. Don’t even try to substitute that one ingredient. It’s the key to frito salad.
Another tip for making this salad –
Toss it in an unscented garbage bag. Ha! Sounds gross, but it works best. Trust me, K?
Here’s what you’ll need:
- 3 hearts of romaine lettuce, chopped
- 1 bag broccoli slaw
- 1 – 15 oz can black beans, rinsed + drained
- 1 – 15 oz can corn, drained
- 1 pint cherry tomatoes sliced
- 1 cup chopped green onions
- 1 – 4 oz can sliced black olives, drained
- 1 1/2 cups shredded cheddar cheese
- 1 cup chopped cilantro
- 1 – 9 oz bag chili cheese fritos
- 1 cup salsa
- 1 cup ranch dressing
Here’s what you’ll do:
In a food processor or blender, add salsa + ranch. Blend and pop in the fridge till ready to dress salad.
In a large bowl mix together romaine + broccoli slaw.
Top will all the veggies + beans + cheese.
When ready to serve, throw everything in an unscented garbage bag. Add fritos + dressing and give it a good mix. Dump into salad bowl and serve.
This salad makes a shit-ton to be prepared for LOTS of leftovers. If you’re not planning on using it all right away – only top the salad you’re planning on enjoying with half of the fritos and save the other half for later.
